用咗原個椰皇去燉🥥,食落椰汁嘅清甜味突出,裏面有雞腳、花膠、鮑魚、海參、瑤柱同豬。味道的確係唔錯,但老實講呢個佛跳牆賣相同相片係有一段距離😂,而且鮑魚得半件👉🏻👈🏻呢一點有點小失望。

睇落賣相好精緻完全唔似食中菜,帶子夠嫰不過食落冇咩味,只係食到熱情果醬嘅甜味,下層配有柚子肉🧡。不過整個菜式味道略為單調,結果將帶子煎香或者將醬汁調酸啲可能會突出好多。

Steamed Stuffed Tofu Puffs 蒸酿豆腐
Ingredients:
Serves 4 pax

Mix the following together
-----
250g (8.8 oz) minced pork (can be replaced with minced chicken or beef)
1 stalk of spring onion (chopped finely)
25g (0.88 oz) carrots (chopped finely)
2 pieces of dried Shitake mushrooms (rehydrated & chopped)
1 tablespoon oyster sauce
2 tablespoons light soy sauce
1/2 teaspoon sugar
1 teaspoon sesame oil
A few of white pepper
2 tablespoons cornflour
Fill the stuff above in the following

12 pieces of tofu puff (weighing 65g in total)
Sauce

3 pieces of shallot (chopped)
2 cloves of garlic (chopped)
0.5 cup (125ml or 4.23 fl oz) water
1 tablespoon oyster sauce
1/4 teaspoon of sugar
1/2 teaspoon premium dark soy sauce
Some cornstarch solution
1 tablespoon Chinese cooking wine (Shaoxing Huatiao wine)

For this video, we headed down to Swatow Seafood to DESTROY a Chinese Dim Sum Buffet! Swatow Seafood is a Chinese restaurant located in Toa Payoh that specialises in Teochew cuisine, which is heavy on seafood dishes and has some Cantonese influence. We opted for their High Tea Dim Sum Buffet (S$25.80 plus tax) where we were served an indefatigable number of dishes.
To begin with, there was a cold station where you had to go to manually order appetisers. This was followed by the bulk of the show where staff with push carts loaded with dim sum went about between tables offering customers food. We ate every dish the buffet offered, but the standout ones would be the Char Siew Buns, Steamed Pork Ribs, Custard Yolk Buns, Red Bean Paste with Banana Pastries.
The buns were sweet with chunks of pork and with a strong note of Chinese wine, while the Pork Ribs were extremely tender and tossed in a fragrant black bean sauce. The buns were filled with molten egg sauce, on the sweet and savoury side, while the bread itself were pandan flavoured. As for the pastries, they were neat and crisp packages, filled with a sweet red bean paste and bits of banana. I had no idea red bean and banana went so well together.
This was a challenge where I really pushed myself and I had to force myself through the last few baskets of food. Regardless, the Chinese Dim Sum offered was excellent, especially for a low-cost buffet. The push carts came at an alarming frequency with friendly staff constantly inviting you to take a serving or three of whatever was on hand, and I really abused this service for maximum value.

