Mulakan dgn ayam.. Sy buat sebelah ayam je..
Basuh bersih, jgn buang kulit, tanpa potong, letak dlm periuk. Masuk satu bahagian halia n garlic tadi. Satu sup bunjut, satu kiub ayam. Renehkan dlm 15 minit. Keluarkan ayam..
2 sudu besar sos tiram
1 sudu besar kicap masin
1 sudu besar kicap manis
1 sudu besar kicap cair
1 sudu kecil minyak bijan
Perap jap kat ayam yg dah rebus tadi.. Preheat AF 180 3minit ok. Kemudian masukkan ayam dan bakar selama 20 minit suhu sama. Sy alas aluminium foil xnk melekat teruk. Hehe.
Utk nasi
Beras wangi campur beras biasa (supaya x berkanji sangat)
Sy buat 3 cawan je
Satu sudu besar mentega, satu sudu besar minyak masak
Tumis satu bahagian bwg putih n halia tadi. Kulit kayu manis, bunga lawang dan pelaga masuk. Kemudian masuk sehelai pandan, serai. Masuk setengah sudu kecil garam dan masuk 2 senduk air rebusan ayam tadi.
Tenggek mcm biasa ikut sukatan nasi mcm biasa tau.
Tambah air rebusan ayam tadi jika air kurang. Tinggalkan sedikit utk sup..
Utk sup
Rebus semula balance air rebusan ayam tadi, tambah garam sikit, serbuk lada putih dan daun sup.. Siap..
Utk kicap
Balance kicap perapan tadi, tambah satu senduk kuah sup dan panaskan sebentar. Siap.
Utk sos cili
Bahagian ketiga bawang putih dan halia tumbuk tadi, blendkan dgn 2 biji cili merah besar dan 3-4 biji cili merah kecil. Tambah satu sudu besar gula, satu sudu kecil garam, setengah sudu kecil magi cukup rasa, dan cuka ikot nk masam mana. Sy letak setengah senduk.. Panaskan dan masukkan satu sudu kecil tepung jagung bancuh dgn air. Utk pekatkan kuah. Ok siap.
Hias ikot suka. Dan ngap!!! Alhamdulillah.. Prepare 15 minit je utk bahan mentah. 30 minit siap semua.

Somen is perfect refreshing food for hot and humid summer season :)
Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).
Kids requested me to make Edamame and Corn Nagashi Somen (Flowing Somen). Edamame and corn were pretty easy to catch and eat 😉 Kids enjoyed it very much 👍

Dilute with water as instructed on its package.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water.
NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.
((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.

材料:
粟米4支
紅蘿蔔4個(約1斤半)
支竹
白米半膠嘜
程序:
1. 支竹,清水浸軟。
2. 紅蘿蔔,清水浸,去除污泥。
3. 粟米,去皮,清水洗淨,取出粟米粒,粟米芯放入高速煲內,加入清水4升,用“濃香煲湯”功能,煲40分鐘。
4. 白米,清水浸。
5. 大火在煲內煲滾清水1升。
6. 紅蘿蔔,開住水喉,擦乾淨表皮。
7. 水已煲滾,放白米,攪動一下,轉中慢火,煲與煲蓋間留一條縫隙。
8. 從高速煲內夾起粟米,加入紅蘿蔔,繼續用“濃香煲湯”功能,煲40分鐘。
9. 粥已煲了十多分鐘,拿去筷子,攪動一下,加入粟米粒,加入滾水500毫升,攪勻,中火再煲滾。
10. 支竹已浸軟,清水沖洗乾淨,擎乾水。
11. 粥已滾起,轉中慢火,煲與煲蓋間留一條縫隙,煲15~20分鐘。
12. 支竹,剪大約3吋一段。
13. 粥已煲好,熄火,焗透。
14. 大火在鑊中燒熱油3湯匙。
15. 支竹,鋪好在鑊中。
16. 支竹,兩面已煎至金黃色,夾上碟。
17. 粟米粥,倒入大碗內。
18. 紅蘿蔔已煲腍,夾上碟。
19. 紅蘿蔔粟米水已煲好,冷、熱飲皆宜。
20. 完成,可享用。
Vegetarian meal on Buddhist day
Ingredients:
Sweet corn 4 Nos.
Carrots 4 Nos. (about 1.5 catty)
Bean curd
Plain rice 0.5 plastic cup
Steps:
1. Bean curd, soak in tap water until it turns soft.
2. Carrot, soak in tap water to remove mud on its surface.
3. Sweet corn, remove its skin. Rinse with tap water. Get the sweet corn cubes. Sweet corn core, is to be put in high speed cooker, add in water 4L. Use "porridge/soup" function, cook for 40 minutes.
4. Plain rice, soak in tap water.
5. Heat up water 1L at high flame in pot.
6. Carrots, brush it thoroughly under running tap.
7. Water boils up, put plain rice. Stir it. Turn to medium~low flame. Leave a gap between the pot and its lid.
8. Pick up the sweet corn from high speed cooker. Put carrots. Continue to boil 40 minutes more with "porridge/ soup" function.
9. Porridge has been cooked more than 10 minutes, take away chopsticks. Stir it. Add in sweet corn cubes, as well as boiled~up water 500ml. Stir well. Heat up at medium flame again.
10. Bean curd has been turned soft, rinse with tap water. Drain.
11. Porridge has been boiled up, turn to medium~low flame. Leave a gap between the pot and its lid. Cook for 15~20 minutes.
12. Bean curd, cut in lengths with 3" long.
13. Porridge has been cooked well, turn off fire.
14. Heat up oil 3 tbsp at high flame in wok.
15. Put bean curd in rows in wok.
16. Bean curd, both sides have been fried into golden yellow, put on plate.
17. Sweet corn porridge, is to be poured in a big bowl.
18. Carrots have been boiled well and turned soft, put on plate.
19. The carrot and sweet corn soup has been boiled well, cold or hot serving depends on personal favourite.
20. Complete. Serve.

