材料
📌 細薯仔2個
📌 長青椒1個
📌 燈籠椒1個
📌 蒜片少許
📌 菇粉半茶匙

做法
1. 先把薯仔刨皮後切絲，再把長青椒，燈籠椒切絲。
2. 薯仔絲用清水連續洗兩次，之後用清水浸一會。
3. 煲滾熱水，把薯絲汆水，瀝乾備用。
4. 下油熱鑊，放入蒜片起鑊。
5. 放入長青椒絲，燈籠椒絲，炒大約1分鐘。
6. 再放入薯絲，炒大約1分鐘。
7. 落菇粉，胡椒粉，鹽，炒均。
8. 最後放入麻油炒均即成。

帶子材料及處理:
帶子先用滾水浸一會，(大概20秒)吸乾水分
用牛油把帶子二面煎香下調味:胡椒粉.鹽各小許
素意粉材料及處理
黃瓜.青瓜.或翠玉瓜切絲，車厘茄開半，波菜.蒜片.乾蔥頭
調味料: 欖油. 牛油 .胡椒粉 .鹽
做法: 下欖油抄香蒜片及一粒蔥頭，加牛油再下車厘茄抄加調味:鹽，胡椒粉最後下瓜絲抄好後加上(蒸好的帶子汁),拌勻上碟帶子放面
波菜抄好可加碟邊

做法: 將材料放入攪拌器內打碎

Pan Fried Scallops with Zucchini Spaghetti
Ingredients:
Scallops - (soak in water and remove any side muscles)
Green and yellow zucchini - one of each (cut into noodles with peeler or knife)
Cherry tomatoes - cut into halves
Spinach
Onion - 1 (sliced)
Garlic - sliced
Shallot - 1 bulb (sliced)
Seasonings:
Butter
White pepper
Salt
Mushroom seasoning powder
Methods:
1. In a pot of hot water, add in fresh scallops and briefly soak them then transfer to a plate. Pat dry with paper towel. Set aside.
2. In a heated wok, spray oil, add butter, add scallops, and fry until both sides are golden brown. Add in white pepper and salt to taste. Set aside.
3. Preferably in the same wok with leftover scallop butter sauce, add in onion slices, garlic slices, shallot slices, oil, and fry until fragrant. Add in butter, cherry tomato pieces, spinach, salt, white pepper, mushroom seasoning powder, and mix well.
4. Add in zucchini noodles and briefly stir fry. Do not overcooked zucchini.
5. With a pair of chopsticks, fill a big ladle full of zucchini noodles, twirl it into a pile, and transfer to the center of a serving plate. Continue with the rest of the noodles. Lastly, garnish with the cooked scallops. Serve.

Stir-Fried Green and Red Peppers with Potato Shreds
Ingredients:
Potato - 2 small size (shredded or cut into julienne strips, rinse twice and soak in cold water to release the starch for crunchier texture)
Garlic - sliced
Green and red sweet peppers or bell peppers - shredded
Seasonings:
Sesame oil - to taste
Salt - to taste
White pepper - to taste
Mushroom seasoning powder - ½ tsp
Methods:
1. In a pot of boiling water, parboil potato shreds and transfer to a colander. Set aside.
This step is optional.
2. In a heated wok, add in oil, garlic slices, green and red pepper shreds, potato shreds, and stir fry until fragrant.
3. Add in mushroom seasoning powder, white pepper, salt, and briefly stir fry.
4. Drizzle sesame oil right before transferring to serving plate. Serve.

Oreo Balls
Ingredients:
Oreo cookies - 1 package
Dried cranberries - ½ a bowl (or you can use any dried fruits)
Lemon juice - ½ tsp to 1 tsp
White chocolate
Methods:
1. In a food processor, add in Oreo cookies, dried cranberries, and lemon juice. Pulse together into fine crumbs.
2. Melt white chocolate bar over a warm bowl of water. Set aside.
3. To assemble, roll a small amount of Oreo cookie crumbs into a ball between your palms and squeeze tightly and applying the warmth from your palms to mold into a ball. Optional to add more lemon juice if it is not moist enough to hold its shape or warm up a bit in the microwave.
4. To decorate, dip the ball half-way into the white chocolate or coat the entire ball with white chocolate, or drizzle white chocolate over the ball. Transfer to serving plate. Continue with the rest of the Oreo cookie crumbs. Best serve cold.

In April, Muji's parent company Ryohin Keikaku Co. reported its first decline in operating profit in eight years and a financial outlook below analysts’ expectations, as well as a rare drop in same-store sales in China.

Investors are worried: After the value of the company almost tripled from 2013 to 2018, Ryohin Keikaku shares have declined nearly 40% in the past year.

President Satoru Matsuzaki has embarked on new ventures like Muji-branded hotels and Muji-designed buses while pushing into new markets such as India and Switzerland. To drive growth, he’s now taking steps like shifting production to cheaper locations and designing products specifically for Chinese consumers.

However, Muji still requires a faster adjustment to its overseas sales strategies. Muji always expanded to other countries with the same items it sells in Japan, assuming that its product range needs little translation for overseas consumers. That works well enough for, say, pencil cases, but not necessarily other items: It took Muji a decade in China to introduce sheets that fit standard Chinese beds.

Meanwhile, Muji’s “no brand” branding and straightforward, unchanging designs have made it a prime target for low-cost Chinese copycats. Muji’s prices are considerably more expensive outside of Japan due to taxes and tariffs, and a cottage industry of Chinese competitors like Miniso, Nome and OCE has sprung up to offer the same aesthetic for a fraction of the cost.

To avoid the price competition, Muji plans to produce more of its items in the countries where they’re sold. Next year, the company will roll out over 200 made-in-India products for its local stores. It’s also shifting more production to Southeast Asia, where labor is cheap.

