野炊是露營的重頭戲之一,一班人在有限資源下,同心合力烹調菜式分享,是有趣又難得的體驗。想野炊過程更順利,由選材到準備都非常重要,留意以下食材處理重點,能讓你野炊的過程更得心應手。記得多使用環保包裝減少垃圾,並且自己垃圾自己帶走,好好保護環境。
蔬菜類:
- 宜選擇耐放的根莖類蔬菜,例如洋蔥、薯仔、蘿蔔、番薯等。
- 如選擇葉菜類,宜選購未經冷藏或淋濕的蔬菜。
- 可先去皮切好及汆水,冷凍包裝好,縮短野炊的時間。
肉類:
- 本身是真空包裝的話就一整包帶去。如需事先分裝,建議每片肉之間以能重用的蜜蠟布分隔,取用時比較方便。
- 肉類可預先醃好,放在冰箱冷藏。
- 有需要的話可先汆水,放在冰箱冷藏,縮短野炊時間。
- 鮮肉盡量在旅程第一天吃掉。
海鮮類:
- 魚類要先將去鱗及把內臟處理掉。
- 貝類海產宜事前刷洗乾淨。
- 以每餐食用份量先分裝及冷藏。
調味料類:
- 蔥、薑、蒜等可事前切好,放在小盒子裡。
- 調味醬油可以預先混合。
- 如準備有湯的菜式,可以準備現成的調味湯包,省時方便。
露營飲食小貼士:
如果露營會吃燒烤食物,不妨多吃屬性寒涼的蔬菜及水果平衡一下,例如生菜、茄子、番茄、蘆筍、雪梨、火龍果等。

Dealing with ingredients when cooking outdoors
Cooking outdoors is an important part of camping. With limited resources, campers work together to prepare dishes, and this is definitely an unique experience that does not come by easily.
If we wish to have a more enjoyable outdoor cooking experience, we need to be mindful of the ingredients. Remember to use reusable bags to reduce waste, bring them home, and dispose them properly.
Vegetables:
- Choose stem vegetables that can stay fresh for a longer time. For instance, onion, potato, carrot, and sweet potato.
- For leafy greens, buy only the fresh ones (dry and not frozen).
- Remove the skin or blanch in water in advance and then freeze the ingredients. Doing so can reduce the cooking time.
Meat:
- If they are vacuum-packed, bring them as they are. If they are not, place reusable beeswax wraps between the meat layers to ease the cooking process.
- Marinate the meat beforehand, if necessary, and store them in the freezer.
- If need be, blanch them in water first and freeze them. Doing so can reduce the cooking time.
- It is best to consume fresh meat on the first day of the trip.
Seafood
- For fish, you should remove all its innards.
- As for shellfish, brush and clean them appropriately.
- Divide them into smaller portions according to the number of meals, and then freeze them.
Seasonings and condiments
- Chop onion, ginger and garlic in advance and place them into containers.
- Pre-mix the sauces, as needed.
- If there are plans to make soup, pack seasonings and condiments into sachets.
Food tips when camping:
If you are having barbequed food, try to pair it with some cool natured vegetables and fruits to balance the heat, for example, lettuce, eggplant, tomato, asparagus, pear and dragonfruit.

「好好吃飯」和「快高長大」都是每位父母對孩子的期望,有時候並不是小孩不肯好好吃飯,而是可能受身體影響,如果小朋友消化及吸收能力都比較弱,就算多吃都未必能吸收,所以宜對症下藥,多飲用有健脾胃功效的湯水,慢慢改善脾胃功能。簡單的滾湯也可以美味有營養,例如紅蘿蔔及薯仔健脾、番茄健胃,牛肉亦有補脾胃、益氣血、強筋骨功效,滾一滾半小時就有一鍋美味的健脾開胃湯水了。
健脾胃湯水小貼士:
適當地添加健脾胃功效的食材如淮山、蓮子、熟薏米、茨實等。
紅蘿蔔番茄薯仔免治牛肉滾湯
功效:健脾開胃,保健強身。
材料:紅蘿蔔2根、番茄3個、薯仔1個、新鮮淮山1根、免治牛肉180克、薑2片
做法:
1. 除免治牛肉,所有材料洗淨。紅蘿蔔、薯仔及淮山去皮切粒;番茄切粒;免治牛肉與薑片炒香備用。
2. 炒肉後直接於鍋中加入1500毫升水,放入其餘材料,以武火煮至水滾,調文火煮20-30分鐘,最後下鹽調味即可。

