We absolutely love how our feed was filled with mooncakes throughout this month ✨ The Mid-Autumn Festival may be over, but the feasting continues! Make these beautiful Blue & White Porcelain Mooncakes using the recipe by the talented @sh_eikona.

Makes 8
50g Rice flour
50g Glutinous rice flour
20g Wheat starch
30g Corn oil
90g Milk
90g Butterfly pea water
30g Sugar
Mung bean filling
1. Mix all the dry ingredients and divide into two.
2. Add milk into one of the mixtures, and butterfly pea water into the other.
3. Steam both the white and blue mixtures for 3 minutes.
4. Once cooled down, take half from both the mixtures and mix them to form a third colour (light blue).
5. Leave to cool in the fridge. Next, roll the mixtures together into 3 long rolls. Cut into 8 portions, flatten them and place mung bean fillings inside. Seal the edges and make into a ball.
6. Brush the mooncake mould with oil and press it against the balls to turn them into mooncakes.

A couple of weeks ago, we were in Mari House for their Fun Play Farming program (scroll to the bottom for discount code!) and Ella Grace fell in love with Ondeh-Ondeh, a local Malay delicacy that has the consistency of a mochi and bursts into a sweet caramelized treat made from gula melaka! 🥥🎉
I wanted to share the recipe with you and show you how easy and fun it is to make with your little. It's such a lovely bonding activity especially if they are a big fan of cooking, sensory experiences or playdough. Ella Grace could do almost all the steps except boiling it.
Just look at the proud smile on her face!

ONDEH-ONDEH
(recipe courtesy of Marihouse)
60g glutinous rice flour
30g tapioca flour
25g sugar
60ml pandan juice extract or blue pea flower juice extract (we used both)
50g fresh young grated coconut
palm sugar (cut into small pieces)
1. Mix glutinous rice flour, tapioca flour and sugar evenly before adding pandan/blue pea flower juice extract to create a dough.
2. Divide the dough into 14 little balls.
3. Flatten the dough and wrap chunks of palm sugar with it. Be careful that the layer of dough is not too thin as it will expand during the cooking process. This will result in the dough cracking and the palm sugar flowing out.
4. Put the little balls into a pot of boiling water. Dish it out once they float or leave to boil for a further 5-10 minutes to allow the palm sugar to melt thoroughly.
5. Coat the ondeh-ondeh with coconut.
6. Leave to cool and enjoy!

You can adjust the sugar level or eliminate according to what you're comfortable with. We shopped for the flour at our local grocers and the fresh coconut from the wet market. The round balls are a choking hazard for teeny tinies so make sure to supervise that they bite into it instead of stuffing it whole into their mouths. The melted palm sugar inside can also get quite hot so definitely allow to cool before digging in!

Quick Pão de Queijo (Cheese Bread Recipe)
Difficulty: VERY Easy
Time: 30min
Number of servings: 9 pieces
Ingredients:
100g (US 2/3cup) Katakuriko (potato starch) or corn starch
100ml water
1 egg
1/2 tsp. salt
1 tbsp. cooking oil

Directions:
1. In a microwavable bowl, put Katakuriko (starch) and water and mix well with a whisk.
2. Add egg, salt, and oil, then mix well with a whisk.
3. No need to cover, microwave at 600W (medium) for 1.5 minutes.
4. Immediately add grated parmesan cheese and mix well using a spatula.
5. Put some oil on your hands (to prevent dough from sticking) then roll into small balls.
6. Place them on a sheet of aluminum foil and bake in toaster oven for 15 minutes. OR bake in oven at 180C (350F) for 15 minutes.

Mochi Donuts (Pon De Ring) is the top-selling donut at Mister Donut (donut shop) in Japan. Chewy sugar coated donut like Mochi. My daughter loves it 😋
The easiest and the fastest way to make Mochi Donuts is to use "Hot Cake Mix"! You can never fail to make it. I tried to make it with regular flour then my daughter said it tastes like a bread 😅 Not bad but true.

