佛跳墙
材料:
上汤:
2 litres 水
1副有肉鸡壳
300g煮汤猪骨
2片左口魚干,烘香
10隻鸡脚,洗淨、去脚尖
10粒红枣,去籽
3片老姜
适量 盐、胡椒粉
A:
5粒干贝,洗淨、加入
1大匙绍兴酒,蒸30分钟,備用
2 杯油
B:
6粒鹌鹑蛋,煮熟、去壳
1/2 隻黑鸡,洗淨、切塊, 加1/2小匙盐腌
200g排骨, 切大塊,加1/2小匙盐腌
25g火腿,洗淨、切片
150g芋头, 去皮、切厚塊
C:
2片姜
1棵葱
1条海参,切大塊
1 塊魚鰾,洗淨泡软、切大塊
1大匙绍兴酒
6粒冬菇,洗淨、泡软
6条竹笙,泡软、洗淨
1大匙蚝油
1大匙生抽
D(燙过):
8粒 栗子,泡软、去衣
150g天津白菜,切大片
1塊冬笋,切大塊
E:
1 罐(10粒装)鲍鱼,取出鲍魚,汤汁加入上汤中
做法:
1. 上汤: 将全部材料放入一鍋中煮滚,改用小火煮2小时至出味,取出鸡脚、沥出上汤待用。
2. B: 燒热油,放入鹌鹑蛋炸至微黄,取出。放入黑鸡塊炸约2分钟至微黄,取出。再次燒热油,放入排骨炸约2分钟至微黄,取出。放入火腿炸一下,取出。放入芋头炸至微黄,取出。
3. 留油2大匙,爆香姜、葱,放入海参及魚鰾,攒入酒炒匀,放入冬菇、竹笙、蚝油和生抽煮至汁干,取出。
4. 用一个WMF 气压鍋,依序㸹天津白菜、冬笋、芋头、火腿片、鸡脚、黑鸡、排骨、海参、魚鳔、冬菇、竹笙、鹌鹑蛋、排好,倒入上汤至蓋到全部材料,蓋好,用大火煮滚至气压上升至三格,改用小火煮约12-15分钟至材料软,等气压下降后打开蓋,把鲍鱼排在中间,煮滚,试味,便可趁热食用。

Assorted Meat and Seafood in Superior Soup
Ingredients:
Superior stock:
2 litres water
1 set chicken carcass
300g pork bones
2 pieces dried sole fish, toasted
10 chicken feet, cleaned and trimmed
10 red dates, seeded
3 slices old ginger
Salt and pepper to taste
A:
10 dried scallops, cleaned and mixed with
2 tbsp shaoxing wine, steamed 30 minutes
2 cups oil
B:
6 quail’s eggs, hard-boiled and shelled
1/2 black chicken, cleaned, cut into pieces and marinated with ½ tsp salt
200g spare ribs, cut into big pieces and marinated with ½ tsp salt
25g Chinese ham, cleaned and cut into slices
150g yam, peeled and cut into thick pieces
C:
2 slices ginger
1 stalk spring onion
1 sea cucumber, cut into big pieces
1 piece fish maw, cleaned, soaked and cut into big pieces
2 tbsp shaoxing wine
6 black mushrooms, cleaned and soaked
6 bamboo fungus, soaked and cleaned
1 tbsp oyster sauce
1 tbsp light soy sauce
D (blanched):
8 chestnuts, soaked and removed skin
150g Chinese cabbage, cut into big pieces
1 bamboo shoot, cut into big pieces
E:
1 tin (10 pieces) abalone, separated abalones from liquid and pour the liquid into stock
Method:
1. Superior stock: Put all ingredients into a stock pot and bring to boil. Lower the heat and simmer for 2 hours or until the flavour has released. Remove chicken feet and strain out the stock for later use.
2. B: Heat up oil, deep-fry quail’s eggs until slightly brown. Dish and drain. Add in black chicken and deep-fry for about 2 minutes until slightly brown. Dish and drain. Heat up oil again, deep-fry spare ribs for about 2 minutes until slightly brown. Dish and drain. Deep-fry Chinese ham until slightly brown, dish and drain. Deep-fry yam in hot oil for a while. Dish and drain.
3. Leave 2 tbsp oil in wok, saute ginger and spring onion until aromatic. Add in sea cucumber, fish maw, drizzle with oil and stir-fry until well mixed. Add in black mushrooms, bamboo fungus and cook until the sauce is almost dry. Dish up.
4. Prepare a WMF Pressure Cooker, arrange Chinese cabbage, bamboo shoot, yam, Chinese ham, chicken feet, black chicken, spare ribs, sea cucumber, fish maw, black mushrooms, bamboo fungus, quail’s eggs into the pressure cooker, pour in superior stock until all the ingredients are covered. Cover with lid, bring to boil over high heat until the pressure is up to third ring. Lower the heat and cook for about 12-15 minutes until ingredients are tender. Let the pressure to release before opening the lid. Arrange abalones in the center. Bring to boil and taste. Serve hot.

