I was craving for hawker food recently. Especially what I am cooking today. Fish head noodles soup 鱼头米粉 (Yu Tao Mai Fun) is a popular hawker food in Malaysia. It is believed to have originated from the Teochews. I was mentioning Hokkein but actually it is more Teochew as I suddenly remember the pickled plum and salted vegetable are very common ingredients for Teochew's dishes, especially steamed fish. It is one of my favourite fish soups with noodles. Here this is my first time trying to cook this. I must say I love it. My kids too. I am proud of myself. LOL!

Ingredients for 10 pax:
. 2 kgs grouper fish head, cut into big pieces. U can use any big fish head
. 2 pcs dried fish
. 2 pack thick rice noodles
. 2 pcs pickled mustard/salted veggies, cut into long strips
. 200 g young ginger, sliced thinly
. 5 tomatoes, cut into wedges
. 2 medium or 5 small size tofu
. 6 pickled plums, mashed or whole pieces
. oil
. 5 litres water

For marination of fried fish head:
. 2 tsp white pepper
. 5 tsp salt
. 4 cup cornflour flour, or tapioca flour

For seasoning:
. 2 tbsp fish sauce
. 1tbsp white pepper
. salt to taste (optional)
. 3 tsp sesame oil
. 1 can or 2 evaporated milk
. 6 tbsp Shao Xing Wine or more (optional)

Garnishing:
. spring onions, sliced or cut

Add-on: You can always add extra vegetable like Chinese cabbage or Chinese lettuce. Make sure you have this with cut chilis with soy sauce or some sourish spicy sauce. I also love adding fried onions in my soup.

I will cook this more often for sure.

บริษัทแห่งนี้ ทำธุรกิจผลิตอาหารจากพืชแทนเนื้อสัตว์
โดยมีการนำเทคโนโลยี AI มาประยุกต์ใช้ในการคิดค้นสูตรขึ้นมา

จุดเริ่มต้นเกิดขึ้นเมื่อชายหนุ่มสายงานเทคโนโลยีทั้ง 3 คน
คือ Karim Pichara, Matias Muchnick และ Pablo Zamora
รับรู้ปัญหาเกี่ยวกับการเลี้ยงสัตว์เพื่อการเกษตร
ได้กลายมาเป็นตัวการที่ก่อให้เกิดการปล่อยก๊าซเรือนกระจก
อันดับ 2 รองจากพลังงานเชื้อเพลิงเท่านั้น

ซึ่งก๊าซเรือนกระจกนี้เอง ที่นำไปสู่ภาวะโลกร้อนในที่สุด
ทั้ง 3 คนจึงเกิดไอเดียในการสร้างอาหารที่ทำจากพืชขึ้นมา
เพื่อต้องการนำเสนอสินค้าที่เป็นมิตรกับสิ่งแวดล้อม

โดยใช้ความถนัดด้านเทคโนโลยีของตน
ในการออกแบบและสร้าง AI หรือปัญญาประดิษฐ์ขึ้นมาที่มีชื่อว่า “Giuseppe”
ซึ่งตั้งชื่อตาม Giuseppe Arcimboldo จิตรกรชาวอิตาลี

AI ดังกล่าวมีความสามารถในการเรียนรู้การผสมผสานพืชต่าง ๆ เพื่อเลียนแบบให้คล้ายกับอาหารที่ทำจากเนื้อสัตว์ทั้งในเรื่องของรสชาติและสารอาหาร

การทำงานของ NotCo จะแบ่งเป็น 2 ทีมคือ
ทีม AI Chef รับผิดชอบในการคิดหาผลิตภัณฑ์ใหม่
ในขณะที่ทีม Food Science จะมุ่งเน้นการสร้างสารอาหารและรสชาติ
โดยผลิตภัณฑ์เด่นของ NotCo ก็คือ “NotMilk” ซึ่งเป็นนมที่ทำจากพืช

ซึ่งเหตุผลที่ทั้ง 3 คนเลือกทำผลิตภัณฑ์ประเภทนม
ก็เพราะว่า แม้ในตลาดจะมีนมทางเลือกมากมายแล้ว
แต่ส่วนใหญ่นมเหล่านี้ไม่เป็นที่ถูกปาก และสารอาหาร เช่น โปรตีนและแคลเซียมก็ถือว่าน้อยกว่านมวัว