How to Make Mochi Donuts (Pon De Ring Recipe)
Difficulty: Easy
Time: 20min
Number of servings: 6 donuts
*US 240ml cup measurements
Ingredients:
3/4cup(100g) Hot Cake Mix

3/4cup(100g) Shiratamako (lumpy glutinous rice flour)
200g (7oz.) silken Tofu (soft Tofu)
Sugar Glaze
* 5 tbsp. powdered sugar
* 1 tbsp. water
Directions:
1. Cut parchment paper into 4 inch (10cm) square pieces.
2. Put Shiratamako and silken Tofu in a bowl and mix well until smooth. Then add hot cake mix and mix well.
3. Divide it into 6 pieces. Then divide each into 8 pieces and make small balls. On the square parchment paper, arrange 8 balls to form a circle.
4. Deep fry in oil at 170C (340F), 3 pieces at a time, for 1.5 minutes on each side until golden. Remove from the oil and drain.
5. Mix the sugar glaze, dip in hot donuts, let cool completely.

「營養師的貼心小叮嚀」-by 陳小薇營養師
關東煮是日本的傳統料理,以甘甜昆布柴魚作為湯底,食材種類豐富包括白蘿蔔、高麗菜雞肉捲、魚漿煉製品竹輪、牛蒡天婦羅、蟹味棒、黃金魚丸子蒟蒻絲,以及炸豆腐,是一道相當符合健康概念的料理。
今日透過這道料理,來介紹高麗菜這個食材,高麗菜本身含有維生素B、C、K,另外還有礦物質鈣、磷、鉀、和鐵等多種微量元素,每100公克高麗菜含有1.3公克膳食纖維,能夠促進腸胃道蠕動、增加排便體積,有改善便祕的效果,有體重控制需求,卻又食量大的朋友,食用高麗菜也能夠增加飽足感喔!
除了上述營養價值外,與花椰菜同屬十字花科的高麗菜,也含有特殊營養成份硫代配醣體(Glucosinolates),經過高麗菜本身的酵素芥子酶(myrosinase)作用後,形成不同生物活性的水解物質,如異硫氰酸鹽 (isothiocyanates)、硫代氰酸鹽 (thiocyanates)、腈類 (nitriles)、環硫腈類 (epithionitriles) 等,分別具有能抑制癌細胞增加、幫助排除過氧化自由基,降低致癌風險、以及抗菌的效果;但是硫代配醣體不耐久煮,水煮時間建議不超過30分鐘,或是以其他方式如涼拌、蒸煮替代喔!

Cabbage roll ingredients:
Cabbage
Pig ground meat 80g
1 tsp salt
Pepper a little
A little potato starch
1 egg
Sesame oil a little
Stock ingredients:
Kelp 1
dried bonito 10g
4-5 tablespoons soy sauce
2 tbsp mirin
2 tbsp sugar
Sauce:
1 tbsp miso
2 tbsp mirin
2 tbsp brosd bean paste
2 tbsp sugar
2 tbsp glutinous rice
80cc water

食材:
白蘿蔔 半條
蛋 1個
竹輪2~3條
蒟蒻絲適量
油豆腐適量
黃金魚丸子適量
高麗菜捲食材
高麗菜 3~4片
猪絞肉 80g
鹽1小匙
胡椒粉少許
太白粉少許
蛋1顆
香油少許
高湯食材
昆布1條
柴魚10g
醬油4-5大匙
味醂2大匙
糖2大匙
醬汁
味增1大匙
味醂2大匙
辣豆瓣2大匙
糖2大匙
糯米粉2大匙
水80cc
步驟:
1.高湯:
清水加入昆布一條,水煮開小滾加入柴魚約5分鐘關火,靜置柴魚30秒取出,再加入調味的醬油、味醂、糖。
2.食材準備:
高麗菜捲: 高麗菜一整片燙過,削去硬梗的部分,猪絞肉加入蛋,鹽,香油,胡椒粉,太白粉少許揉捏成團狀,高麗菜鋪開將絞肉團放進去捲包起來。 蘿蔔削去0.2mm厚皮,白煮蛋事先準備好。 依食材放入鍋中煮。
3.沾料:味增,味醂、辣豆瓣、清水80cc、糖、糯米粉混合後,煮至濃稠
