Yesterday I saw my friend eating hotpot at home so syoik wei, I beh tahan, so my decided to DIY my Spicy Sukiyaki Hotpot. Actually, hotpot is one of the easy one-pot-meal to prepare at home, delicious to eat, a definite family pleaser, and you can eat from day to night. Just boil the soup, throw everything in, and let’s eat! 👩🍳👩🍳

Really feeling that hotpot from home all thanks to these convenient sauces from LKK. Who needs a truck when you can lok lok at home ? I don't know about you, but I'm missing lok lok. I'm feeling safe having this from home and if anyone is thinking of the same, check out the range of LKK sauces. The house-made sauces are delicious and my fave is the yuzu one! I really think that the quality of the meats here is pretty great given their price points, and I’ll definitely be back. In this episode, we headed down to Carnivore to rampage through a Brazilian AYCE Steakhouse Buffet! Carnivore, located at Chijmes, is a Churrascaria, which is a buffet restaurant that specialises in Churrasco (Spanish/Portuguese-style Grilled Meat). Only offering dinner service, prices range from $59++ to $69++ depending on the day for an all-you-can-eat Brazilian buffet.
Due to the Covid-19, their usual salad bar, where you could pick 15 different hot and cold sides, is now an ala minute service. Sides range from the iconic Brazilian dish, Feijoada, which is a black bean stew cooked with chunks of beef and pork, to salads.
Their meats are still served similar to the standard rodizio style, where meat waiters roam around with skewers of delectable meat, offering portions to tables. However, the carving is done at an isolated table and a designated staff member brings it to your table upon request. Choices range from beef, chicken, lamb, fish and pork, including beef hump, beef short ribs, beef brisket, chicken hearts, butterfish and lamb leg.
Realising that having them serve me their usual way would be too slow, I brought my giant plate along and had them plate a sumptuous meat feast. I got every single one of their grilled meats, rounding it off with their feijoada set. The feijoada set actually stood on its own very well versus the grilled food. The combination of the stew, garlic rice, sautéed kale and toasted cassava flour (farofa) brought many contrasting flavours and textures together in wonderfully pleasant fashion.
The standout meats would be the beef brisket, beef short rib and beef rump. Each were spectacularly tender and rich with a deep meaty flavour. Carnivore also offers a selection of sauces to go along with your meat, with the ideal one being chimichurri, a vinegar-heavy sauce that helps to cut through the fattiness of the meats.

In this episode, we headed down to The Goodburger at Coronation Plaza to beat an Undefeated 20 x 20 Impossible Burger Challenge! The Goodburger is a food truck that serves up Impossible patty burgers and vegetarian sides like nuggets and fries. Food trucks are already uncommon in Singapore, but one that serves plant-based meat and has an entirely vegetarian menu is particularly unique. They even offer vegan options for their burgers. Completing the challenge within 20 minutes makes the food free, but failure means you have to pay upwards of $100 for the meal. Goodburger has made this an official challenge for the public, so please come down to beat my timing and get a free meal to boot.
For this challenge, all 4 of the burgers that Goodburger offers were carefully skewered into a gigantic tower with each burger supercharged with 5 patties, making it a 20-patty burger. On top of that, onion rings, fries, churros and nuggets were piled around the tower, forming a formidable challenge.
The Impossible burgers were excellent, with the Classic being a standard cheeseburger, Black Tie having truffle aioli and rocket leaves, Happy Days with onion rings and BBQ sauce, and One Night in Bangkok being Thai-inspired with a lemongrass-galangal flavoured sauce. The burgers were indistinguishable from your standard beef burgers in sight, flavour and texture, with the centre of the patties still being pink. I am hard-pressed to think of a beef burger at the same price range that I would consider superior to Goodburger’s burgers. What really brought together the burgers were the special sauces used for each type which elevated the Impossible patties greatly and gave each burger a distinct character.
The sides were decent. I originally thought the nuggets contained meat, but to my surprise it was entirely vegetarian. The onion rings and fries were crisp and well-seasoned although they needed a dipping sauce that I was not offered. The churros had the signature cinnamon-sweet flavour to them that was not overly strong and were appropriately crispy on the outside while chewy in the middle.
I completed the challenge in the nick of time at just under 20 minutes. It was not as easy as I thought it would be and I was also enjoying the challenge a bit too much. The “meat” is entirely plant based and the authentic red beef colour comes from an identical chemical extracted from soy plants. According to Impossible Foods, this alternative uses 95% less land and 85% less water than the equivalent beef production, while still not comprising on taste. Head down to The Goodburger for excellent guilt-free burgers!

