Hope you are excited about the upcoming Chinese New Year as much as we are! Today we will be sharing with you a Staple, Must-Have recipe this CNY, Mala & Tomato Soup Bases. Hotpot is the easiest and fuss-free thing to prepare and the most vital part of this dish will definitely be the Soup Bases.
These 2 soup bases are fairly easy to prepare and the best part is you can make a big batch of the pastes and store it! This way, you can enjoy freshly made soup bases through CNY!
All the spices can be found easily in the supermarket, if not the chinese herb store. We used normal chillis instead of the szechuan ones and it WORKS! However, the Chilli Flakes are crucial in creating the fragrance of the Mala Soup base. The most ideal ones are definitely the SzeChuan Chilli Flakes followed by Korean Chilli Flakes.

善用香料驅寒暖身
這陣子總是想吃羊腩煲和火鍋,但始終對著火爐進食容易上火,偶一為之就好了。那麼還有哪些食材有暖身功效?其實可能你廚房裡早就有了,就是各式辛香料,例如花椒、八角、丁香、桂皮及小茴香,它們都屬性溫熱,下廚時可以獨立使用,合起來其實就是五香粉,這種調味料用途廣泛,可以為食物增鮮去腥及調味,包糭子會用它來醃五花腩,炮製芋頭糕也會用到五香粉,今晚簡單煮一碟香煎五香粉雞翼,也有暖身作用呢。
花椒 — 性熱,有溫中散寒、解魚腥毒的功效,適合胃部及腹部冷痛、食慾不振、腸鳴便溏、風寒濕性關節炎、寒性痛經者食用。
八角 — 又名大茴香,性溫,具散寒溫陽、溫腎暖肝、理氣開胃功效,適合胃寒呃逆、腎虛腰痛者食用;惟注意陰虛火旺、糖尿病、目赤腫痛者不宜多吃。
小茴香 — 性溫,有理氣開胃、散寒止痛的作用,紓緩寒性腹痛、經寒痛經及嘔吐腹瀉等症狀。身體有偏熱症狀、陰虛火旺、濕熱體質人士不宜服用。
丁香 — 性溫,具有溫胃散寒,開胃進食,暖腎強腰作用。適合胃寒嘔吐、反胃呃逆、胃寒腹痛、腎陽不足、子宮虛冷陰痛者食用;惟注意胃熱嘔逆者、陰虛內熱及有偏熱症狀者如喉嚨痛、口瘡、暗瘡者勿吃。
桂皮 — 性熱,能暖脾胃、補元陽、除積冷、通脈止痛,適合怕冷、手腳發冷、胃寒、寒性月經不適等。注意身體有偏熱症狀如陰虛火旺、痔瘡、大便乾燥、孕婦不宜服用。

What are the five spices in the five-spice powder?
Use spices to dispel cold and warm the body
We tend to crave for lamb stew and hotpot as they could warm our body, but the problem with these dishes is they can cause heat to accumulate in our body too. So what other ingredients can we consume to warm our body?
Walk around your kitchen, and you should be able to find these ingredients. That is right! We are talking about spices like pepper, star anise, clove, cinnamon and fennel.
Though these spices are collectively known as the five-spice powder, they can be used individually in cooking as well. Besides bringing out the natural flavor of ingredients and eliminating the fishy odor, they are also used to season pork belly in glutinous rice dumplings and taro cake.
Do consider keeping yourself warm by seasoning chicken wings with the five-spice powder and frying them for dinner tonight!
Sichuan pepper - hot in nature, can warm the body and dispel cold, and help get rid of the fishy odour. The ability to dispel cold and remove dampness from the body makes Sichuan pepper a good food choice for individuals who experience the feeling of pain and cold on the stomach and the abdomen, poor appetite, abdominal gurgling and loose stools, rheumatoid arthritis, and menstrual cramps caused by cold conditions.
Star anise- warm in nature, can dispel cold, warm the yang, kidneys and liver, regulate qi and stimulate appetite. It is suitable for those with cold stomach, hiccups, asthenic weak kidney and lower back pain. Those with yin deficiency, diabetes, eye redness and pain should not eat too much.
Fennel - warm in nature, can regulate qi and stomach, dispel cold to relieve pain. Relieves cold-related diarrhea, frequent menstrual pain and vomiting. Not suitable for those with heat-related symptoms, with yin deficiency and excessive internal heat, and those with damp heat body constitution.
Clove- warm in nature, can warm the stomach, dispel cold, stimulate appetite, warm the kidney, strengthen the lower back. It is suitable for those who suffer from vomiting due to cold stomach, nausea, hiccups, abdominal pain due to cold stomach, insufficient kidney yang qi, and asthenic cold uterus pain. Those with vomiting due to heat in stomach, yin deficiency, heat-related symptoms such as sore throat, canker sore, pimple should not consume.
Chinese cinnamon - hot in nature, can warm the spleen and stomach, replenish vital energy and yang, dispel cold. It is suitable for those who suffer from aversion to cold, cold limbs, cold stomach, cold type of menstrual discomfort. It is not suitable for those with heat-related symptoms such as yin deficiency, hemorrhoids, dry stools and for pregnant women.

