明爐烏魚酸梅湯
材料:
烏頭1條
雞髀菇2包
三寶丸12粒
豆腐2盒
芫荽2棵
薑6片
乾蔥頭6粒
蒜頭6粒
辣椒仔1隻
檸檬1個
細話梅10粒
酸梅4粒
檸檬葉8片
調味料:
冰糖200克
雞粉1茶匙
白醋1湯匙
處理:
1. 烏頭,打鱗,除去魚肚內的脂肪,取出魚扣。
2. 烏頭,清洗乾淨魚身及魚扣,擎乾水。
3. 雞髀菇,切細舊,洗乾淨。
三寶丸,洗乾淨。
4. 乾蔥頭,去皮。
蒜頭,去皮。
辣椒仔,洗淨。
檸檬,洗淨,切片。
烹調:
1. 話梅、酸梅、原隻辣椒仔、乾蔥頭、蒜頭、洗淨的芫荽頭、薑片及檸檬葉,放入煲內。
2. 加入白醋1湯匙、冰糖200克、雞粉1茶匙及水3升。
3. 大火煲滾。
4. 湯滾起後,加入部分丸類及雞髀菇,一邊食,一邊加入。
5. 加入已切好的豆腐,大火滾起。
6. 放烏頭在加熱盤上,用火加熱。
7. 已煮熟的材料,加入魚的兩邊。
8. 放已切好的檸檬片在碟邊。
9. 放好芫荽及辣椒在碟的另一邊。
10. 魚已煮熟。
11. 完成,可享用。

Ingredients:
Teochew grey mullet 1 No.
Mushrooms 2 packs
Meatballs 12 Nos.
Tofu 2 boxes
Coriander 2 Nos.
Ginger 6 slices
Shallots 6 Nos.
Garlics 6 Nos.
Chili 1 No.
Lemon 1 No.
Salted plums 10 Nos.
Sour plums 4 Nos.
Fragrant coleus 8 slices
Seasoning:
Rock sugar 200g
Chicken powder 1 tsp
White vinegar 1 tbsp
Preparation:
1. Teochew grey mullet, get it scaled. Remove the fat from its stomach. Take out its stomach.
2. Teochew grey mullet, rinse it as well as its stomach, hang dry.
3. Mushrooms, cut in small pieces. Rinse it.
Meatballs, rinse thoroughly.
4. Shallots, get them peeled.
Garlics, get them peeled.
Chili, get it rinsed.
Lemon, get it rinsed and sliced.
Steps:
1. Salted plums, sour plums, chili, shallots, garlics, root of coriander, ginger slices and fragrant coleus, put into pot.
2. Add white vinegar 1 tbsp, rock sugar 200g, chicken powder 1 tsp and water 3L.
3. Heat up at high flame.
4. Soup has been boiled up, put part of meatballs and mushrooms. As you eat, you add the ingredients in pot.
5. Tofu has been cut well. Boil it up at high flame.
6. Put the fish on reheating tray. Heat it up at high flame.
7. The cooked well ingredients, put on two sides of fish.
8. Put the sliced lemon on one side of fish.
9. Put coriander and chili on the other side of fish.
10. Fish has been cooked well.
11. Complete. Serve.

明爐烏魚:
材料:
烏頭魚1條
軟豆腐1磚
新鮮草菇半斤
白魚蛋4粒
墨魚丸4粒
貢丸4粒
酸梅3粒
話梅5粒
芫荽1棵
薑1舊
冰糖2粒
處理:
1. 烏頭,劏好後,清洗乾淨,擎乾水。
2. 粗鹽乸烏頭10分鐘。
3. 所有丸類,清水解凍10分鐘。
4. 軟豆腐,洗乾淨,切成1” x 1” 1粒,放碗中。
5. 薑,刮去皮。
芫荽,切去根部,洗乾淨。
薑,切片。
芫荽,切碎。
烹調:
1. 冰糖、話梅、酸梅(要壓爛)和500毫升水,同放在鑊中。
2. 加入鮑魚汁1茶匙。
3. 中火煮滾。
4. 丸類已解凍,清水沖洗乾淨。
5. 烏頭,大概醃了10分鐘,清水沖洗乾淨。
6. 湯已煮滾,試一試味,可加入少許白醋,轉中慢火。
7. 加豆腐、磨菇、所有丸類及薑片(應該水滾就要落),轉大火煮滾。
8. 放烏頭魚,浸熟,用湯淋熟。
9. 放芫荽,完成。

Soft tofu 1 cube
Button mushrooms 1/2 catty
White fish balls 4 Nos.
Cuttlefish fishballs 4 Nos.
Pork balls 4 Nos.
Sour plums 3 Nos.
Plums 5 Nos.
Coriander 1 No.
Ginger 1 No.
Rock sugar 2 cubes
Preparation:
1. The fish, get it scaled and remove its intestines. Rinse thoroughly and hang dry.
2. Season the fish with cooking salt for 10 minutes.
3. Meatballs, defrost with tap water for 10 minutes.
4. Tofu, get it rinsed, cut with size 1” x 1” and put them in a bowl.
5. Ginger, get it peeled.
Coriander, cut the root, then rinse.
Ginger, get it sliced.
Coriander, chop well.
Steps:
1. Rock sugar, dried sweet plums, sour plums (to be mashed with a spoon). Then fill 500ml water in wok.
2. Add abalone sauce 1 tsp.
3. Heat up at medium flame.
4. Meatballs have been defrosted. Rinse thoroughly.
5. The fish, has been seasoned for 10 minutes. Rinse thoroughly.
6. Soup has been already boiled up. Taste it or maybe you can add liitle white vinegar. Then turn to medium~low flame.
7. Add tofu, mushrooms , all the meatballs and ginger slices (it should be put when water starts to boil up.). Turn to high flame to boil up.
8. Put fish, soak in the hot soup. Use a spoon spreading the hot soup over the fish until it is totally cooked.
9. Put coriander on top. Serve.
