💞有人說:「只有當你有了自己的孩子,你才會真正了解父母的愛。」我的日籍母親和美籍父親為我們家三姊妹犧牲許多,但直到我有了自己的孩子,我才真正體會父母的犧牲奉獻。當我們離開日本時,我們對加州的一切感到新奇又困惑,同時也極力想要融入新的校園生活。我的母親每天都會幫我準備漂亮的便當帶去學校,但我都會求她改做花生果醬三明治,因為同學都會說我們「很奇怪」。家母理解我們的感受,也暫時放下了她自己的文化偏好。自此之後,我們開始吃牛奶麥片當早餐,而不是味噌湯,午餐則是花生果醬三明治。
但母親也總是告訴我們,別人覺得「奇怪」的地方,正是我們之所以獨特的原因:我們承襲了兩種文化,能說兩種語言,我們在童年看過的世界可能比許多人一輩子看到的還多。當其他小孩對我們不友善,或是取笑母親的口音時,母親告訴我們,他們會這麼做是因為害怕或無知,人們天生會恐懼新事物,但絕不能無知,因為每個人都有能力透過教育和學習來獲取知識。家父雖然出生於美國,但有時候在美國也覺得格格不入。家父年輕時本著冒險犯難的精神加入美國海軍,也擺脫了小鎮思維的侷限。當我收養女兒的那天,我把她抱在懷裡,心想現在的世界終於比較友善,有愈來愈多人覺得外國口音很有趣,而且帶便當盒是件很酷的事情。但我知道,作為一個亞裔女孩,在這個紛紛擾擾的世界也有她自己要面對的、不同的挑戰。我希望能夠盡我所能保護她,但我知道我能為她做的,就是讓她摒除無知的迷惑,擁抱生命的奇遇和燦爛。-- AIT文化新聞組組長蘇戴娜

💞Some say that “only when you have your own children can you truly understand the love of your parents.” My Japanese mother and American father made many sacrifices for me and my two sisters that I never fully appreciated until I had my own child. When we left Japan, we were confused by California but felt desperate to fit in at our new school. My mother made beautiful bento boxes for our lunches, but we begged her for peanut-butter and jelly sandwiches because kids called us “weird.” My mother understood and put aside her own cultural preferences. We started eating cold cereal instead of miso soup for breakfast, and yes – peanut butter for lunch.
But she always told us that what other people called “weird” is what made us so special: that we benefited from two cultures; that we could speak two languages; that we had seen more of the world as children than many people see in their whole lives. When kids were unkind to us or made fun of my mother’s accent, she told us that they did it because they were afraid, or ignorant. Fear of new things, she said, was natural. But ignorance was unacceptable-it was a condition each person had the power to cure through learning. My father was born in the U.S. but sometimes felt like a stranger. He joined the U.S. Navy at a young age to seek adventure and escape the limits of small-town thinking. When I held my own daughter in my arms on the day I adopted her, I was happy that we now live in a world where foreign accents are interesting and bento boxes are cool. But I know she faces her own, different challenges as an Asian girl growing up in a confusing world. I want to protect her from everything. 【Pho Nhat 越蘆, Fortress Hill outlet only is great. *Geotag surprisingly not accurate but I have checked in correctly b4 😅】Pho with Rare Beef & Cooked Beef 越南生熟牛肉河粉. For the best new Vietnamese & Pho opening its definitely 'Xuan' in Wanchai, albeit that is more cleaner Hanoi style so I do have small doubts some HK customers need time to warm up to that approach, or until 1 day they merge more in styles 🤔. For the general & more Southern Pho style, I think Pho Nhat in Fortress Hill is the best overall in Hong Kong personally, especially after it's refurbishment. I prefer it over Bun Cha just slightly, or Pho Le HK is good CP value, or the Beef quality here is even better than Brass Spoon, etc. Soup is almost up with the latter, except it has a diff dimension of clearer fragrance here.. Its a trait of this shop, even during its previous pedigree operating under a different name.

● Rice: 2 cups
● Chicken thighs: about 300g
● Shiso: As desired
● Leek: as desired
● Rice oil (regular oil is also fine)
● Minced garlic: 2 teaspoons to 1 tablespoon (fresh garlic is also fine)
● Fish stock: 1 tablespoon (4 times concentrated) (Noodle soup or white soup stock can be used)
● Butter: 10g
● Black pepper
[Seasoning for the meat]
● Salt
● Black pepper
● Mirin : 1 teaspoon
● Soy sauce: 1 teaspoon
● Grated garlic: 1/2 teaspoon

●ニラ:1束
●長ねぎ:1本
●醤油:大さじ4
●黒酢:大さじ1(普通の酢でもOK)

●あごだし(4倍濃縮):小さじ1(めんつゆ、白だしでもOK)
●ナンプラー:大さじ1(旨味がとんでもない事になるよ♪)
●ごま油:大さじ2
●にんにく:1~2片(チューブタイプでもOK)
●生姜:にんにくと同量(チューブタイプでもOK)
●豆板醤:小さじ1
●砂糖:小さじ2(ラカントとかにするとより糖質が抑えれます)
●唐辛子:お好み量
●いり胡麻:お好み量
●お好みで、一味唐辛子、ラー油
※辛みが苦手な方は豆板醤を味噌に変えて下さい。
※にんにくと生姜は出来れば生の方がオススメ♪