情人節快樂!快樂之餘最重要是健康。或許因為新型冠狀病毒肺炎的關係,今年的慶祝方式有變。要防止病毒入侵,勤洗手、戴口罩、注意衛生固然重要,更重要是強壯身體機能,從中醫角度來看「正氣存內,邪不可干」,想未病先防就宜補肺益氣,提升體內正氣,外邪就不易入侵身體,減少染病的機會。今日介紹一款全家大小都適合飲用的益肺湯,太子參有補氣養陰、生津止渴的功效,屬性平和,是連小朋友都適合的平補藥材。再加入有益氣補虛、健脾化濕功效的五指毛桃,特別適合最近寒濕天氣,煲出來的湯會有陣陣像椰子的香氣。但要注意患上感冒或流感的人士不宜喝湯,要待痊癒後才可以湯水養生。
健脾益肺湯水小貼士:
適當地添加健脾益肺食材如北芪、大棗、紅蘿蔔、薯仔、番薯、海底椰等。
五指毛桃蘋果湯
功效:益氣溫肺,強身防病。
材料:五指毛桃30克、蘋果1個、紅蘿蔔1根、淮山20克、太子參15克、杏仁20克、生薑10克、蜜棗2枚
做法:
1. 所有材料洗淨,蘋果去皮去芯切塊,紅蘿蔔去皮切大塊備用。
2. 鍋內加入約2500毫升水,放入全部材料,以武火煮至水滾,調文火煮約1小時,最後下鹽調味即可。
注意:感冒未清者不宜飲用。

Preparation:

2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.
Note: not suitable for those recovering from a cold/flu.

More like a thick soup than a typical Western stew, this Chinese beef stew takes reference from Cantonese cooking and pairs vibrant flavours of daikon and carrots with rich earthy beefy goodness.
We cooked over a stove but go ahead and use a pressure cooker / instant pot to braise the beef chucks quicker.

1.4kg Beef chuck (cut into chunks)
2 tbsp Cooking oil
2 Onions (cut into wedges)
1 Knob ginger (smashed)
2 Star anises
2 Cinnamon sticks
2 Bay leaves
4 Cloves
5 Dried chillies (pre-soaked)
2 tbsp Light soy sauce
1 tbsp Dark soy sauce
2 tbsp Chu hou sauce
1 tbsp Fish sauce
3 tbsp Shaoxing wine
Salt & sugar to taste
500ml Chicken stock
500g Daikon (peeled and cut into chunks)

●ブラックペッパー適量
●ナツメグ少々
[ソース]
●ケチャップ:大さじ4
●ウスターソース:大さじ2
●みりん:大さじ2
●赤ワイン:大さじ3
●お酒適量
●米油(普通の油でもOK)
『紅生姜の厚焼き卵』
●卵:3個
●片栗粉:小さじ1
●万能ねぎ適量
●水:小さじ2
●マヨネーズ:小さじ1
●塩少々
●めんつゆ(4倍濃縮):小さじ1
●紅しょうが:10g~20gくらい
●米油(普通の油でもOK)
『ウインナーとブロッコリーのめんつゆチーズ炒め』

今回は簡単で美味しい全部冷凍も出来る作り置き『彩りハンバーグ弁当』を作りました。
週末とかにいっきに作って、後は平日朝起きたら弁当に詰めるだけでOKです♪
出来るだけ調味料も少なくなるように工夫してみました。
皆さんのいつものお弁当作りが少しでも楽になったり
お弁当を開ける瞬間がもっと楽しみになって頂けたら本当に嬉しいです。
全部とっても簡単なので是非作ってみて下さい。
[Ingredients](Storage time: about 3 days refrigerated, about 2 weeks frozen)
[Easy fluffy hamburger steak]
● Ground beef and pork: 400g
● Fresh onion: 1 (regular onions are also OK)
● Bread crumbs: about 1 cup
● Milk: 50ml
● 1 egg
● Salt: 1 teaspoon

This is the second version of a meal prep dish that was really popular
last time.
This time, I made a "colorful hamburger steak lunch box" that is easy
and delicious to make and can be frozen.
You can make it all at once on the weekend and pack it in your lunch
box when you wake up in the morning on weekdays ♪
I have tried to use as few seasonings as possible.
I hope this will make your bento preparation a little easier, or if it