พวกเขาจึงอยากผลิตนมที่ทำจากพืชแต่ยังคงรสชาติเดิมและประโยชน์ต่าง ๆ เอาไว้
ซึ่งใช้เวลาทั้งหมดเกือบ 2 ปีถึงจะได้ผลิตภัณฑ์ NotMilk ที่เสร็จสมบูรณ์ออกมา
และมีให้เลือก 2 แบบคือ นมสูตรธรรมดาและสูตรลดไขมัน

โดย NotMilk เกิดจากการนำสับปะรดและกะหล่ำปลีมาสร้างรสชาติ
การผสมผสานส่วนผสมเหล่านี้เข้าด้วยกันทำให้เกิดแล็กโทสที่คล้ายกับนม

ทั้งนี้ NotMilk ก็ได้นำรากชิโครีและมะพร้าวเข้ามาช่วยปรุงแต่งให้เนื้อสัมผัส
ใกล้เคียงนม และสุดท้ายคือการผสมถั่วลงไปเพื่อเพิ่มโปรตีน

จากความหลากหลายนี้
ทำให้ NotMilk มีรสชาติและเนื้อสัมผัสที่เทียบเท่ากับนม "ของจริง"
โดยไม่ต้องใช้ผลิตภัณฑ์จากนมเลยและมีคุณประโยชน์จากสารอาหารครบถ้วนตามที่นมควรจะเป็น

นอกจากนี้นม NotMilk สามารถนำไปประกอบอาหารหรือแม้แต่การนำไปทำเบเกอรี

ทั้งหมดนี้ ก็ได้ทำให้ NotMilk กลายเป็นผลิตภัณฑ์ที่มียอดขายเป็นอันดับ 1 ในแบรนด์ NotCo

ในด้านสิ่งแวดล้อม NotMilk ก็ทำได้ดี
โดยสามารถลดการใช้น้ำลง 92%
ใช้พลังงานน้อยลง 74%
รวมถึงปล่อยมลพิษน้อยลง 74%
เมื่อเทียบกับกระบวนการผลิตนมแบบดั้งเดิม

แม้ว่าผลิตภัณฑ์ประเภทนมจะเริ่มเป็นกระแสในตลาดแล้ว
แต่เป้าหมายของ NotCo คือการเปลี่ยนผลิตภัณฑ์ที่ทำจากสัตว์ให้กลายเป็นพืชทั้งหมด
ส่งผลให้ NotCo มีการแตกไลน์ผลิตภัณฑ์เพิ่มออกมา
เช่น NotIceCream, NotBurger, NotMayo และ NotMeat

โดยผลิตภัณฑ์ NotMeat ถูกใช้ในพิซซาของ Papa John's
ร้านพิซซาชื่อดังเป็นที่เรียบร้อยแล้ว และยังถูกใช้ใน Burger King
เชนร้านเบอร์เกอร์ที่ใหญ่เป็นอันดับ 2 ของโลกอีกด้วย

ส่วน NotBurger เป็นอีกผลิตภัณฑ์ที่ทางบริษัทกำลังผลักดัน
ก็ได้ถูกวางขายตามร้านค้าทั่วไปในประเทศอาร์เจนตินาและชิลีแล้ว

ส่งผลให้ปัจจุบัน NotCo มีรายได้ต่อปีที่ 1,850 ล้านบาท

ปัจจุบัน NotCo สามารถระดมเงินทุนเพิ่มได้ที่ 2,600 ล้านบาท
โดยเงินทุนครั้งนี้ส่วนหนึ่งสนับสนุนโดย Bezos Expeditions
บริษัท Venture Capital ส่วนตัวของเจฟฟ์ เบโซส มหาเศรษฐีอันดับ 2 ของโลก

ซึ่งเงินส่วนนี้นำมาใช้ในการขยายกิจการสู่สหรัฐอเมริกา
ผลิตภัณฑ์ที่เป็นตัวตั้งตัวตีตลาดไม่ใช่ใครอื่นใด นั่นก็คือ NotMilk นั่นเอง
โดยวางขายตามร้านค้าปลีกและจัดจำหน่ายสู่ร้านอาหารต่าง ๆ ในสหรัฐอเมริกา

ด้วยศักยภาพในการเติบโตที่น่าสนใจและผลิตภัณฑ์ที่หลากหลาย
ส่งผลให้ปัจจุบัน NotCo ถูกประเมินมูลค่าบริษัทอยู่ที่ 7,800 ล้านบาท

