雖然彼此有差異但看的出來是同一個人的手筆
這些是法國19-20世紀的藝術家Guimard的作品
巴黎的第一個地鐵站出口就是他設計的
頗有童趣的設計成為了巴黎地鐵站的特色之一
巴黎也曾經把這種地鐵站的出口
贈送給蒙特婁、芝加哥等城市表示友好
在2008年的時候也曾經想贈送給台北捷運
但是北市府以無法配合台北景觀而拒絕
台北也因此與這個蠻有特色的建築失之交臂

如果一生人要瘋狂一次，那三個月到巴黎和南法學廚之旅就是我人生最瘋狂，可一不可再的日子。
為了增值自己，便關閉Ta Pantry三個月到法國學師。先到巴黎Le Relais Louis XIII學藝六星期，再到南法Montpellier的Le Jardin des Sens。兩間同是米芝蓮兩星，風格和規模卻截然不同。
巴黎Le Relais Louis XIII廚房只有6人，大家不分你我，我也有機會上場煮不同餸菜，記得那裏有位日本女廚師，勤力之餘，拎所有廚具都是無聲，姿態優雅又快而準。起初我對總廚沒有好感，他整天就是不停“Oh là là”，但其實是好人一個，在我last day前夕帶我到全法國最大的food distribution center, Rungis Marché 開眼界；當天凌晨4點出發，metro未開，我便踩單車在寧靜的巴黎街道出發到餐廳會合總廚，當時下著毛毛雨，我叫自己好好記住這一刻，人生應該再沒有這樣的機會。到達後才發現market如貨櫃碼頭般大型，單是牛肉雞肉已經分佈幾幢大廈。法國廚師對食材要求高，不同grading食材價錢爭得遠，選用的食材要有證書，對食物之執著就如一塊牛油也有獲獎，讓我大開眼界。
南法Le Jardin des Sens整個team有26人，上班的第一天上班就要做Fleurs de courgettes (Zucchini flowers)，先要溫柔地從取出花蕾，中間注入魚肉，再沾上炸槳炸。我是一個不認輸的人，就是會fake it until you make it，但這個菜難度之高令我投降，不傷花瓣取花蕾太難了吧！每逢夏天，餐廳會在沙灘有pop up，廚師除了維持餐廳正常營運，還要add on作pop up後勤支援，單是切菜速度之快連手也麻木，心中只有一個「快」字，每朝8點我們已在廚房跑來跑去，分秒必爭。
慶幸這三個月間在兩間完全不同風格和規模的兩星餐廳學習，令我不再怯場，也讓我看到法國廚界很多不為人知的的專業和執著，記得在Le Jardin des Sens工作時總廚燙傷手，但餐廳太忙，大家都手忙腳亂，他乾脆拿塊毛巾包手繼續煮，那種敬業樂業精神叫我佩服。另外，整潔是基本，他們每一餐會清潔洗地，每晚清雪櫃，每星期weekend放假前會清場，把所有層架和抽油煙機拆下清洗。從入貨、處理食材、食物質素、餐具、餐廳氣氛和服務，以至清潔，每件事都有堅持和執著，有時看到餐廳一星期休息兩天好像很多，但那五天的工作廚師們都是「瞓身」去做。在法國密集訓練後，變得不怯場，回港擴展事業版圖，食物質素也大大提升、接大型catering，更大膽創作不同主題的menu，如日本、上海、美國、東南亞等等 。
也許人生只能無條件地瘋狂一次，不要怕，就去試吧！讓自己人生不枉過。(Photos taken in 2011 in France)

看國際新聞給我的感覺我不是住在同一個世界。我在台北這邊很幸運可以繼續參加音樂會，看表演，去電影院。特別是十一月份有賈樟柯和阿母多瓦* 導演的回顧展，更別說金馬影展的電影。期待這個月在電影院能吸收這麼多而豐富的藝術作品。

When hearing the news in France, in Europe or elsewhere in the world, it feels like I live in another time and space. Here in Taipei, even though mask is compulsory when taking the metro or in public spaces, we can still go to art performances, restaurants, or movie theaters. In November we are especially spoilt with a Jia Zhang-Ke and an Almodovar* retrospectives, in addition to the Golden Horses Movie Festival with hundreds of new releases and restored classics from all around the world. How lucky are we over here on this beautiful island.

Going on a trip to France for 3 weeks. I wanted to go see the country during Christmas to see those magical moments, lightings, drink vin chaud and go to Christmas markets. Unfortunately, there was a big strike in France when I already booked everything so I had to go nevertheless. Not France of your dreams with no metro, bus or train. But I have to admit, this place gets me impressed with its beauty every time.

If you have never tried Sambal Sotong before, you're missing out :) Roland and I love to eat at this stall along Braddell Road in Singapore that serves up really really good Sambal Stingray and Sambal Sotong. Unlike some stalls in Singapore, this stall is very generous with their sambal chilli so that every bite of the fish or sotong always have sambal chilli. You can even request more sambal chilli from them and they won't even show you a black face or reject you. Nice people! Roland has created this sambal chilli and sambal sotong recipe using their chilli as reference. I would say his recipe is pretty spot on and if you're a lover of sambal chilli dishes, you really gotta make a batch of the chilli at home so that you can just eat it with rice or use it to cook other dishes.