In China, it opened its first development office in September, with employees responsible for monitoring local lifestyle trends⁠—a belated acknowledgment that Tokyo-based designers may not have the necessary insight into Chinese desires. Not everything will be internationalized, however. Muji will continue to make cosmetics, for example, in Japan, as the promise of high-quality raw materials is part of their allure.

Given how quickly its low-cost imitators have moved, Muji faces an uphill battle in China. And there and elsewhere, its ambition to become a global retail behemoth to match Uniqlo may require some of the strategic compromises made by other mass retailers—whittling its 7,000 products down to those of greatest sales potential, manufacturing items for speed rather than durability, and opening large locations in expensive shopping districts.

I know that this week in Hong Kong, thousands of people will be making their views clear, demonstrating against the proposals on extradition, which the government has put forward, extradition to China. It’s a proposal, or a set of proposals, which strike a terrible blow - I think - and so, I think to most people in Hong Kong and so does the international community, against the rule of law, against Hong Kong’s stability and security, against Hong Kong’s position as a great international trading hub. And the surprise is that the government in Hong Kong doesn’t seem to understand that. It does make you wonder sometimes who actually runs Hong Kong these days: is it the Hong Kong government or is it the joint liaison office acting on behalf of the communist regime in Beijing?

Why is this important? Well it’s the latest in a number of things that have happened in recent years which have tightened Beijing’s grip on Hong Kong, and which have profoundly worried people. I think for ten or a dozen years after 1997, things in Hong Kong went pretty well. Of course they could have gone better, I’m sorry that Beijing throttled the development of democracy, much against the promises that have been made earlier. But by and large, I think, Hong Kong remained a very free and successful society.

But ever since the regime in Beijing started to roll back Deng Xiaoping’s reforms and the developments that have taken place under Jiang Zemin and Zhu Rongji and Hu Jintao, and Wen Jiabao; ever since then, with the Party taking control over everything, cracking down on dissidents, cracking down on human rights, locking people up, incarcerating them in Xinjiang and so on. Ever since then, we know that Beijing has also been tightening its grip, or trying to, in Hong Kong. And I think that the latest proposals on extradition are an example of that.

Now a lot of very spurious arguments are put forward, it said that the present situation is a “loophole” which needs to be filled up - that’s absolute nonsense. People have known exactly why there shouldn’t be an extradition agreement with China for years, and many of the arguments put for the government’s proposals don’t actually pass the laugh-off-your-seat test. The argument that, well, it’s better to have an extradition treaty than to abduct people illegally from Hong Kong - are people really supposed to believe that?

Except for, but of course, Western democracies in Europe have extradition agreements with China, but they’re in a very different position to the position that Hong Kong is in. The reason why international chambers of commerce, why lawyers, why business around the world, why governments have raised their objections is very simple: because what these proposals do is to remove the firewall between Hong Kong’s rule of law and the idea of law - which prevails in Communist China - an idea of law where there aren’t any independent courts, where the courts and the security services and the party’s rules - which are, sometimes, pretty obscure - are rolled altogether. That’s why we’ve seen recently Canadian citizens that are locked up are taken as if it were hostage against things happening in Canada itself under the rule of law there. So it’s not surprising that people are so worried about what is happening.

I know that when people talk about the particular problem in relation to Taiwan, the leaders of the Hong Kong Bar Association over the last few years, I think a dozen of them, have put forward proposals which show how you could deal with that issue building on the existing common law.

So these proposals are bad for Hong Kong, they - I think - raise all sorts of questions which the government hasn’t even thought through, not least about Hong Kong’s economic importance and economic stability. We know very well that Hong Kong needs to be treated separately in economic and commercial matters from the rest of China. When I was governor a long time ago, I used to travel to Washington fairly regularly to argue the case for treating Hong Kong differently from, say, Shenzhen and Shanghai. But if you appear to be regarding Hong Kong from Beijing as though it was just another China city, then sooner or later, economic governments around the world, businesses around the world, when they’re looking even at things like the Belt and Road Initiative, they’re going to regard Hong Kong as just another part of China, and that would be really bad for the standard of living, for the quality of life in Hong Kong!

Above all, of course, if we go ahead, if the government goes ahead with this extradition agreement, it will cause unnecessary worries and anxieties in Hong Kong. That’s a really bad thing. I hope that even at this late stage, the government will back off and leave well alone. It doesn’t have to happen, it shouldn’t happen, and Hong Kong should carry on as a free society, under the rule of law, without having to worry about this extradition.

⭐ Things you need to know about whipping egg white! ⭐
1. Fat is the biggest enemy of foaming egg white.
2. Egg whites at room temperature can create bigger volume of foam.
3. Salt weakens the stability of the structure of foam. Don't put salt with the whites.
4. Adding sugar too early retards the foaming.
5. Slightly lower the pH of egg white can fasten foaming. Add half a teaspoon of lemon juice or a pinch of cream of tartare would help.
6. Sugar slows down air bubbles from bursting.

Ingredients：

Eggs | 4 pcs
Butter | 2 tsp
Salt | 1/4 tsp
Sugar | 1 tbsp

Method：

1. First, seperate the egg yolks and the egg whites. Add the salt to the yolks and beat them for a minute until it becomes pale-yellow colour.
2. Whip the egg whites with the sugar until soft-peak stage. Then mix with the yolks thoroughly.
3. Turn on the stove, place the butter in and coat the surface of the pan. Place the egg mixture into the pan and cover with a lid. Cook it over low heat for 4 - 7 minutes.
4. After 4 -7 minutes, take off the lid. Tilt the pan, roll the souffle omelette down and fold in half! Done!
