增肌必吃雞胸肉?
近年坊間推出不少即食雞胸肉,以滿足「增肌減脂」人士需要,因為雞胸肉是低脂肪、高蛋白質的代表食物,不過從中醫角度來看,雞屬性溫熱,有補益氣血、暖胃的作用,如本身體質偏熱,再每天吃溫熱的雞肉,容易出現喉嚨痛、出口瘡、暗瘡等偏熱症狀,所以吃雞肉要適可宜止,不妨配搭其他高蛋白質食材,每星期輪流食用,例如蛋白、各類魚肉、芝士等,亦毛豆、黑豆、黃豆均含豐富蛋白質。
中醫理論認為「脾氣虛則肌肉失養」,如果脾胃虛弱肌肉會較鬆軟,所以著重吸收蛋白質之餘,亦要注意調理脾胃,平日適量食用有健脾胃作用的食材,例如淮山、薯仔、蓮子、芡實、扁豆衣等,每日飲用一杯米水都有助補氣養脾胃。
雞 — 性溫,能補益氣血、暖胃,感冒期間或濕熱、痰濕體質不宜食用。體質虛弱、久病後宜適量食用。

Should we eat chicken breast to increase muscle?
In recent years, many different types of instant chicken breast are introduced to cater to the needs of those who wish to build muscles and lose weight. This is because the chicken breast is low in fats and high in protein.
Yet, from the Chinese Medicine perspective, chicken is warm in nature and can nourish the qi and the blood and warm the stomach. If an individual with a heat related body consumes chicken daily, he or she might experience heat-related symptoms such as sore throat, canker sore, and acne. Therefore, we should not consume chicken excessively.
We can also consider other high-protein food sources such as egg white, fish, and cheese, not forgetting about edamame, black bean, and soybean, as they are also rich in protein.
According to the Chinese Medicine theories, the muscles will lose its strength when qi in the spleen is weak. Besides taking protein, we have to maintain the health of the spleen and stomach. Consume ingredients such as Chinese yam, potato, lotus seed, gorgon, and lentils, as they can strengthen the spleen and stomach. Drinking a cup of rice water a day can also replenish the qi in these two internal organs.
Chicken - warm in nature, can replenish qi and blood, and warm the stomach. Not suitable for those with a flu or those with damp heat and phlegm and dampness body constitution. Suitable for those with asthenic body types and those who recovered from chronic illness.

花雕雞
材料:
仿土雞腿 1000公克 chicken thigh 1000g
薑片 25公克 ginger 25g
蒜片 25公克 garlic 25g
蒜苗 80公克 green garlic 80g
宮保(乾辣椒) 4公克 dried chili 4g
花椒 4公克 sichuan pepper 4g
芹菜 60公克 Chinese celery 60g
調味料
蠔油 2大匙 oyster sauce 2tbsp.
辣豆瓣醬 2大匙 chili bean sauce 2tbsp.
糖 1/2大匙 sugar 1/2tbsp.
花雕酒 100㏄ high-grade Shaoxing wine 100㏄
作法
1. 仿土雞腿洗淨剁小塊;蒜苗切片;芹菜切小段,備用。
2. 高火力熱鍋,倒入適量的油,放入蒜片、薑片爆香,再放入宮保(乾辣椒)、花椒炒香。
3. 放入雞肉拌炒,再加入辣豆瓣醬,炒至雞肉表面變色。【美味關鍵1:雞肉和辛香料拌炒至上色才香。】
4. 加入蠔油、糖炒勻,再倒入花雕酒煮沸至湯汁略收。【美味關鍵2:純酒燒煮不加水,風味更佳。】
5. 最後加入蒜苗片、芹菜段,蓋上鍋蓋燜煮3分鐘,開蓋後炒勻即可。
花雕雞火鍋
材料:
花雕雞 適量 chicken Pot qs.
高湯(或水) 適量 stock qs.
火鍋料 適量 hotpot pack qs.
青菜 適量 vegetables qs.
綜合菇類 適量 mushrooms qs.
泡麵(或快煮麵) 1份 instant noodles qs.
作法:
1.花雕雞可加入適量水或高湯,以及喜歡的火鍋料、青菜即變花雕雞火鍋。
2.還可以煮麵喔!

1.油蔥醬油乾麵
材料
乾泡麵 1包/instant noodle 1pc
豆芽菜 40公克/bean sprout 40g
韭菜 10公克/Chinese chive 10g
作法
(1)取2個悶燒罐內膽,分別放入麵體、豆芽菜與韭菜,沖入沸水約七分滿,預熱30秒後將水倒除。
(2)先將有麵的內膽放入悶燒罐,倒入熱水,蓋起矽膠碗蓋。再放入有菜的內膽,蓋起矽膠碗蓋與外蓋,一起悶燒5分鐘。
(3)取出後把水倒除,將乾泡麵內附的調味包倒入麵體拌勻即可。
2.香辣乾麵
材料
乾泡麵 1包/instant noodle 1pc
A菜 50公克/Taiwanese lettuce 50g
蛋 1顆/egg 1pc
鹽 少許/salt q.s.
作法
(1)取2個悶燒罐內膽,分別放入麵體、A菜,與另一空內膽一同沖入沸水約七分滿,預熱30秒後將水倒除。
(2)先將有麵的內膽放入悶燒罐,倒入熱水,蓋起矽膠碗蓋。再放入有菜的內膽,蓋起矽膠碗蓋;最後放入空內膽,倒入熱水、鹽跟蛋,蓋起矽膠碗蓋與外蓋,一起悶燒5分鐘。
(3)取出後把水倒除,將乾泡麵內附的調味包倒入麵體拌勻即可。
3.炸醬乾麵
材料
乾泡麵 1包/instant noodle 1pc
小白菜 50公克/bok choy 50g
蔥花 適量/scallion q.s.
作法
(1)麵體、小白菜一起放入悶燒罐內膽,沖入沸水約七分滿,預熱30秒後將水倒除。
(2)再次加入熱水,蓋起矽膠碗蓋及外蓋,悶燒6分鐘後開蓋,把水倒除後加入調味包拌勻即可。
4.辣椒牛肉
材料
乾泡麵 1包/instant noodle 1pc
牛肉片 80公克/beef 80g
蔥花 15公克/scallion 15g
作法
(1)麵體先放入悶燒罐內膽,沖入沸水約七分滿,再分次放入牛肉片,預熱30秒後將水倒除。
(2)再次加入熱水,蓋起矽膠碗蓋及外蓋,悶燒5分鐘後開蓋,把水倒除後加入調味包拌勻即可。