1.日式乾燒蝦仁
美味秘訣:醬汁先炒過香味更足
材料:
蝦仁 300公克/ peeled shrimp 300g
蒜末 15公克/garlic 15g
薑末 5公克/ginger 5g
洋蔥末 30公克/onion 30g
蔥花 10公克/scallion 10g
調味料:
辣椒醬 3大匙/ chili sauce 3tbsp.
番茄醬 3大匙/ ketchup 3tbsp.
細糖 1茶匙/sugar 1tsp.
米酒 2大匙/cooking rice wine 2tbsp.
作法:
1. 熱鍋,放入1大匙油,放入蒜末、薑末、洋蔥末炒香。
2. 再放入辣椒醬、番茄醬、細糖、米酒拌炒均勻,至紅油冒出。
3. 放入蝦仁,翻炒一下讓蝦仁均勻裹附醬汁,再撒上蔥花即可。
2 蝦仁炒飯
材料:
A
蝦仁 250g shrimp
蔥花 70g scallion
白飯 4碗 steamed rice 4bowls
蛋 4顆 egg
沙拉油 2大匙 oil 2tbsp
鹽 1茶匙 salt 1tsp
作法:
1.蛋打成蛋液備用。
2.炒鍋倒入沙拉油煸香蝦仁後舀走備用,煸出天然蝦油再將蛋液倒入炒香蛋,再加白飯將飯與蛋炒散,炒散後再加入煸香的蝦仁與蔥花。
3.炒散後再加入鹽調味即可。
3夜市沙茶炒飯
材料:
A同上
B
醬油 2茶匙 soy sauce 2tsp
沙茶醬 2大匙 Taiwanese BBQ sauce 2tbsp
作法:
1.作法1~3同上。
2.最後炒散調味時再加入沙茶醬與醬油,並持續大火翻炒將醬汁炒散即可。
4 蝦仁炒意麵
材料
意麵 2份 eei noodles 2pack
蝦仁包 1包 shrimps 1pack
洋蔥絲 30公克 onion 30g
蒜末 15公克 garlic 15g
辣椒片 15公克 chili 15g
高麗菜 60公克 cabbage 60g
高湯 400ml stock 400ml
鹽 1/4茶匙 salt 1/4tsp.
糖 1大匙 sugar 1tbsp.
白胡椒粉 1/2茶匙 white pepper powder 1/2tsp.
米酒 1大匙 cooking rice wine 1tbsp.
太白粉水 1大匙 thicken sauces 2tbsp.
作法
1. 取高湯300ml煮滾,放入意麵、鹽煨煮至軟,且將吸飽湯汁,取出盛盤。
2. 熱鍋,倒入1大匙油,放入蒜末、洋蔥絲、辣椒片炒香,放入蝦仁包、米酒炒至變紅。
3. 放入高麗菜炒軟,再加入烏醋、鹽1/4茶匙、糖、白胡椒粉與高湯100ml煮滾,加入太白粉水勾芡至濃稠。
4. 將炒料淋在意麵上即可。
5.鳳梨蝦球
材料:
蝦仁 250公克/prawns 250g
太白粉 適量/tapioca starch
鳳梨片 200公克/pineapple 200g
醃料:
蛋白 1大匙/egg white 1tbsp.
太白粉 2茶匙/tapioca starch 2tsp.
鹽 少許/salt
調味料:
美奶滋 100公克/mayonnaise 100g
檸檬汁 1大匙/lemon juice 1tbsp.
細糖 1大匙/sugar 1tbsp.
作法:
1.所有調味料混合均勻成醬汁。
2.蝦球劃開背部,加入醃料混合拌勻,醃約5分鐘。
3.沾上太白粉,放入氣炸鍋中,表面噴上適量油。設定溫度200℃、時間8分鐘。
4.炸好後取出,與醬汁、鳳梨片混合拌勻即可。
6. 滑蛋蝦仁丼
材料:
白飯 1碗/ steamed rice
蝦仁 100公克/ shrimps 100g
雞蛋 3顆/eggs 3
薑末 5公克/ginger 5g
蔥花 30公克/ scallion 30g
水 100ml/water 100ml
太白粉水 1大匙/ tapioca starch & water 1tbsp.
調味料:
鹽 1/4茶匙/salt 1/4tsp.
白胡椒粉 1/4茶匙/ grounded white pepper 1/4tsp.
作法:
1. 熱鍋,放入1茶匙油,再放入薑末、蝦仁炒至蝦仁變色。
2. 加入水煮滾,加入鹽,淋上太白粉水拌勻,再淋上打散的雞蛋液。
3. 煮至雞蛋半熟後撒上蔥花。
4. 將作法3淋在飯上即可。
6. 蝦仁千張蒸餃
材料:
千張 8小張 bean curd skin 8 sheets
餃子餡 適量 dumpling filling
蝦仁 8尾 shrimp
作法:
1.將大張千張切成1/4成餃子皮大小。
2.千張中間放入一大匙肉餡,再用虎口稍微捏緊做成燒賣形狀,再放入蒸籠中。
3.鍋中煮好水,有蒸氣時將蒸籠放入,蒸約5分鐘即可依個人口味搭配沾料食用。
7.厚切月亮蝦餅
材料