จากเรื่องนี้ทำให้เห็นว่า แม้ตลาดจะแข่งขันกันสูง
แต่ถ้าหากเราเห็นว่าปัญหาใดที่ลูกค้ายังไม่ได้รับการตอบสนอง
เช่นเดียวกับ NotCo ที่สังเกตเห็นนมทางเลือกยังไม่สามารถตอบโจทย์ลูกค้าได้ทั้งหมด

Bring a Good Report

“They told him, and said, “We came to the land where you sent us. Surely it flows with milk and honey, and this is its fruit. However the people who dwell in the land are strong, and the cities are fortified and very large. Moreover, we saw the children of Anak there. Amalek dwells in the land of the South. The Hittite, the Jebusite, and the Amorite dwell in the hill country. The Canaanite dwells by the sea, and along the side of the Jordan.” Caleb stilled the people before Moses, and said, “Let us go up at once, and possess it; for we are well able to overcome it!” But the men who went up with him said, “We aren’t able to go up against the people; for they are stronger than we.” They brought up an evil report of the land which they had spied out to the children of Israel, saying, “The land, through which we have gone to spy it out, is a land that eats up its inhabitants; and all the people who we saw in it are men of great stature. There we saw the Nephilim, the sons of Anak, who come from the Nephilim. We were in our own sight as grasshoppers, and so we were in their sight.”” (Numbers‬ ‭13:27-33‬ ‭WEB‬‬)

The twelve men Moses sent out to spy the land were princes of each respective tribe of Israel.

Ten spies brought back an evil report of the land, whereas only Joshua and Caleb gave a good report.

These princes who were leaders of the tribes can represent spiritual leaders like pastors who are entrusted with God’s flocks.

Pastors should not be preaching fear as if the enemy is so much stronger than us.

“Be careful, or the devil will get you. The devil is very crafty and the whole world is under his sway.”

When a pastor keeps talking about the devil, is he really preaching the Gospel which produces faith, or preaching the bad news of the devil which produces fear?

Spiritual leaders ought not to mislead their congregations this way.

While the ten spies saw large and fortified cities built by giants as a scary obstacle, Joshua and Caleb were excited, seeing those cities as their soon-to-be possessions to house the children of Israel.

The ten spies were focusing on how large and imposing the giants were, but Joshua and Caleb were only conscious of how mighty Yahweh is, and they believed that He would give them the victory.

“Joshua the son of Nun and Caleb the son of Jephunneh, who were of those who spied out the land, tore their clothes. They spoke to all the congregation of the children of Israel, saying, “The land, which we passed through to spy it out, is an exceeding good land. If Yahweh delights in us, then he will bring us into this land, and give it to us; a land which flows with milk and honey. Only don’t rebel against Yahweh, neither fear the people of the land; for they are bread for us. Their defense is removed from over them, and Yahweh is with us. Don’t fear them.” But all the congregation threatened to stone them with stones. Yahweh’s glory appeared in the Tent of Meeting to all the children of Israel. Yahweh said to Moses, “How long will this people despise me? and how long will they not believe in me, for all the signs which I have worked among them?” (Numbers‬ ‭14:6-11‬ ‭WEB‬‬)

Joshua and Caleb were free from fear because they believed that Yahweh was on their side.

When there is an imposing challenge in your path that has the potential for huge gains, see the Lord generously giving the victory to you. If it is truly an exceedingly good land, and the Lord brought you to that point, He will also supply you with the grace to overcome all difficulties.

While the ten princes saw themselves as grasshoppers in the giants’ sight, Joshua and Caleb saw the giants as bread to be easily devoured! Two drastically different beliefs because the ten princes did not have faith in Yahweh, whereas Joshua and Caleb believed in Him.

In the end, the glory of the Lord appeared and He rebuked the people for their bad opinion of Him and the unbelief in their hearts.

Even though He had worked mighty signs and wonders in Egypt, the Red Sea, and in the wilderness, the children of Israel were so hard-hearted that they forgot all the amazing things that the Lord had done for them.

If you have been entrusted with leadership over God’s people, make sure you are preaching the Gospel (good news) to them, painting a vision of a good God who loves His people and who is mighty to save in any situation. Christians don’t need any more negativity or fear—they already get that from the world in their daily lives.

