เค้กช็อกโกแลตเนื้อสปันจ์นุ่มเบาสูตรนี้ รับประทานกับครีมหรือผลไม้สดก็อร่อย สูตรนี้ เพิ่มความพิเศษโดยสอดไส้มาด้วยมูสคาราเมล
-เค้กสปันจ์-
ไข่ไก่ 6 ฟอง
น้ำตาลทราย 140 กรัม
กลิ่นวานิลลา 2 ช้อนชา
แป้งสาลีอเนกประสงค์ 100 กรัม
แป้งข้าวโพด 60 กรัม
ผงโกโก้สีเข้ม 15 กรัม
เนย (ละลาย) 60 กรัม
น้ำตาลไอซิง สำหรับเสิร์ฟ
-มูสคาราเมล-
ไข่ไก่ 2 ฟอง
น้ำตาลทราย 80 + 20 กรัม
น้ำสะอาด 2 + 2 ช้อนโต๊ะ
วิปครีม 240 + 120 มิลลิลิตร
กลิ่นวานิลลา 1 ช้อนชา
ผงเจลาติน 9 กรัม
1. ตั้งเตาอบที่ 190 องศาเซลเซียส โปรแกรมไฟล่างไฟบน เตรียมพิมพ์ขนาด 9 นิ้ว จำนวน 2 พิมพ์ รองกระดาษไขที่ฐานและด้านข้าง
2. ร่อนแป้งสาลี แป้งข้าวโพด และผงโกโก้ เข้าด้วยกัน พักไว้
3. ตีไข่ไก่ กับน้ำตาลทราย และวานิลลา ด้วยหัวตีตะกร้อใช้ความเร็วสูงประมาณ 5 นาที จนส่วนผสมมีลักษณะขึ้นตัว หนา และสีอ่อน
4. ใส่ส่วนผสมของแห้งที่เตรียมไว้ลงไปทีละครึ่ง ตะล่อมเบาๆ ให้เข้ากันดี
5. ตักส่วนผสมประมาณ 1 ถ้วยตวงลงไปผสมกับเนยละลาย คนเบาๆ ให้เข้ากัน ก่อนนำไปผสมกับส่วนผสมหลักที่เหลือให้เข้ากันดี
6. แบ่งส่วนผสมใส่ลงในพิมพ์เท่าๆ กัน อบเป็นเวลา 30 นาที พักในพิมพ์เป็นเวลา 10 นาที แล้วนำออกมาพักบนตะแกรงให้เย็นสนิท
7. เตรียมมูสคาราเมล โดยใส่น้ำสะอาด 2 ช้อนโต๊ะในเจลาติน พักให้พองตัวดี แยกไข่ขาวและไข่แดง
8. นำน้ำตาลทราย 80 กรัมกับน้ำสะอาด 2 ช้อนโต๊ะ ตั้งไฟ เคี่ยวให้เป็นคาราเมลสีเข้ม ใส่วิปครีม 240 มิลลิลิตร และวานิลลาลงไป เคี่ยวให้เข้ากัน นำออกจากความร้อน ค่อยๆ แบ่งส่วนผสมใส่ลงในไข่แดง คนให้เข้ากัน นำกลับมาใส่หม้อตั้งไฟอ่อนๆ ใช้ช้อนไม้คนจนส่วนผสมข้นพอเคลือบหลังช้อนได้ (ระวังอย่าให้เดือด) ยกออกจากความร้อน
9. ใส่เจลาตินลงไปในส่วนผสม คนให้ละลาย กรองให้เนียนดี พักให้เย็นลง
10. ตีวิปครีมที่เหลือ 120 มิลลิลิตรให้ตั้งยอดอ่อน พักไว้ ตีไข่ขาวที่เหลือ กับน้ำตาล 20 กรัมจนตั้งยอดอ่อนเช่นกัน ตะล่อมวิปครีมกับเมอแร็งก์ให้เข้ากัน แล้วนำไปตะล่อมต่อกับส่วนผสมคาราเมล
11. ปาดคาราเมลให้ทั่วระหว่างตัวเค้กทั้งสอง แช่เย็นประมาณ 1 ชั่วโมง โรยด้วยไอซิงก่อนเสิร์ฟ
A slice of this chocolate cake is delightful by itself. Enjoy it with a cup of coffee on a breezy Sunday afternoon.
-Sponge Cake-
Eggs 6
Sugar 140 g
Vanilla Extract 2 tsp
All-purpose Flour 100 g
Corn Starch 60 g
Dark Cocoa Powder 15 g
Butter (melted) 60 g
Icing Sugar for serving
-Caramel Mousse-
Eggs 2
Sugar 80 + 20 g
Water 2 + 2 tbsp
Cream 240 + 120 ml
Vanilla Extract 1 tsp
Gelatin Powder 9 g
1. Preheat oven to 190°C. Line two 9-inch cake pan with parchment and grease with pan spray.
2. Beat egg, sugar and vanilla with the whisk attachment over high speed for 5 minutes until egg mixture turns pale and thick. Sift flour, corn starch and cocoa powder together and gradually add it to the mix.
3. Portion 1 cup of the mix out to combine with melted butter and add it back to the cake mix, incorporate thoroughly.
4. Divide batter evenly between prepared cake pans and bake until cakes are firm about 30 minutes.
5. Cook cakes directly in their pans for 10 minutes then further on a rack.
6. For the caramel mousse: add 2 tbsp of water to gelatin and separate egg white and yolks.
7. Add 80 g of sugar, water in the pot, slowly heat it till it turns into a dark caramel. Add cream and vanilla then remove from the heat. Mix a little caramel with egg yolks to temper before adding it back into the pot and cook until the mixture coats the back of the spoon.
8. Once removed from the heat, add gelatin, stir to combine, strain and leave to cool. Whip egg white and 20 g of sugar to make a soft peak meringue afterwards, whip remaining cream to soft peak as well and mix with the meringue. Fold meringue and caramel together and spread it smoothly on one of the cakes and top it with another cake. Chill and dust with icing sugar before serve.