魚醤と和風出汁が合わさった奥深い旨味に黒酢のコクある酸味がたまらなく後引く、
最高に超やべぇやみつき感になってます🤤🤤🤤
ラーメン、豆腐、豚しゃぶ、焼肉、素麺、餃子、卵かけご飯、お鍋…合わせ方は無限大!
マジ何でも超合います!!
作り方は特製のタレに漬けるだけ♪
是非色んな物に合わせてみて下さいね。
一度食べたら、いつも冷蔵庫に入れておきたくなるくらい、
超やみつきな旨さですよ😆
あと!これ食べると次の日めっちゃ肌と体の調子が最強になります♪
[Ingredients] (Preservation period: about 3 days refrigerated)
● Chive: 1 bunch
● Leek: 1
● Soy sauce: 4 tablespoons
● Black vinegar: 1 tablespoon (regular vinegar is also fine)
● Mirin: 1 tablespoon
● Sake: 4 tablespoons
● Fish stock: 1 teaspoon (4 times concentrated) (Noodle soup or white soup stock can also be used)
● Nam Pla: 1 tablespoon (the flavor will be outrageous!)
● Sesame oil: 2 tablespoons
● Garlic: 1 to 2 cloves (you can use the tube type)
● Ginger: Same amount as garlic (you can use the tube type)
● Dou ban jiang: 1 teaspoon
● Sugar: 2 teaspoons (you can use LACANTS to reduce the sugar content)
● Red hot pepper: As much as you like
● Sesame seeds: As much as you like
● Optional: chili pepper, chili oil
※If you don't like the spiciness, replace Dou ban jiang with miso.
※I recommend fresh garlic and ginger if possible.

Ramen, tofu, pork shabu, yakiniku, somen, gyoza, rice with egg, hot pot... the possibilities are endless!
Seriously, it goes super well with everything!!
All you have to do is to soak it in the special sauce♪
Please try to match it with many different things.
Once you try it, you'll want to keep it in your fridge all the time, it's so addictive😆

●丸鶏がらスープ:小さじ2
●創味シャンタン:小さじ1(ウェイパーでもOK)
●砂糖:小さじ1(ラカントとかにすればより糖質が抑えられます)
●豆板醤:小さじ1(コチュジャンでもOK)
●かつお粉:小さじ1~小さじ2
●鶏油もしくはごま油:お好み量
●水:約350ml(お湯と水合わせた量)
●お好みでブラックペッパー、ホワイトペッパー、小葱、ラー油
※味の濃さは350ml足した後に味見してからお好みに調整して下さい。
※辛みが苦手な方は豆板醤を味噌に変えてもOK
※鶏油は温度が低いと固まってしまうのでスープを冷蔵保存する場合や氷で冷やす場合は食べる直前にかけて下さい。(冷蔵で約1か月保存可能です)

たった3分で出来たと思えない深い旨味とコク、それなのに超あっさり、ヘルシーで毎日食べても飽きない、最高にやみつきなスープになってます。
これを食べた人全員にこんな美味しい素麺料理は食べた事がない…と何度も言われた、この夏オススメしたい自慢のレシピです♪
スープと素麺だけでも凄く美味しいですし、もちろん中華麺で食べても最高に美味しいです🤤
簡単過ぎるくらい簡単なので是非一度お試しください。
マジでラーメン屋さんに負けてないですよ♪
驚くほどウマすぎて、もはや飲み物ですw
時間がある場合は鶏ハム(サラダチキン)や鶏油も是非作ってみてね!
[Ingredients]
● Somen noodles: 200g
● Mirin: 2 tablespoons
● Soy sauce: 2 tablespoons
● Chicken broth: 2 teaspoons
● SOMI shantung: 1 teaspoon (you can also use Weipa)
● Sugar: 1 teaspoon (you can use lakanto to reduce the sugar content)
● Dou ban jiang: 1 teaspoon (gochujang is also okay)
● Bonito powder: 1 to 2 teaspoons
● Chicken oil or sesame oil: as desired
● Water: About 350ml (hot and cold water combined)
● Black pepper, white pepper, small green onion, Ra-yu to taste
※Taste after adding 350ml and adjust the taste to your liking.
※If you don't like the spiciness, you can replace Dou ban jiang with miso.
※Chicken oil hardens at low temperatures, so if you refrigerate it, pour it over the soup just before eating. (It can be refrigerated for about a month)

I made "Yamitsuki Mugen Soumen".
It has a deep flavor and richness that you can't believe it was made in just 3 minutes, yet it's super light, healthy, and the most addictive soup that you can eat every day and never get tired of.
This is a recipe that I am proud to recommend to everyone who has tried it, and I have been told many times that they have never had such a delicious somen dish♪
It tastes great with just the soup and somen, and of course it tastes great with Chinese noodles too.
It's too easy to make, so please give it a try.
It's really as good as a ramen restaurant♪
It's so amazingly good that it's almost like a drink lol
And if you have time, definitely try making some chicken ham (salad chicken) and chicken oil too!
