Recipe: Singgang Bawal Putih (White Pomfret Sour Soup) (From The Malay Kitchen Book)

Ingredients:
50g yellow onions, cut into slices
10g garlic cloves, cut into slice
20g fresh tumeric , shredded (I didn't have any, so use 1/4 tsp tumeric powder)
2 fresh red chillies, cut into thin strips
2 fresh green chillies, cut into thin strips
30gm cooking oil (I used grapeseed oil)
2 dried tamarind pieces, rinsed or 40gm tamarind paste (I like mine sour, so I would have added another tamarind piece)
2tsp salt ( I used my homemade stock)
1/2 sugar
700gm water
700-800g pomfrets (approx 2 small pomfrets) diagonally halved across the fins
Preparation:
1. Place yellow onions, garlic cloves, ginger, tumeric, red chillies, green chillies and cooking oil into mixing bowl, saute 4mins / 120c / speed 1
2. Add dried tamarind pieces, salts, sugar and water. Boil 8min/ 100c/ speed 1
3. Add pomfrets, cook 2 mins 30 secs / Varoma / Reverse Mode / Speed spoon. Let it stand for 2 minutes. Serve hot

Checking out the newly opened (since March 2021) steamboat & BBQ place @28.steamboat_kk at @88mallsabah today with @djselinalight with 8 choices of soups and many fresh ingredients to choose from 😋🤤

Tried the herbal chicken, Sichuan spicy, tomato and mushroom soup. Love the Sichuan spicy, wish a bit more spicy 🙈, tomato and mushrooms were good too. OMG I love fresh meats 🥩 wagyuuuu 🤤 dip in mala 🙃😌 so so good. They also have sushi, kuih muihs, cakes, ice cream and fried food. Free flow and it changes by the minute wow, how can I keep up? And they suddenly bring out seafood paste when am already stuffed. YUDo this? Luckily I still can add on a bit 🤣

You also can add on seafood and meat. Also BBQ while adding ingredients to your soup. This post is gonna be so long so, lets savour our eyes with my photos shall we?

Madam Susan Wong sells porridge, fish soup, and hotpot at Amoy Street Food Centre! The name of her current stall “新港粥品” means Singapore and Hong Kong-style porridge, and that’s exactly what she serves.
Smooth and thick, the Mixed Organs Porridge was filled with pig liver, pork slices and small intestines. I liked that the small intestines were really clean and not too chewy. The liver was smooth and well-cooked too! Each bowl of porridge comes with youtiao (fried dough).
They also serve individual hotpot. The Tom Yum Seafood Hotpot we had was extremely filling.

More like a thick soup than a typical Western stew, this Chinese beef stew takes reference from Cantonese cooking and pairs vibrant flavours of daikon and carrots with rich earthy beefy goodness.
We cooked over a stove but go ahead and use a pressure cooker / instant pot to braise the beef chucks quicker.

1.4kg Beef chuck (cut into chunks)
2 tbsp Cooking oil
2 Onions (cut into wedges)
1 Knob ginger (smashed)
2 Star anises
2 Cinnamon sticks
2 Bay leaves
4 Cloves
5 Dried chillies (pre-soaked)
2 tbsp Light soy sauce
1 tbsp Dark soy sauce
2 tbsp Chu hou sauce
1 tbsp Fish sauce
3 tbsp Shaoxing wine
Salt & sugar to taste
500ml Chicken stock
500g Daikon (peeled and cut into chunks)
2 Carrot (peeled and cut into chunks)
Coriander for garnishing
