This yummy-licious and appetizing salty veggie tofu soup aka "Ham Choy" soup is one comfort food I will never stop having too. I want to share all recipes from my Poh Poh or Mom to u all slowly but surely. My Mom is also a fabulous cook.
Basically salted veggie is a pickled mustard veggie which are quite affordable, common and down-to-earth kind of ingredient, but delicious and appetizing. Chinese believes this soup can help to reduce internal heat and quench thirst.
Ingredients for 6-8 servings:
. 300 g salted vegetables or 2 packs. More is good!
. one whole skinless chicken or 2 whole chicken bones (you can use spare ribs or pork bones)
. 4 large tomato - cut into wedges
. 2 blocks of tofu
. 3 big onions
. some goji.
. 6 red dates(optional)
. 2 litre of water- just fill up the pot
Add-ons (which I didn't have in stock today):
. 1 whole carrot
. small piece of pounded ginger
. 1 tsp white peppercorns (optional for heat) - roughly crushed
You DON'T need to use any seasoning!
It is so amazing that some of these simplest ingredients can turn a dish into something so flavourful. I normally just cook them at once in a rice pot or pressure cooker. Save time. You can eat it by adding some bihun or glass noodles.

飲食不節慎防三高
朱先生:「最近做身體檢查,醫生說我在『三高』邊緣,如何解決這個中年危機?」
CheckCheckCin:「三高」即高血壓、高血糖及高血脂,可說是都市人的富貴病,長期飲食不節,經常進食高脂肪、高糖份、高鹽份食物,再加上缺乏運動、壓力大、作息不正常等因素,令各種身體指數超標。西醫會以各種藥物來降低血壓、血糖及血脂,而從中醫角度來看需要改善體質,必須改變生活習慣,才能從根源上緩解「三高」症狀。一般來說痰濕、血瘀及陰虛體質人士比較容易患上「三高」,因為痰濕體質人士脾氣虛弱,水液運化失調;血瘀體質人士則血脈不通;陰虛體質人士作息顛倒容易令血壓上升。
想改善「三高」情況,宜諮詢註冊中醫師對症下藥調理體質,飲食上宜清淡,多菜少肉,減少外食或加工食品,避免進食高脂肪、高糖份、高鹽份的食物;養成定期做運動的習慣,一星期最少三次,每次最少30分鐘,強度以輕微出汗為宜;避免晚睡熬夜;尋找合適的減壓方法,因為焦慮不安等負面情緒也會導致血壓上升。
山楂黑木耳茶
功效:活血涼血,紓緩肥胖、高血脂等症狀。
材料:山楂15克、黑木耳15克
做法:材料切絲,洗淨放保溫瓶,以熱開水沖洗一遍,再注入熱開水焗10分鐘即可。此茶可反覆沖泡至味淡,建議一星期飲用2-3次,連續兩星期為一個療程。
注意:孕婦不宜飲用。

Unhealthy diets and ‘the three highs’
“I just completed a body check-up recently, and the doctor told me I’m at risk of getting the three highs. What can I do to solve this mid-life crisis?”
CheckCheckCin: The three highs refer to high blood pressure, high blood sugar, and high cholesterol, and urban dwellers tend to have these problems. Poor dietary habits such as consuming foods that are high in cholesterol, sugar, and sodium, and the lack of exercise, inability to cope with stress, and unhealthy lifestyle would cause a spike in the readings.
According to Chinese Medicine, aside from using medication, an individual should improve the body constitution and lead a healthier lifestyle if he or she wishes to get these conditions under control.
In general, individuals with the damp heat, blood stasis, and yin-deficient body constitutions would develop the three highs more easily. Individuals with a damp heat body constitution have asthenic qi and spleen, and the fluid would stagnate easily in the body. Those with the blood stasis constitution may experience the stagnation of the blood and the vein. People with a yin-deficient constitution will experience a spike in their blood pressure if they constantly mess with their biological clock.
To improve the condition of the three highs, consult registered and licensed Chinese physicians, so they can prescribe you the right medicine and customize treatment for you.Eat lighter food, take more vegetables and cut down on meat, reduce eating out and processed food, and avoid eating foods that are high in cholesterol, sugar, and sodium.
Cultivate the habit of exercising regularly. Make it a point to exercise and sweat three times a week, and each session should last at least 30 minutes. Avoid sleeping late and find the most appropriate way to relieve your stress, as negative emotions can also trigger a surge in the blood pressure.
Chinese hawthorn tea with Black fungus
Effects: Activates and cools blood, relieves obesity and hyperlipidemia.
Ingredients: 15g dried Chinese hawthorn, 15g black fungus
Preparation: Cut the ingredients into slices and place into the thermos. Rinse with hot water once. Then add in hot water again and steep for 10 minutes. This tea can be rebrewed until its flavor weakens. For best results, drink consecutively for 2-3 days a week. Two weeks for a treatment.
Note: Not suitable for pregnant women.

