野炊食材之處理
野炊是露營的重頭戲之一,一班人在有限資源下,同心合力烹調菜式分享,是有趣又難得的體驗。想野炊過程更順利,由選材到準備都非常重要,留意以下食材處理重點,能讓你野炊的過程更得心應手。記得多使用環保包裝減少垃圾,並且自己垃圾自己帶走,好好保護環境。
蔬菜類:
- 宜選擇耐放的根莖類蔬菜,例如洋蔥、薯仔、蘿蔔、番薯等。
- 如選擇葉菜類,宜選購未經冷藏或淋濕的蔬菜。
- 可先去皮切好及汆水,冷凍包裝好,縮短野炊的時間。
肉類:
- 本身是真空包裝的話就一整包帶去。如需事先分裝,建議每片肉之間以能重用的蜜蠟布分隔,取用時比較方便。
- 肉類可預先醃好,放在冰箱冷藏。
- 有需要的話可先汆水,放在冰箱冷藏,縮短野炊時間。
- 鮮肉盡量在旅程第一天吃掉。
海鮮類:
- 魚類要先將去鱗及把內臟處理掉。
- 貝類海產宜事前刷洗乾淨。
- 以每餐食用份量先分裝及冷藏。
調味料類:
- 蔥、薑、蒜等可事前切好,放在小盒子裡。
- 調味醬油可以預先混合。
- 如準備有湯的菜式,可以準備現成的調味湯包,省時方便。
露營飲食小貼士:
如果露營會吃燒烤食物,不妨多吃屬性寒涼的蔬菜及水果平衡一下,例如生菜、茄子、番茄、蘆筍、雪梨、火龍果等。

Dealing with ingredients when cooking outdoors
Cooking outdoors is an important part of camping. With limited resources, campers work together to prepare dishes, and this is definitely an unique experience that does not come by easily.
If we wish to have a more enjoyable outdoor cooking experience, we need to be mindful of the ingredients. Remember to use reusable bags to reduce waste, bring them home, and dispose them properly.
Vegetables:
- Choose stem vegetables that can stay fresh for a longer time. For instance, onion, potato, carrot, and sweet potato.
- For leafy greens, buy only the fresh ones (dry and not frozen).
- Remove the skin or blanch in water in advance and then freeze the ingredients. Doing so can reduce the cooking time.
Meat:
- If they are vacuum-packed, bring them as they are. If they are not, place reusable beeswax wraps between the meat layers to ease the cooking process.
- Marinate the meat beforehand, if necessary, and store them in the freezer.
- If need be, blanch them in water first and freeze them. Doing so can reduce the cooking time.
- It is best to consume fresh meat on the first day of the trip.
Seafood
- For fish, you should remove all its innards.
- As for shellfish, brush and clean them appropriately.
- Divide them into smaller portions according to the number of meals, and then freeze them.
Seasonings and condiments
- Chop onion, ginger and garlic in advance and place them into containers.
- Pre-mix the sauces, as needed.
- If there are plans to make soup, pack seasonings and condiments into sachets.
Food tips when camping:
If you are having barbequed food, try to pair it with some cool natured vegetables and fruits to balance the heat, for example, lettuce, eggplant, tomato, asparagus, pear and dragonfruit.

情人節快樂!快樂之餘最重要是健康。或許因為新型冠狀病毒肺炎的關係,今年的慶祝方式有變。要防止病毒入侵,勤洗手、戴口罩、注意衛生固然重要,更重要是強壯身體機能,從中醫角度來看「正氣存內,邪不可干」,想未病先防就宜補肺益氣,提升體內正氣,外邪就不易入侵身體,減少染病的機會。今日介紹一款全家大小都適合飲用的益肺湯,太子參有補氣養陰、生津止渴的功效,屬性平和,是連小朋友都適合的平補藥材。再加入有益氣補虛、健脾化濕功效的五指毛桃,特別適合最近寒濕天氣,煲出來的湯會有陣陣像椰子的香氣。但要注意患上感冒或流感的人士不宜喝湯,要待痊癒後才可以湯水養生。
健脾益肺湯水小貼士:
適當地添加健脾益肺食材如北芪、大棗、紅蘿蔔、薯仔、番薯、海底椰等。
五指毛桃蘋果湯
功效:益氣溫肺,強身防病。
材料:五指毛桃30克、蘋果1個、紅蘿蔔1根、淮山20克、太子參15克、杏仁20克、生薑10克、蜜棗2枚
做法:
1. 所有材料洗淨,蘋果去皮去芯切塊,紅蘿蔔去皮切大塊備用。
2. 鍋內加入約2500毫升水,放入全部材料,以武火煮至水滾,調文火煮約1小時,最後下鹽調味即可。
注意:感冒未清者不宜飲用。

