As a stay-at-home mum, there are lazy days when I wish I could whip up a yummy meal in a matter of minutes.

Thanks to Fortune Baby Abalone Noodles, I did that recently and to our surprise, all of us found it nice and flavourful.

Made with premium ingredients, including baby abalone and scallop shrimp roe noodles with real scallop bits, our gourmet dinner took less than minutes to prepare. All I had to do was boil and drain the noodles, cook other desired ingredients and place baby abalones on top, then drizzle with the sauce. Easy and fuss-free!

We tried three flavours and loved both the Braised and Mushroom (which comes with real mushrooms) ones. The kids gave their thumbs up for the noodles which were QQ and yummy. The Mala one was a tad too spicy for us but my mother-in-law finished it all and said it was good too.

You know, I never knew how to appreciate abalone till I was in my late twenties. Now that my kids are starting young but only take small bites, I get to enjoy so much of the leftover goodness. Well, I'm definitely gonna grab a few more of these to stock up in my kitchen cabinet for the rainy days.

Lai Yee's Kitchen- Pandan Chicken Mel's style

Thailand again. We can never get enough of Thailand and their food.
Today I want to challenge myself to make my very first pandan chicken.
It turns out to be quite "pro" .. What I will do next time is to make the chicken thiner and slightly longer and roll up a little before I wrap with the pandan leaf. Definitely not in a big chunk size. That way all the flavours and marination will be in between the meat and It will make the chicken more juicy and flavourful.

Ingredients (enough for 6 of us):
. Pandan leaves around 20 to 30 leaves
. 1 kg chicken fillets
. oil for deep frying

For the marination:
. 5 cloves garlic
. 2 cm turmeric (Typo in my video -Oops!)
. 3 tbsp lemongrass
. 5 shallots
. 5 cm ginger (I didn't have fresh ginger and I used powder
. around 10 white peppercorns
. 2 tbsp soy sauce
. 2 tbsp oyster sauce
. 1 tbsp Tamarind juice
. 2 tbsp palm sugar or brown sugar
. 2 tbsp coconut milk
. 2 tbsp white sesame
. 1 tbsp sesame oil
. 4 coriander roots
* Blend all to a smooth paste.
* It was not funny, I accidentally deleted a part of my video and cant find it back.. So my video didnt have some of the ingredients in the clip. Apology!
* Add-on : If I am not cooking for the kids, I will add on chili to be grinded together.

For the dipping ingredients :
. 3 cut chili padi
. 3 tbsp cut shallots
. 2 tsp fish sauce
. 1 tbsp soy sauce
. 5 lime juice
. chopped coriander (I didnt show in video)
* Mix up and serve

It was so good though. I wonder if I can make a tom yam flavour version. I will definitely try soon. What is next for Thai food?

Made an Oreo cheesecake with my baby girl! 🎂

This girl has said since the start of the holidays that she wanted to make a cake and I am just thankful that we managed to do it before school starts again.

How hard is it to find one-on-one time when you have four kids, including an infant, to care for 24/7? The truth is, very, very hard and challenging. Yet, it is still something that we try to achieve once in a while.

We went for a mother-and-daughter breakfast where she ate her favourite 鸡蛋面包 with hot Milo. This was done after sending the brother to school, the baby was sleeping in the stroller and the big sister was at home. We also went shopping for the cake ingredients after that. Then we woke up early the next day and the two of us did majority of what needed to be done while the rest were still in school or sleeping. You see, when there is a will, more often than not, there is surely a way.

The big sister saw us all busy in the kitchen when she woke up and asked "Why do we need a cake? What occasion is it?" And the answer was there was no special occasion but this was specially meant for my girl and if it made her happy, it made me too. Love you, my dear! ❤