包み焼きチーズハンバーグ
2人分
材料:
■ハンバーグ
合挽き肉 250g
玉ねぎ(みじん切り) 1/2個
卵 1個
パン粉 大さじ3
牛乳 大さじ1
ナツメグ 小さじ1/2
塩 小さじ1/2
コショウ 少々
■きのこデミグラスソース
しめじ 100g
ケチャップ 大さじ3
ウスターソース 大さじ3
赤ワイン 大さじ2
砂糖 小さじ1
バター 10g
スライスチーズ(とろけるタイプ) 2枚
ブロッコリー(小房) 適量
にんじん(輪切り) 適量
パセリ(みじん切り) 適量
作り方:
1. ハンバーグを作る。フライパンにサラダ油(小さじ1・分量外)を引いて中火で熱し、玉ねぎを加えて炒める。玉ねぎがしんなりして透き通ったらバットなどに取り出して冷ます。パン粉は牛乳に浸してふやかしておく。
2. ボウルに合挽き肉、塩、コショウを入れて、粘り気が出るまでよく練り混ぜる。
3. (1)、卵、ナツメグを加えてさらにこね、2等分する。両手でキャッチボールをするようにして空気を抜き、楕円形に成形する。
4. フライパンにサラダ油(大さじ1・分量外)を引いて中火で熱し、中央にくぼみを作った(3) を並べて焼く。焼き色が付いたらうら返し、蓋をしめて5分ほど蒸し焼きにする。ふっくらとしたらバットなどに取り出す。
5. そのままのフライパンにバターを入れて火にかけ、しめじを加えて炒める。しんなりしたら、ケチャップ、ウスターソース、赤ワイン、砂糖を加えて、とろみが着くまで中火で煮詰める。
6. アルミホイルを広げて(4)をのせ、(5)をかける。スライスチーズをのせて、空気が入らないようにしっかりと包んだら、200℃のトースターで10~15分焼く。
7. アルミホイルを開いてパセリを散らし、茹でたブロッコリーとにんじんを添えたら、完成!

Grilled Japanese meatballs with cheese
Servings:2
INGREDIENTS
■Meatballs
250grams ground beef & pork
1/2 onion (chopped)
1 egg
3 tablespoons panko breadcrumbs
1 tablespoon milk
1/2 teaspoon nutmeg
1/2 teaspoon salt
A pinch of pepper
■Demi-glace sauce with mushrooms
100grams shimeji mushroom
3 tablespoons ketchup
3 tablespoons worcestershire sauce
2 tablespoons red wine
1 teaspoon sugar
10grams butter
2 cheese slices
Some broccoli
Some carrot (sliced)
Some parsley (chopped)
PREPARATION
1. To make meatballs, heat 1 teaspoon of vegetable oil in a pan over medium heat, add onion to stir until it soften. Transfer onion to a plate and cool. Soak panko breadcrumbs in milk.
2. Mix ground beef & pork, salt, and pepper in a bowl until combined.
3. Add sautéed onion, milk-soaked panko breadcrumbs (1), egg and nutmeg, then knead well. Form two big meatballs. Make sure you toss the meatballs to release air and finger-dent in the middle (so it won't explode).
4. Heat 1 tablespoon of vegetable oil over medium heat and grill meatballs. Turn them when they are golden, bake for 5 minutes with lid, then take them out.
5. Put butter and shimeji mushrooms into the same pan to stir. Once its soften, add ketchup, worcestershire sauce, red wine and sugar to simmer over medium heat until thicken.
6. Place meatballs (4) on a foil and spoon sauce (5) over them. Put cheese slices on top, wrap them tight. Bake 10 to 15 minutes in a toaster oven (200℃).
7. Open the foil-wrap, sprinkle parsley and place boiled broccolis and carrots on the side.
8. Enjoy!