When you encounter a new challenge, focus on the bigness of your God, not on the strength of your enemies. No matter what shape, size, or form they come in, God is still more powerful than all of them combined, and He will give you the victory when you trust in Him.

A new faith declaration: “The size or power of my enemy is irrelevant because my God is so much greater than any enemy. My God is with me and I am victorious through Him who loves me!”

丸くて豪華なドームケーキ。一見難しそうに思いがちですが、実は意外と簡単に作れます！
ボウルの中に生地を流し込んで、なんとレンジでチンするだけ！
しかも生地はホットケーキミックスを使うので、材料も少なく作れます！
夏の暑い日にケーキを焼くのって大変・・
時間がないけど美味しいケーキを作りたい・・
そんな思いのある方必見です！

フルーツドームショートケーキ
直径18cmのボウル 1個分

材料：
■スポンジ生地
ホットケーキミックス 150g
卵 　3個
砂糖 80g
溶かしバター（無塩） 30g
牛乳 20ml

■ホイップクリーム
生クリーム 300ml
砂糖 20g

■トッピング
いちご（スライス） 3個
キウイ（半分にスライス） 1個
黄桃缶（スライス） 2-3切れ
黄桃缶（シロップ） 適量

作り方：
1.スポンジケーキを作る。ボウルに卵、砂糖を加え、ハンドミキサーで軽く混ぜる。湯煎（45〜50℃程度）にかけて撹拌しながら温め、さらっとした状態になったら湯煎から外す。
2.ハンドミキサーを高速にし、白くもったりと生地がリボン状に落ちるくらいまで泡立てる。
3.ホットケーキミックスを3回に分けて振るい入れ、その都度ゴムベラで底からさっくりと混ぜる。粉気がなくなったら溶かしバターと牛乳を合わせて加え、さっくりと混ぜる。
4.別の耐熱ボウルに(3)を流し入れ、台に数回打ち付けて空気を抜く。ふんわりラップをかけて600Wの電子レンジで4-5分加熱する。生地の中心に竹串を刺して、生焼けの生地が付かなければ取り出し、ケーキクーラーの上にボウルごと逆さまにのせて冷ます。
5.ホイップクリームを作る。ボウルに生クリーム、砂糖を入れて、ハンドミキサーで7分立てにする。
6.まな板の上に(4)を取り出し、厚みを2等分に切る。
7.スポンジの断面に刷毛で黄桃シロップを塗り、ホイップクリームを塗り広げ、いちご、キウイ、黄桃をのせる。さらにホイップクリームを塗り広げ、スポンジをのせる。
8.表面全体にホイップクリームを塗り、いちごやキウイ、黄桃を飾ったら、完成！

Microwaved Fruit Dome Cake

Servings: 1 (18cm bowl)

INGREDIENTS
■Sponge cake
3 Eggs
80g Sugar
150g Pancake mix
30g Unsalted butter (melted)
20ml milk

■Toppings
Some syrup from a canned peach
3 Strawberries (sliced)
1 Kiwi (Sliced in half)
A few pieces of canned peach (sliced)

■Whipped cream
300ml Heavy cream
20g Sugar

PREPARATION
1. To make sponge cake, put eggs and sugar in a bowl and mix lightly with a hand mixer. Stir and warm up using a double-boiler until it is light and fluffy.
2. Use the hand mixer on high, and mix more without a double-boiler until a ribbon forms.
3. Add pancake mix slowly, 1/3 at a time, and stir roughly with a rubber spatula. When it's all mixed, add melted butter and milk stir more.
4. Pour the cake batter (3) into a bowl, and tap the bowl a few times to let the air bubbles escape. Cover the bowl with a cling wrap, then microwave on 600w for 4 to 5 minutes. Stick a wooden toothpick into the center of the cake. If it comes out clean, it is done. Let it cool. (Keep the cake in the bowl.)
5. To make whipped cream, put heavy cream and sugar in a bowl and whip with the hand mixer until soft peaks form.
6. Slice the sponge cake (4) in half.
7. Put canned peach syrup with a pastry brush over the bottom layer of the sponge cake, spread whipped cream, then put strawberry, kiwi and peach slices. Place the top layer of the cake.
8. Spread more whipped cream over the whole cake and finish with fruits on top.
9. Enjoy!
