What's for lunch? My creation for today. the total cost is only rm20 for 5-6 pax. It's healthy and inexpensive. Try it at home!
TORTILLA CHICKEN PIZZA WITH TOMATO & CUCUMBER
INGREDIENTS (makes 2 pizza, for 5 - 6 pax)
YOGURT DIP
70ml of greek yogurt
Dash of Cayenne Pepper
*mix together, set aside
TOMATO & CUCUMBER MIX
1/2 japanese cucumber (diced)
1 tomato (diced)
5 stalks of coriander
1 cili padi (remove seeds and diced)
Salt
Black Pepper
1 1/2 small limes (juice)
*mix everything and set aside at least 10 minutes before using
Seasoned CHICKEN FILLET with salt, black pepper and basil. Using a pan fry, put in a bit of extra virgin olive oil, pan seared the chicken for about 3 minutes on each side.
ASSEMBLE :
1. Wheat tortilla
2. Butterhead lettuce
3. Yogurt dip
4. Tomato and cucumber mix
5. Chicken fillet
6. Gouda Cheese
7. Wheat tortilla
BAKED in the oven for 6-8 minutes. Slice into 6 wedges for each pizza. You are done, enjoy!