煮白飯
材料:
米 2杯 rice 2cups
水 2杯 water 2cups
作法:
1.將米倒入蒸碗,加入水,外鍋倒入3杯水,將加熱旋鈕轉到連續沸騰,蓋上鍋蓋煮約30分鐘即可。
煮泡麵
材料:
市售泡麵 1份 instant noodle 1pack
作法:
1.將泡麵湯包粉倒入蒸碗中備用。
2.水倒入鍋中煮沸後把泡麵倒入煮熟,將加熱旋鈕轉至斷電,後將水倒入蒸碗中拌勻,內鍋的麵與泡麵油包攪拌均勻即可。
燙青菜
材料:
花椰菜 30公克 broccoli 30g
紅蘿蔔片 20公克 carrot 20g
蒜末 10公克 minced garlic 10g
奶油 2小塊 butter 2small cubes
鹽 1/2茶匙 salt 1/2 tsp
黑胡椒粉 少許 ground black pepper some
作法:
1.鍋中煮水至沸騰後將蔬菜倒入汆燙,水再次滾後將水倒去,加入鹽、蒜末、奶油與黑胡椒粉攪拌均勻即可。
煮湯圓
材料:
湯圓 1盒 glutinous rice balls 1pack
糖 適量 sugar some
作法:
1. 鍋中煮水至沸騰後將湯圓倒入,待湯圓浮起後,依個人喜好加入糖調味即可。
煮水餃
材料:
冷凍水餃 12顆 12 dumplings
拌醬材料:
蒜末 10公克 minced garlic 10g
醬油 1大匙 soy sauce 1tsp
白醋 2茶匙 rice vinegar 2tsp
糖 2茶匙 sugar 2tsp
辣油 1大匙 chili oil 1tbsp
花椒粉 1/4茶匙 ground Sichuan pepper 1/4 tsp
作法:
1. 鍋中煮水至沸騰後將水餃放入,待水餃浮起膨脹後,將水倒掉,並將拌醬材料倒入拌勻即可。
熱牛奶
材料:
市售牛奶 1盒 (約230cc)milk 1 carton
作法:
1.內鍋倒入半杯水,放入304不鏽鋼蒸架,將牛奶放入,調溫旋鈕調至”連續沸騰”處,蒸煮約5分即可。
蒸包子
材料:
小豬包 4顆 4 steamed stuffed buns
作法:
1.內鍋倒入半杯水,放入316不鏽鋼蒸龍,將小豬包分別放入蒸籠中,調溫旋鈕調至”連續沸騰”處,蒸煮約5分即可。
蒸蛋+豆豉排骨
蒸蛋材料:
蛋 3顆 3 eggs
鹽 1/2茶匙 salt 1/2tsp
白胡椒粉 1/4茶匙 ground white pepper 1/4tsp
水 2杯 water 2cups
豆豉排骨材料:
排骨 200公克 pork ribs 200g
鹽 1/4茶匙 salt 1/4tsp
醬油 1大匙 soy sauce 1tbsp
蒜末 10公克 minced garlic 10g
辣椒末 5公克 minced chili 5g
太白粉 2茶匙 tapioca starch 2tsp
米酒 1茶匙 cooking rice wine 1tsp
豆豉 1大匙 fermented black bean 1tsp
作法:
1. 將蛋液與水攪拌均勻後,倒入蒸碗中備用。
2. 取一個盤子,將排骨與所有材料抓勻,放上蒸片放上排骨,外鍋倒入兩杯水,將蒸碗與蒸籠一同放入,調溫旋鈕調至”連續沸騰”處,煮約15分即可。
瓜仔肉+黃豆醬蒸魚
黃豆醬蒸魚材料:
鯛魚 1片 sea bream 1fillet
黃豆醬 2大匙 soy bean sauce
薑末 10公克 minced ginger 10g
辣椒末 5公克 minced chili 5g
醬油 1茶匙 soy sauce 1tsp
米酒 1大匙 cooking rice wine 1tbsp
瓜仔肉材料:
豬絞肉 300公克 minced pork 300g
薑末 10公克 minced ginger 10g
脆瓜碎 180公克 minced oriental pickling melon 180g
脆瓜汁 2大匙 oriental pickling melon sauce 2tbsp
蔥花 15公克 scallion 15g
太白粉 1大匙 tapioca starch 1tbsp
作法:
1. 豬絞肉摔打至出黏性,與其他材料混合均勻。
2. 魚片切小片鋪滿盤子,淋上薑末、辣椒末、醬油、米酒與黃豆醬。
3. 將瓜仔肉倒入蒸碗放在底下,蒸籠上放上魚片盤子,內膽內倒入3杯水,將蒸碗與蒸籠一同放入,調溫旋鈕調至”連續沸騰”處,煮約15分即可。
白切肉+蒜泥蝦+綜合丸湯
白切肉材料:
薑片 10公克 slice ginger 10g
米酒 2大匙 cooking rice wine 2tbsp
豬五花 250公克 pork belly 250g
白蘿蔔 200公克 radish 200g
蒜泥蝦材料:
蝦 10隻 10 shrimps
蒜泥 2大匙 garlic puree 2tbsp
辣椒末 2公克 minced chili 2g
醬油 2茶匙 soy sauce 2tsp
綜合丸湯材料:
貢丸 5顆 5 pork balls
小魚丸 8顆 8 fish balls
鹽 少許 salt some
作法:
1. 將水倒入內膽鍋至一半高度,再放入薑片、米酒、豬五花、白蘿蔔放入,蓋上鍋蓋煮至滾後將肉取出(約15分)。
2. 將魚丸、貢丸放入內膽鍋續煮。
3. 取一小盤將蝦排好後倒入蒜泥、辣椒末、醬油,放入蒸籠,調溫旋鈕調至”連續沸騰”處,蒸約5分鐘,待湯也煮滾即可。
家常滷肉
材料:
五花肉 400公克 pork belly 400g
白蘿蔔 100公克 radish 100g
紅蘿蔔 60公克 carrot 60g
蔥段 15公克 scallion 15g
辣椒 1根 chili 5g
蒜頭 15公克 garlic 15g
醬油 4大匙 soy sauce 4tbsp
米酒 2大匙 cooking rice wine 2tbsp
水 300cc water 300cc
糖 1大匙 sugar 1tbsp
作法:
1.倒入少許油至鍋內,爆香蔥段、辣椒與蒜頭,隨後加入豬肉拌炒至香,倒入米酒、白蘿蔔、紅蘿蔔、醬油與糖。
2.蓋上鍋蓋,調溫旋鈕調至”連續沸騰”處,煮約20分即可。
海鮮炒麵
材料:
烏龍麵 1份 udon noodles 1pack
蝦 10隻 10 shrimps
蛤蜊 8顆 8 clams
魚板 4片 kamaboko 4slices
洋蔥絲 30公克 shredded onion 30g
辣椒 1根 chili 5g
蔥段 10公克 scallion 10g
青菜 60公克 vegetable 60g
花枝 80公克 squid 80g
柴魚醬油 2大匙 bonito sauce 2tbsp
白胡椒粉 少許 ground white pepper some
水 50cc water 50cc
作法:
1. 鍋中倒入少許油炒香洋蔥絲、蔥段、辣椒,再加入海鮮類材料拌炒,倒入柴魚醬油、白胡椒粉與水,加入烏龍麵攪拌均勻即可。
2人小火鍋
材料:
蔥段 15公克 scallion 15g
洋蔥絲 30公克 shredded onion 30g
蕃茄 1顆 1 big tomato
金針菇 適量 enokitake some
總和火鍋料 適量 meat balls, fish dumplings some
高麗菜 適量 cabbage some
高湯 1200cc chicken stock 1200cc
作法:
1.鍋中倒入少許油將洋蔥、蔥段炒香,倒入高湯煮滾後即可依個人喜好加入材料。