冬蔭湯開胃驅寒氣
冬蔭功可謂是泰國的代表菜式,泰文「冬蔭」是煲煮混合香料的意思,而「功」代表蝦,煮這個湯不加蝦,換成其它海鮮、雞肉或豬肉亦可。泰國冬蔭湯有多種煮法,但材料離不開南薑、香茅、檸檬葉、指天椒及青檸,這款湯煮起來香氣撲鼻,味道醒胃,從中醫角度來看,南薑性熱,能散寒止痛、溫中止嘔;香茅性溫,有疏風解表、祛瘀通絡的功效;檸檬葉性溫,能理氣開胃、止咳化痰;指天椒性熱,能溫中散寒、開胃進食;而青檸亦有開胃消食、生津止渴的作用,所以適合體質偏寒、食慾不振人士食用,冬天時喝一碗真的通體溫暖呢。
冬蔭功湯
材料:大蝦6隻、泰式茄子5隻、番茄2個、草菇10粒、南薑1塊、香茅2條、檸檬葉6片、指天椒2隻、秋葵6條、青檸1隻、冬蔭湯醬料1包、魚露2湯匙、適量黃糖、水1000毫升
做法:
1. 所有材料洗淨,大蝦剝開蝦頭及去腸;茄子及番茄切件、草菇切半;香茅斜切片;檸檬葉撕碎備用。
2. 燒熱油鍋,加入蝦頭、南薑爆香,加入冬蔭湯醬料略炒,加入水,大火煮滾後調小火煮5分鐘。
3. 加入茄子、番茄、草菇、秋葵、香茅、檸檬葉及指天椒,大火煮至滾後,轉小火煮10分鐘。
4. 加入蝦煮至熟透,熄火,擠入青檸汁、魚露,再按自己口味加入適量黃糖拌勻即成。

Appetizing Tom Yum soup can dispel cold
Tom Yum Kung is said to be the ultimate representative of Thai cuisine. ‘Tom Yum” means hotpot with mixed spices, whereas ‘Kung’ means prawns. The prawns in the soup can be replaced with other seafood, chicken or pork.
There are many methods of cooking the Thai-style Tom Yum soup, but most of the commonly used ingredients are galangal, lemongrass, lemon leaves, cayenne pepper and lime. This soup would release a strong fragrance that can stimulate the stomach.
From the perspective of Chinese Medicine, galangal is warm in nature, can dispel cold and relieve pain, as well as warm the Meridians and control nausea; Lemongrass is warm in nature, can eliminate wind from the body, clear stasis and improve the circulation of the Meridians.
Lemon leaves are warm in nature, can improve the circulation of the qi and increase one’s appetite, as well as relieve cough and clear phlegm; cayenne pepper is hot in nature, can warm the Meridians and dispel cold, as well as increase one’s appetite; Lime on the other hand can improve the appetite of a person, quench one’s thirst and promote salivation.
Therefore, Tom Yum soup is suitable for individuals with a cold body condition as well those with appetite loss. Drinking a bowl of Tom Yum soup during the winter is especially beneficial in keeping the body warm!
Tom Yum Gung
Ingredients: 6 prawns, 5 Thai eggplants, 2 tomatoes, 10 button mushrooms, 1 galangal, 2 sticks of lemongrass, 6 kaffir lime leaves, 2 chills, 6 okras, 1 lime, 1 sachet of tom yum paste, 2 tablespoons of fish sauce, cane sugar and 1000ml water
Preparation:
1. Rinse the ingredients. Remove prawn head and the intestines, set the heads aside. Cut eggplants, tomatoes and button mushrooms. Cut lemongrass and tear kaffir lime leaves.
2. Heat the pan with oil, add prawn heads, galangal and tom yum paste to stir fry. Add water, boil with high heat, turn to low heat and cook for 5 minutes.
3. Add eggplants, tomatoes, button mushrooms, okra, lemongrass, kaffir lime leaves and chilis, cook with high heat and turn to low heat, cook for 10 minutes.
4. Add prawns and cook until they are cooked. Turn off the heat and add lime juice, fish sauce and cane sugar to taste.

Singaporean cuisine is multi-faceted because of cultural influences. While a majority of Singaporeans are Chinese, we also have Malay, Indian and Eurasian ethnic groups. We've been taught since young to embrace racial diversity and maintain social harmony. This is not only evident in our language - Singlish, which is a variety of English spoken in Singapore, incorporating elements of Chinese and Malay, but also the food that we eat. Spicy food is rather common in Singapore so when Sichuan cuisine is brought over to our shore, they immediately became a hit. Almost all the coffeeshops or foodcourts in Singapore these days have at least one stall selling Sichuan food. Sichuan (Szechuan or sometimes spelt as Schezwan) food has a unique bold and lip-numbing spiciness in most of their dishes because of the liberal use of garlic, Sichuan peppercorns and other spices. One of their most popular dishes is this Spicy Fish Hot Pot or Chong Qing Grilled Fish. The soup base of this dish is good to go with rice and noodles. You can also add any side ingredients, such as beancurd skin, tofu, mushrooms, prawns, instant ramen noodles, etc to this dish. If you have a party coming up, you can consider serving this over a portable stove and have the side ingredients placed on the side so that your guests can cook while they eat. It's a really nice experience. Just prepare extra stock because we can guarantee you that a top-up is required. If you've never tried this yummy dish before, do give it a go.

Grilled fish - bake at 200C or 400F for 20 mins