Other ingredients

Optional: 1 whole piece of dried cuttlefish - cut into stripes & shallow fry until crispy
Optional: 2 bulbs of garlic - chopped and shallow fry until light golden brown - both oil and garlic to be used to enhance the flavour of the dish

1 thumb size ginger - julienne
2 tablespoons of fish sauce

1/2 tablespoon of black soya bean paste

150g of salted vegetables
1 tomato cut into wedges
1/2 teaspoon of sugar

Ingredients:
Serves 4 - 5
Marinating the fish fillet

300g Toman fish fillet
Half an egg white
2 teaspoons of fresh ginger juice
3 teaspoons of cornflour
0.5 teaspoon of salt
0.5 teaspoon of chicken stock powder
A few dashes of grounded white pepper
Blanching the marinated fish

A pan of water (sufficient to scald the fish fillet)
2 slices of ginger
1 stalk of spring onion
Marinated fish fillet
Putting the dish together

1 tablespoon of cooking
2 thumb size ginger - sliced

麻辣鳳爪
材料:
急凍鳳爪 2磅
花椒 10克
八角 4粒
蒜頭 6粒
辣椒仔 6隻
薑 5片
蔥 1條
調味料:
麻辣鮮露 1湯匙
鮑魚汁 1湯匙
辣椒油 1茶匙
鹽 1湯匙
糖 1湯匙
紹興酒 1湯匙
處理:
1. 鳳爪用清水解凍,擎乾水。
2. 修剪趾甲,每隻鳳爪1開2。
程序:
1. 煲1大煲水,加1湯匙鹽,放鳳爪落鑊,出水5分鐘。
2. 沖洗乾淨鳳爪,擎乾水。
3. 放薑片、蔥及八角落白鑊,至烘出香味,加水,放鳳爪,大火煮10分鐘。
4. 水滾,收至中火,再煮10分鐘。
5. 蒜頭,去皮,沖洗乾淨,切碎。薑,切碎。辣椒,去籽,切碎。蔥,用叉切碎。
6. 鳳爪煮了10分鐘,熄火,焗10分鐘。
7. 預備冰水。
8. 將鳳爪放入冰水內。
烹調:
1. 放2湯匙油落鑊,放花椒落鑊爆香,1分鐘後將花椒碎撈起。
2. 用中慢火將蒜頭及辣椒落鑊爆香,熄火。
3. 將浸好冰水的鳳爪擎乾水,放入玻璃碗。
4. 放1湯匙鮑魚汁,1茶匙辣椒油,1湯匙麻辣鮮露,1湯匙糖,攪勻。
5. 放入雪櫃,雪2小時,攪勻,上碟。
Mala chicken feet:
Ingredients:
Chicken feet 2 pounds
Sichuan pepper 10g
Star anise 4 nos
Garlic 6 nos
Red chili 6 nos
Ginger 5 slices
Spring onion 1 no.
Seasoning:
Mala liquid 1 tbsp
seasoning
Abalone sauce 1 tbsp
Pepper oil 1 tsp
Salt 1 tbsp
Sugar 1 tbsp
Shao Xing wine 1 tbsp
Steps:
1. Boil a wok of water, put 1 tbsp salt and chicken feet into the water, cook for 5 minutes.
2. Rinse the chicken feet, hang dry.
3. Fry the ginger slices, green onion and star anise for 2 minutes, add water and chicken feet, cook at high flame for 10 minutes.
4. Water boils up, turn to medium flame, cook for another 10 minutes.
5. Peel off and rinse the garlics. Chop the ginger well. Remove the seeds of red chili and dice well. Use a fork to cut the green onion.
6. Turn off the flame after the chicken feet have been cooked for 10 minutes. Keep the lid shut for 10 minutes afterwards.
7. Prepare iced water.
8. Put chicken feet into iced water.
Steps:
1. Put 2 tbsp oil into wok, stir fry the Sichuan anise for 1 minute, then take away the anise.
2. Stir fry the garlics and red chili at medium~low flame for 2 minutes. Turn off the flame.
3. Put the chicken feet in a glassware after they have been soaked in iced water and hung dry.
4. Put 1 tbsp abalone sauce, 1 tsp pepper oil, 1tbsp Mala liquid seasoning and 1 tbsp sugar, mix well.
5. Put in refrigerator for two hours. Mix well. Serve.
