水煮鱼 literally means “water boiled fish” - but it's an explosion of flavours with marinated fish slices packed full of spice! This Sichuan Boiled Fish is completed with hot oil, coriander and fried peanuts, it's red fiery appearance may deter some but after a bite, many come back for seconds.
With all the spice and chilli going into this dish, you might get some acid indigestion and heartburn (trust us, we ate the whole bowl!). In such uncomfortable situations, Gaviscon Singapore serves up a fast and soothing release. Now, you can get back to feasting!

Ingredients:
800g boneless fish fillet (skinless and sliced)
1 tsp salt
1 tsp white pepper powder
1 tbsp shaoxing wine
1 tbsp cornstarch
2 tbsp cooking oil
20 dried chillies (rehydrated and cut into small pieces)
4 tsp sze chuan peppercorns
6 cloves minced garlic
10g ginger (sliced)
2 stalks scallions (chopped, green part only)
3 tbsp doubanjiang
1 litre water
400g Chinese cabbage (sliced into smaller pieces)
150g Bamboo shoots
150g Bean sprouts
1 tsp salt (adjust to taste)
1 tsp sugar
1 tbsp chicken powder
¼ cup cooking oil
Garnish with coriander and fried peanuts

Steps:
1. In a mixing bowl, add fish slices, salt, white pepper powder, shaoxing wine and cornstarch. Mix well and leave to marinate for 15 minutes.
2. In a small pot, blanch bamboo shoots for 3-4 minutes. Drain and leave to cool, then cut into slices.
3. In a wok pan over medium low heat, add 2 tbsp of cooking oil. Add half the amounts of dried chillies, szechuan peppercorns, and all the minced garlic and ginger slices. Stir fry until fragrant.
4. Add in doubanjiang and continue to stir fry.
5. Once fragrant add in water and bring to boil. Leave to cook for 3-4 minutes.
6. Strain off all the aromatics from soup. Add salt, sugar and chicken powder, adjust salt and sugar according to taste.
7. Add in chinese cabbage, bean sprouts and sliced bamboo shoots. Bring to boil and cook for 3-4 minutes until cabbage is cooked. Strain and transfer into a large serving bowl.
8. Add in marinated fish slices into soup and cook for about 1 minute or less until fish slices are cooked. Drain and add over vegetables in a serving bowl.

桂花魚 ... 1條
鹹酸菜 ... 150克
芽菜 ... 50克
白蘿蔔 ... 60克
野山椒 ... 10克
紅辣椒 ... 1條

醃料:
鹽 ... 1茶匙
胡椒粉 ... 1茶匙
啤酒 ... 20ml
生粉 ... 2茶匙
蛋白 ... 少量
調味料:

食譜:
第一步 起魚片,切鹹酸菜
第二步 將魚骨和魚片各自用啤酒和清水均勻地攪拌,攪拌乾淨後撈出 備用
第三步 魚片加入醃料,攪拌,待完全吸收備用
第四步 起鑊,開滾水,烚鹹酸菜約一分鐘,隔水備用
第五步 落油,炒芽菜,備用
第六步 落油、薑,把魚頭、魚骨煎至金黃色
第七步 把酸菜落鑊炒香,直至開始乾身微焦,然後落油爆香其他菜料
第八步 加熱水,大火滾起後,加入魚頭,然後調至中火煲3分鐘,芽菜放在碗底
第九步 魚湯加入魚露、糖、胡椒粉、醋調味,煮好之後把所有材料撈起,放入鍋中
第十步 將魚湯收細火,加入魚片滾15秒,撈出放入碗中,把魚片慢慢推散,使其平均受熱

Recipe:
STEP 1 Cut the fish fillet,Cut the pickled cabbage
STEP 2 Wash the fish fillets and the fish bones with beer and water,Rinse well and set aside
STEP 3 Add marinade to the fish fillets and mix well,Set aside
STEP 4 Boil a pot of water,Cook pickled cabbage for one minute,Drain and set aside
STEP 5 Add oil and stir-fry the bean sprouts
STEP 6 Add oil and ginger,Cook fish head and fish bones until golden
STEP 7 Stir-fry the pickled cabbage,Until dry and crisp,Add oil to cook the vegetables
STEP 8 Pour in hot water and bring to a boil,Add the fish head,Simmer on medium heat for 3 minutes,Put bean sprouts at the bottom of the pot
STEP 9 Add fish sauce, sugar, white pepper and black vinegar to the broth,Put all the ingredients into the pot
STEP 10 Cook the fish fillets on low heat for 15 seconds,Disperse and cook evenly,Add to the pot
TIPS:
-Cook fish bones until golden for a milky white fish broth
-Wild chili pepper is the essence of the dish's hotness
-Wash the fish fillets with beer to remove slime and sterilize

You must ditch your instant noodles for this super easy Soy Sauce Chicken Noodles. This recipe is suitable for those of you who are working from home. It's so easy that I believe everyone can make this at home. Some of you ask how did we calculate 15 mins of cooking time as mentioned in our video title. First of all, we need to get our cooking time definition right. Cooking time to is means the time when heat is turned on and applied to the ingredients. All other time is not counted. In this video, Roland cooked the chicken for 8 mins then he turned off the heat. Then he brought the sauce to boil to thicken the sauce. At most this will only take 2 mins. Then he brought a pot of water to boil to blanch vegetables and noodles. Vegetables literally take seconds to cook and noodles take about 2 mins max to cook because we used fresh noodles. Assuming we assign about 1.5 mins to let the water boil then that brings us nicely to about 15 mins of cooking time altogether.

This Nyonya Chap Chye is a classic from the Peranakan cuisine. Peranakan food is touted to be a blend of South East Asian culinary cultures - often hitting the spice, sweet and tang notes deliciously.
Chap Chye loosely translates to mixed vegetables, which is very accurate in this case. Fresh vegetables tossed with crispy beancurd strips and broth-soaked tang hoon (glass noodles) is a flavour explosion in your mouth you won't want to miss!

320g (11.29 oz) egg tofu (or firm tofu)
1 shallot (chopped)
1 thumb-sized young ginger (chopped)
3 cloves garlic (chopped)

2 tablespoons spicy broad bean paste
0.5 tablespoon black bean paste
200g (7.05 oz) minced pork (can use minced chicken)
0.5 tsp sugar

250ml (8.45 fl oz) water (feel free to add a little more water for slightly more sauce)
