Hey guys! Mood raya I dah datang ok so ape lagi, jomla buat kuih raya! First recipe nak share is a crowd pleaser, tart nenas 🍍 I suka tart nenas tapi I’m very picky because I nak pastry tart tu ada firmness but it melts in my mouth. And also homemade pineapple jam please, it makes all the difference 🤤 For this recipe I used Golden Churn Pure Creamy Butter, a premium butter that gives my pineapple tart all the buttery goodness. TART NENAS / PINEAPPLE TART (makes 110pcs - bite size)
Pastry :
1 cup of Golden Churn Butter
1/3 cup of castor sugar
1 egg yolk
1/2 tsp vanilla essence
3 cups of plain flour
2 tbsps corn flour
2 tbsps custard powder
Filling :
Homemade pineapple jam (if you want the recipe, do let me know) or you can use pre-made pinapple paste. If you are making the filling yourself, make it a day before. Sumpah guna homemade jam lagi sedap gile ok, beza rasa kalau guna paste.
Egg wash :
1 egg yolk
A lil bit of yellow colouring
HOW TO :
Follow the instructions in my video but here some tips :
1. Preheat the oven at 170 degrees F for at least 10 minutes. Cooking time depends on the size of your tarts and oven. Mine is 16 minutes for 20 pcs of bite size.
2. If you nak buat tart gulung instead of open tart like this, kurangkan tepung so dough jadi lembut sikit.
3. Sapu egg wash dulu before letak jem nenas lagi senang keje.
4. Make sure all ingredients room temperature.

EASY Chicken Pilaf
Difficulty: Super Easy
Time: 1hr
Number of servings: 4
Ingredients:
2 cups uncooked pre-washed Japanese rice
150g (5.3oz.) chicken thigh cut into chunks seasoned with salt and pepper
100g (3.5oz.) chopped onion
50g (1.8oz.) canned sliced mushrooms
150g (5.3oz.) mixed vegetables
1 tbsp. Sake
1/2 tsp. salt
1 tsp. consomme powder (or bouillon powder)
1 tbsp. butter
cracked black pepper
Directions:
1. If you are using pre-washed rice (Musenmai) you don't have to wash it. If you washed rice, allow the rice to drain in a strainer for 30 minutes.
2. Heat 1/2 tbsp. of butter in a fringe pan. Cook pre-washed rice until coated with butter. If you are using washed rice, cook for about 5 minutes to dry out water from the rice.
3. Place the rice in a pot, add water to the appropriate level indicated in the pot, then add Sake, salt, and consomme powder, and mix well.
4. Heat another 1/2 tbsp. of butter in a frying pan and cook chopped onion until tender. Add chicken and cook until no longer pink. Add mushrooms and mixed vegetables, then season with cracked black pepper.
5. Place 4. on top of the rice. *do not mix or the rice won't cook evenly.
6. Place the pot into the rice cooker. Cover and press the button to start.
7. When it's done, toss the rice lightly using a rice paddle. Then serve in a dish.

Halloween Jack-o'-Lantern Pumpkin Pie
Difficulty: Easy
Time: 1 hr
Number of servings: 16cm (6.3-inch) tart pan with a removable bottom
Ingredients:
2 pie sheets (puff pastry sheets)
200g (7.0oz.) Kabocha (Japanese squash)
A
* 40g (1.4oz.) sugar
* 1 egg yolk
* 1 tbsp. butter
* 1 tbsp. milk
* 1/2 tsp. cinnamon powder (if you like)
B
* 1 egg yolk
* 2 tsp. water
Directions:
1. Scoop out the seeds of Kabocha, wash (you don't have to drain well), place it on a microwavable dish, cover with plastic wrap, and microwave on medium (500W) for 8 minutes until tender.
2. Scoop out 200g (7.0oz.) Kabocha flesh with a spoon. Mash the Kabocha using a fork and mix in A while it is hot. Then strain through a sieve.
3. Preheat oven to 350F (180C).
4. Halfway thaw one of the pie sheets. Use a sharp knife to cut out Jack-o'-Lantern face. Then thaw the other pie sheet and lay inside the tart pan with a removable bottom.
5. Lightly prick the bottom of the crust with a fork. Then fill the pumpkin filling (2.) and smooth the top. Lightly prick it again. Gently place the other pie sheet onto the top of the filling. Gently press the edges to seal them. Cut off edges as needed.
6. Mix B (egg wash) and brush on the surface with a pastry brush. Bake at 180C (350F) for 20-25 minutes until lightly browned.
7. Place it on a wire rack to cool. When it is cool enough to handle, remove the pie from the pan.

I found an interesting curry and rice.
You use milk to make this curry.
It has a nice creamy taste and spicy flavor.
Very addictive!!!
It reminds me of the stew I had in Amman, Jordan :)
I used to live there for 6 years.
Unfortunately, I didn't learn Arabic at that time, so I cannot speak it...

Hokkaido White Curry and Rice
Difficulty: Easy
Time: 30min
Number of servings: 5
Ingredients:
((White Curry))
1 box = 100g (3.5oz.) House Hokkaido White Curry Sauce Mix *we call it "curry roux"
200g (7.0oz.) meat *chicken or pork
1&1/2 medium (300g=10.6oz.) onions
1 medium (150g=5.3oz.) potatoes
1/2 medium (100g=3.5oz.) carrot
1 tbsp. cooking oil or butter
500ml water
200ml milk
((Turmeric Rice))
1 package turmeric powder *comes in the box
3 cups uncooked Japanese rice
Directions:
((White Curry))
1. Cut meat of your choice into bite-size pieces. Cut the onions into bite-size pieces. Cut the potatoes and the carrot into bite-size pieces.
2. Heat the cooking oil in a large stew pot. Add onions, carrots, potatoes, and meat, and stir-fry them until slightly coated with oil.
3. Add 500ml water, bring to a boil, remove the foam, and turn the heat down to low and cook for about 15 minutes.
4.Turn off the heat, break up the curry roux into the pot, and mix well until completely melted. *make sure you stop the heat when you add the curry roux, otherwise it won't blend well.
5. Then put on the heat and simmer for about 5 minutes until it thickens.
6. Add 200ml milk, then simmer for another 5 minutes to finish.
((Turmeric Rice))
1. Wash the rice with cold water. Put in the rice cooker pot, then add water to the appropriate level indicated in the pot.
2. Add the turmeric powder, mix well, and start cooking.
3. Serve curry on a hot bed of turmeric rice.
*for best results, don't use a lid while cooking.
*curry and rice is best eaten on the day it's made but if you have any leftover, store it in the fridge and finish it on the next day, but it is not recommended.
*if you have leftover curry roux, wrap in a plastic wrap and store it in the fridge and use within a week.