水煮肉片
材料
A
豬肉片 適量 pork slices q.s.
水 適量 water q.s.
黃瓜絲 適量 cucumber q.s.
B
柴魚醬油 4大匙 bonito sauce 4tbsp.
蒜末 20公克 garlic 20g
蔥花 20公克 scallion 20g
香菜末 10公克 coriander 10g
辣椒末 15公克 chili 15g
冷開水 3大匙 water 3tbsp.
糖 1大匙 sugar 1tbsp.
香油 1大匙 sesame oil 1tbsp.
作法
1. 鍋中放入水,以190℃煮至滾沸,放入炸籃,再放入肉片。
2. 加入米酒去腥,待水再滾沸後,續煮約2分鐘。
3. 拿起炸籃,瀝乾水分,放入鋪滿黃瓜絲的盤中,淋上混合均勻的材料B即可。
水煮高麗菜
不開火就能燙青菜 廚房不再熱烘烘
材料
A
高麗菜 適量 cabbage q.s.
水 適量 water q.s.
沙拉油 1大匙 oil 1tbsp.
B
蔥油 2大匙 shallots oil 2tbsp.
蠔油 2大匙 oyster sauce 2tbsp.
冷開水 1大匙 water 1tbsp.
作法
1. 中放入水,以190℃煮至滾沸,放入炸籃,再放入高麗菜。
2. 加入沙拉油,待水再滾沸後,馬上拿起炸籃起瀝乾盛盤。
3. 再淋上混合均勻的材料B即可。
蒜泥鮮蚵
材料
鮮蚵 600公克 oyster 600g
地瓜粉 適量 tapioca starch
蔥絲 適量 scallion
薑絲 適量 ginger
作法
1. 煮一鍋水至滾沸,立刻轉小火。
2. 鮮蚵沾上地瓜粉後,入鍋用小火泡煮5分鐘。
3. 待大部分鮮蚵浮起就能起鍋。
4. 淋上蒜蓉醬即可。
蒜泥白肉
材料
五花肉片 500公克 pork belly 500g
小黃瓜絲 180公克 cucumber 180g
作法
1. 煮一鍋水至滾,放入五花肉片,待水再度滾沸煮1分鐘。
2. 取出瀝乾水分,將肉片鋪在小黃瓜絲上,淋上蒜蓉醬即可。
白斬雞腿
材料
大雞腿2隻 chicken thigh
水3000㏄ water
蔥段30g scallion
薑片30g ginger
鹽8g
米酒30g cooking rice wine
蔥油醬
蔥末50g scallion
薑泥6g ginger
香油40g sesame oil
白胡椒粉少許 ground white pepper
作法
1.鍋中放入水,以130℃煮至滾沸。
2.炸籃中放入大雞腿,再放入鍋中。
3.加入米酒和鹽去腥,待水再滾沸後,蓋上鍋蓋,續煮約25分鐘。
4.關火,續燜15分鐘。
5.打開鍋蓋,將炸籃扣在鍋緣瀝乾水分後,取出放涼。
6.將所有醬料混合均勻,為蔥油醬。
7.將放涼的雞腿剁塊擺盤,食用時搭配蔥油醬享用即可。
蒜香地瓜葉
材料
地瓜葉 400公克 leaf of sweet potato 400g
沙拉油 2匙 oil 2tbsp.
作法
1. 煮一鍋水滾後,放入地瓜葉。
2. 待水再度滾沸,續煮2分鐘。
3. 加入2大匙沙拉油拌一下,取出瀝乾盛盤。
4. 淋上蒜蓉醬即可。
燙花椰菜
材料:
花椰菜 500g broccoli
蒜蓉醬適量 sauce qs.
作法:
1.切成一朵一朵,略去除粗皮,清洗後放入炸籃中。
2.以150℃將水煮滾,加1大匙油和少許鹽,放入炸籃。
3.上下提放數次,煮至花椰菜變深綠色,約8分鐘,取出瀝乾即可。
4.裝盤後搭配蒜蓉醬食用。
蒜蓉醬製作
材料:
蒜末40g garlic
辣椒末5g chili
醬油膏60g thick soy sauce
醬油15g soy sauce
涼開水15ml cooled boiled water
糖1茶匙 sugar 1tsp.
作法:
將所有材料混合均勻。
燙玉米筍
材料:
玉米筍500g baby corn
油醋醬適量 sauce qs.
作法:
1.玉米筍洗淨,放入炸籃中。
2.以150℃將水煮滾,加1大匙油和少許鹽,放入炸籃後。
3.蓋上鍋蓋,煮約8~10分鐘,開蓋取出瀝乾即可。
4.裝盤後搭配油醋醬食用。
油醋醬
材料:
蒜末25g garlic
洋蔥末20g onion
橄欖油60g olive oil
白醋20g white vinegar
黑胡椒粉5g black pepper powder
糖1茶匙 sugar 1tsp.
鹽1茶匙 salt 1tsp.
作法:
將所有材料混合均勻。
