Besides authentic dim sum served in a cage, we tried dishes from The State Banquet Menu. This 6-course meal was first served in the Istana for Chairman Xi Deng Ping. Two of my favorite dishes were the Double-Boiled Chicken Soup with Sea Whelk & "Bak Kut Teh" Spices and Baked Cod in Vanilla & Olive Relish served with White Asparagus.

The chicken soup broth was aromatic and slightly peppery without overwhelming heat. The olive relish on top of the juicy cod fish was refreshing. It is seasoned with vanilla and lemongrass to add some earthiness to the dish.