To fight against the virus, it is important to always wash your hands, wear a surgical mask and maintain good hygiene. Most importantly, strengthen your body functions. Chinese medicine believes that people should nourish the lungs and qi to prevent the illness. Pathogens cannot invade the body when the qi in the body is strengthened. It can lower the chance of getting sick. Here is a soup to nourish the lungs that is suitable for the whole family. Radix pseudostellariae can nourish qi and yin, promote fluid production and relieve thirst. It is mild in nature that is suitable for children. You can also add hairy fig root to nourish qi and yin, strengthen the spleen and dispel dampness, as it is especially suitable for the recent cold and damp weather. This soup smells like coconut. Note that those who are already fighting a flu or influenza should wait until they have fully recovered to drink soup.
Tips for soup to strengthen the spleen and nourish lung:
Appropriately add in ingredients such as astragalus root, Chinese red dates, carrot, potato, sweet potato, sea coconut.
Apple soup with hairy fig root
Effects: nourishes qi and warm the lungs, strengthens the body to prevent illness
Ingredients: 30g hairy fig root, 1 apple, 1 carrot, 20g Chinese yam, 15g Radix pseudostellariae, 20g almond, 10g ginger, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel and core apple and cut into pieces. Peel carrot and cut into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.
Note: not suitable for those recovering from a cold/flu.

1 piece mixed-vegetables tempura

some Kujo Negi

1 Onsen tamago
Dashi sauce(120 g)
1 tbsp soy sauce
1 tsp Hondashi(bonito soup stock)
100 g Japanese moderately thick brown sauce
Tsuke Tsuyu(500 ml)
60 ml mirin
60 ml soy sauce
400 ml water
1 tsp Hondashi(bonito soup stock)
Mixed-vegetable Tempura(2 pieces)
1/2 onion
25g carrot
25 g sweet potato
10 g green part Japanese leek
50 g flour
70 ml ice water

材料:
蕃茄4個 薯仔(大)1個
西芹 椰菜
洋蔥 紅蘿蔔
罐頭甜茄醬
茄汁 蒜頭
薑 辣椒仔
美個牛助條1磅
紅菜頭
橙 檸檬
牛油2片
處理:
1. 蕃茄、薯仔、西芹、紅蘿蔔、辣椒仔及薑全部洗乾淨。
2. 蕃茄,切細粒。
薯仔,去皮,切細舊。
紅蘿蔔,去皮,切件。
3. 牛肋條,煲一鑊滾水,出一出水。
洋蔥,切細片。
西芹,刨去表面的根,切細粒。
椰菜,1開6份,清洗乾淨。
辣椒仔,切細粒。
蒜頭,去皮,拍鬆。
薑,洗淨,拍鬆。
4. 牛肋條,已出水2分鐘,夾起。
5. 紅菜頭,刨皮,切細舊。
6. 牛肋條,清水洗乾淨。
烹調:
1. 牛油,放入煲內,慢火煮溶。
2. 放薑、蒜蓉及洋蔥爆香至金黃色。
3. 放牛肋條,爆香。
4. 放蕃茄爆香。
5. 放紅蘿蔔、紅菜頭及西芹。
6. 另一邊,煲滾1升水,灒入煲內。
7. 湯滾起,放椰菜,轉大火。
8. 已滾20分鐘,放半個橙連皮。
9. 放辣椒仔。
10. 放薯仔。
11. 又滾了20分鐘,夾起橙皮。
12. 放甜茄醬。
13. 放檸檬連皮,煲20分鐘,熄火,焗1晚。
14. 第2日,翻滾羅宋湯至完全滾起,完成。
Borscht soup:
Ingredients:
Tomatoes 4 Nos.
Potato (large) 1 No.
Celery Cabbage
Onion Carrot
Sweet tomato 1 can
Tomato ketchup
Onion Ginger
Red chili
US beef ribs 1 lb
Beetroot
Orange Lemon
Butter 2 slices
Preparation:
1. Rinse tomatoes, potato, celery, carrot, red chili and ginger thoroughly.
2. Tomatoes, dice into small cubes.
Potato, peel and cut into small pieces.
Carrot, peel and cut into pieces.
3. Beef ribs, boil up a pot of water, soak for 2 minutes and hang dry.
Onion, cut into small slices.
Celery, peel and dice into small cubes.
Cabbage, to be divided into 6 shares, rinse thoroughly.
Red chili, dice into small cubes.
Garlics, peel and beat well.
Ginger, rinse and beat well.
4. Beef ribs, have been soaked in boiled~up water for 2 minutes. Pick them up.
5. Beetroot, peel and cut into small pieces.
6. Beef ribs, rinse thoroughly.
Steps:
1. Melt butter at low flame in pot.
2. Fry ginger, garlic sauce and onion until they have been turned into colour gold.
3. Fry beef ribs well.
4. Fry tomatoes well.
5. Put carrots, beetroot and celery.
6. Boil up 1L of water on the other side. Pour direct into the pot.
7. The soup has been boiled up. Put cabbage. Turn to high flame.
8. Soup has been boiled for 20 minutes, put half orange with its peel.
9. Put red chili.
10. Put potato.
11. Pick up orange peel after 20 minutes.
12. Put sweet tomato.
13. Put lemon with its peel. Boil for 20 minutes. Turn off fire. Leave it overnight.
14. Heat up the soup again on the next day. Complete. Serve.