蝦仁 250公克 peeled shrimp 250g
鹽 1/6茶匙 salt 1/6tsp.
糖 1茶匙 sugar 1tsp.
太白粉 1大匙 potato starch 1tbsp.
薑 15公克 ginger 15g
蔥 20公克 scallion 20g
白胡椒粉 1/2茶匙 white pepper powder 1/2tsp.
香油 1茶匙 sesame oil 1tsp

潤餅皮 適量 popiah skin
作法
1. 所有材料A放入調理機中,使用一檔(低速)拌打成蝦漿。
2. 取一片潤餅皮,放上300公克的蝦漿,再蓋上另一片潤餅皮。
3. 在餅皮表面戳幾刀。
4. 熱鍋,倒入2大匙油,放入蝦餅以中小火半油煎約4~5分鐘。
5. 翻面,續煎4~5分鐘即可。
8起司米飯燒
材料
基礎麵糊250公克
白飯500公克
鹽1/4茶匙
黑胡椒粉1/4茶匙
雞蛋2顆
起司絲適量
蝦仁150公克
蘆筍段60公克
鳳梨60公克
萬用煎餅醬適量
作法
1.麵糊、白飯、鹽、黑胡椒、雞蛋拌勻成米飯麵糊。
2.熱鍋,塗上適量油。
3.倒入麵糊後鋪平。
4.表面撒上起司絲、蝦仁、蘆筍、鳳梨,蓋上鍋蓋,煎約5分鐘。(標:改上鍋蓋利用蒸氣循環,表面材料也能熟透)
5.淋上萬用煎餅醬即可。
9.蝦仁+番茄
材料
熟蝦仁 shrimps
小番茄 cherry tomatoes
番茄醬 ketchup
起司片 cheese
作法
1.放上吐司,先塗上番茄醬。
2.再放上小番茄、熟蝦仁與起司片。
3.再蓋上吐司,熱壓6分鐘即可。