一覺醒來,覺得口裡有朕苦味?如伴隨口渴但不想喝水、口中黏膩、小便黃且不暢順的問題,就代表你有濕熱問題。常暴飲暴食、嗜吃生冷食物、嗜甜嗜辣、喝酒太多或本身屬痰濕體質人士特別容易出現濕熱症狀,「濕蘊於中,濕鬱化熱」,濕與熱同時結合於脾胃裡阻礙氣機運行,這種口乾口苦,即使喝再多水也無補於事,需要清熱利濕以紓緩症狀。 西洋菜是冬春兩季常食蔬菜之一,從中醫角度看,西洋菜性涼,有清熱潤肺的功效,適合身體有熱像時食用,例如口乾、口苦、便秘、暗瘡等。要注意西洋菜是水生植物,或會藏有水蛭,所以烹煮前必須以清水加鹽反覆浸泡清洗數次。
食材小貼士: 猴頭菇性平,有養胃健脾、助消化的功效,適合胃脹、胃痛、噯氣泛酸、慢性胃炎、胃及十二指腸潰瘍、胃癌人士食用。
西洋菜猴頭菇芡實湯
功效:清熱健脾利濕,幫助消化,紓緩口苦口乾、胃脹、胃部不適。
材料:西洋菜600克、猴頭菇1個、芡實15克、生薏米30克、無花果乾2枚、蜜棗2枚
做法:
1. 所有材料洗淨,西洋菜以清水加鹽反覆浸泡數次瀝乾備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮2小時,最後下鹽調味即可。

Have you ever had a bitter taste in the mouth after waking up? If it comes with other accompanying symptoms such as feeling thirsty but do not want to drink water, sticky feeling in the oral cavity, and yellow urine or urine retention, then your body is experiencing the damp heat condition.
Individuals who binge eat, those who indulge in raw, cold, spicy, and sweet food and alcoholic drinks, and people who have the phlegm-dampness body constitution will develop damp heat symptoms more easily. The combination of dampness and heat in the spleen and stomach can stagnate the circulation of the qi, and this is what causes dryness and bitterness in the mouth.
We cannot solve this problem even by drinking a lot of water. The most effective way to relieve the symptoms is to clear heat and dispel dampness from the body.
Watercress is one of the common vegetables during winter and spring. From the perspective of Chinese Medicine, watercress is cool in nature, and it can clear heat and moisten the lungs. It is suitable for individuals to consume when they feel heaty. Some of the common symptoms are dry mouth, bitter taste in the mouth, constipation, and acne. Do note that watercress is an aquatic plant, so leeches might hide in between the leaves. Before cooking them, be sure to wash and submerge them in salted water several times first.
Tip on the ingredients: Monkey head mushroom is mild in nature, can strengthen the spleen and stomach and aid digestion. It is suitable for those with abdominal bloating, stomach pain, burping, acid reflux, chronic gastritis, stomach and duodenal ulcers, and patients with stomach cancer.
Watercress and Monkey head mushroom soup with Fox nut
Effects: Clears heat, strengths the spleen and promotes diuresis. Aids digestion. Relieves bitter mouth and dry mouth, bloating.
Ingredients: 600g watercress, 1 monkey head mushroom, 15g fox nuts, 30g coix seeds, 2 dried figs, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Soak watercress in salted water, drain and repeat a few times.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hours. Add salt to taste.

This Nyonya Chap Chye is a classic from the Peranakan cuisine. Peranakan food is touted to be a blend of South East Asian culinary cultures - often hitting the spice, sweet and tang notes deliciously.
Chap Chye loosely translates to mixed vegetables, which is very accurate in this case. Fresh vegetables tossed with crispy beancurd strips and broth-soaked tang hoon (glass noodles) is a flavour explosion in your mouth you won't want to miss!

Work-from-home seems like the way to go until mankind finds a way around the pandemic. As some of you would know, Roland and I still hold our own full-time jobs. Both of us are working at home most of the time. Just like you, we like our meals to be easy, quick and yet still delicious on a working day. We love steam cooking because it allows us to cook dishes without much effort. If your rice cooker is as big as like ours, you can easily steam the dish at the same time while cooking rice. This method not only will you save energy, but you'll also have lesser pots and pans to wash. We intentionally only used 7 ingredients to cook this steamed chicken recipe so that you can recreate this dish easily. If you want to make it into a balanced dish, you can also add some vegetables, such as carrots, enoki mushrooms, cauliflower or broccoli to the dish. If you are using carrots, cook the chicken and carrots at the same time. If you're using broccoli, enoki mushrooms or cauliflower, add them towards the last 5 minutes of cooking the chicken.
