Yum Cha in Hong Kong can be very chaotic 🥴 but it is always fun!
We visited Lin Heung Kui in Sheung Wan 上環蓮香居 this time for some old dim sums. How do I rate this Yum Cha experience? I will definitely come back again! Chaotic yet organized, that you can experience rushing to the dim sum lady to get dim sums and at the same time, spend some quality time with family, reading newspaper.

This is my first time to try some of old dim sums that can hardly find in other Chinese restaurants, including Lotus Paste Bun 蓮蓉包,Jumbo Bun (Yes, that’s 大包!大包整多兩籠 唔怕滯~) and my new favourite dim sums - 金錢雞 (Third photo)! It tastes so so so good with chicken liver 雞膶 on top, and then lard 豬膏 and Char Siu (Barbecue Pork) 叉燒, grilled in Barbecue pork sauce. Each of them has a very different texture and the conclusion is - you need to try金錢雞 (literally means coin chicken) when you visit Lin Heung Kui!

位於灣仔新開的潮洲菜館,聽聞主廚是從全港最出名的潮菜老字號尚興出來,怎麼不能不點我在尚興最愛但卻很難做得好吃的沙嗲牛肉試試。這次點的是沙嗲牛肉炒河,河粉尚算入味但整體味道偏淡汁也偏稀了一點。沙嗲味濃一些更優。冷馬頭油夠多而且非常鮮甜,餐廳貨源不錯。 整晚最驚喜的非潮式鱔湯莫屬,非常肥美而湯的味道適中,強推!其他菜包括要預訂的雞則中規中矩。
當晚酒的主題是95-05舊世界。分別有兩人帶了1995北隆小教堂。狀態很不一樣,如果盲品會很有趣!
這𥚃地點方便菜也不錯,以後訂位應該不容易!
A newly opened Chiu Chow restaurant in Wanchai, intel says the chef is from the most famous and long standing institute for Chiu Chou cuisine in Hong Kong, Shung Hing. My favourite yet not easy to master dish at SH is Chiu Chow style Satay beef, and of course I have to try it out here. We have ordered stir fried rice noodles with Satay beef this time. The taste of sauce does infuse into the noodles though the texture of the sauce itself is thinner and palate is lighter than expected. A thicker and stronger satay sauce taste should give a better result. The Chiu Chow style steam cold fish was sufficient with fish oil and fresh, proving a good source that the restaurant has. The highlight of the meal has to be the Chiu Chow style wild eel soup, strongly recommended!! Other dishes including the ore-ordered chicken dish were average.
The evening’s wine theme is 95-05 Old World. Two people brought the same vintage, Jaboulet La Chapelle, with very different condition and performance. It’d be fun if we were tasting them blind.
Given the location and food quality, this restaurant should be a place hard to get a seat without well advance reservation going forward.

In general, laksa consists of rice vermicelli with chicken or seafood, served in spicy coconut based soup.

600g of prawn heads
3L of water
1.5L of coconut milk
2.5 teaspoons of salt
1 teaspoon of sugar
70g of dried shrimps (soak in 1 cup of hot water, drained & minced)
Rempah paste (blended)
- 300g of shallots
- 5 pieces of garlic
- 5 pieces of red chilli (deseeded)
- 20 pieces of dried chilli (rehydrated)
- 3 pieces of lemongrass (use only its stem)
- 6 pieces of candlenut
- 20g of fresh tumeric
- 80g of galangal (blue ginger)
- 1/4 cup of water
- 1 tablespoon of grounded coriander powder
- 20g of belachan (roasted)

Preparation for seafood

200g of prawns - deshelled & deveined
150g of scallops
Ice bath (2 tsp baking soda + 1 tsp sugar + 2 cups of water & ice)
Other ingredients:
1 tube of egg tofu
1/3 head of a broccoli
1/2 a stalk of carrot - sliced
1/2 thumb size of ginger - sliced thinly
2 cloves of garlic - chopped
5 pcs of dried mushrooms - rehydrated & cut in half
1 teaspoon of sesame oil
400ml of chicken stock
1.5 tablespoons of oyster sauce
1/2 teaspoon of sugar
1 pc fish maw - rehydrated in hot water for 30 mins
60g of canned razor clams
Some cornstarch solution
A few dashes of white pepper
1 tablespoon of Chinese cooking wine aka Shaoxing Huatiao wine
