Tried this recipe out from @onceuponachef last night with my new oven from @brevilleaus.
Omg! You guys! Not joking! It is the best blue berry I have ever tasted! It is golden and crispy on the top but moist and soft inside!
It was my first attempt and I succeeded! Try this easy recipe out! You will be surprised!
【Ingredients】
2 cups all-purpose flour, spooned into measuring cup and leveled-off
2 teaspoons baking powder
3/4 teaspoon salt
1 stick (1/2 cup) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1-1/2 teaspoons vanilla extract
1/4 teaspoon almond extract (I didnt us it)
1/2 cup milk
2-1/4 cups fresh blueberries
2 tablespoons turbinado sugar (also called raw sugar or demerara sugar)
(I dont havt it so I just used white sugar and it tastes so good too!)
Non-stick cooking spray
12 paper muffin liners
【Steps】
1. Preheat the oven to 190 degree or 375 Fand line up the liner on the muffin tin and spray some non-stick cooking spray (I dont have it and I used coconut oil insteasd.)
2. Add all the dry ingredients flour, baking soda and salt into one bowl and mix them well.
3. In another bowl, mix the sugar and room temprature butterfor 2 minutes. Add the eggs one at a time and later on add vanilla extract and almond extract (if you have this) and mix them well.
4. Gradually add the flour mixure to the wet ingrdients bowl from step 3 and alternating with the milk. Beating on the low speed to combines. When the batter become very thick, its ready to mix with the blueberry. Use the spatyla to combine blueberry and the batter. Dont over mix it as you dont wan to squash your little treasure!
5. Scoop the batter evenly to the muffine tin. Sprinkle some turbinado sugar or white sugar on the top. Send them to the preheated oven to bake for 30 mins in 190 degree or 375F.

Made some guilts free muffins. They are high in protein & no added sugar.
🧁藍莓馬芬 (高蛋白、無糖)
想吃甜點又怕胖的,來~ 拿去,不用客氣!
然後對自己狠的可以不用加糖,我自己覺得不用加也很好吃,因為我的高蛋白乳清粉裡,已經是甜甜的香草口味了。
我用的高蛋白粉是這個牌子Urban Muscle
, 我跟陶先生用了10幾年了,是我們覺得市面上目前品質最好的乳清蛋白。🤍⭐️
💚作法Method
Preheat oven 180c. Mix all the dry ingredients first, then add all the wet ingredients. Lastly add blueberries.
烤箱預熱180度。然後基本上就是乾料先混合、再將濕料加進去。
💚以下份量可做6個, made 6 muffins
乾料(dry ingredients)
✔️coconut powder 1 cup
椰子粉(或杏仁粉)1量杯
✔️protein powder 50g
乳清蛋白粉50克
✔️2tsp baking powder
2茶匙天然蘇打粉
濕料(wet ingredients)
✔️2 eggs
2顆蛋
✔️1/4 cup of coconut oil
椰子油1/4量杯
✔️1.5~2 cup unsweetened almond milk
1.5~2量杯無糖杏仁奶(牛奶、豆漿、燕麥奶可)
最後加藍莓50克
Add blue berry about 50 g
180c 烤25~30分鐘。或根據你的烤箱狀況來做調整。

什莓燕麥鬆餅
食譜(4-5件):
燕麥 280 mL (1/2 即食+ 1/2 原片)
雞蛋1隻/亞麻籽粉 1tbsp + 植物奶3 tbsp
香蕉1隻 (全熟)
牛奶/植物奶 100mL
泡打粉 1 tsp
椰子糖 3 tsp (可調整)
香草精油 1 tsp
**180C 25-30 分鐘

Oats 280 mL (1/2 instant+ 1/2 rolled oat)
egg 1 medium/ flaxmeal 1tbsp + plant-based milk3 tbsp
banana 1 medium (ripe)
milk/ plant-based milk 100mL
baking powder 1 tsp
coconut sugar 3 tsp (adjustable)
vanilla extract 1 tsp
**180C 25-30 minutes

ぎっしりベリーが詰まったトップがかわいいミックスベリーケーキ!
ホットケーキミックスを使って混ぜるだけで簡単に作れます♪
見た目も華やかなのでおもてなしにぴったりです!
材料
(15cm丸型)
生地
・ホットケーキミックス 150g
・卵 2個
・砂糖 70g
・プレーンヨーグルト 100g
・サラダ油 40g
トップ
・冷凍ミックスベリー 200g
・砂糖 大さじ2
作り方
1. ボウルに卵と砂糖を入れて混ぜ、ヨーグルトとサラダ油を加えて混ぜる
2. よく混ざったらホットケーキミックスを加えて混ぜ生地を作る
3. 冷凍ミックスベリーにトップ用の砂糖をまんべんなくまぶす
4. 型にオーブンシートを敷き、砂糖をまぶした冷凍ミックスベリーを敷き詰める
5. 上に生地を流し、2,3回10cmくらいの高さから落として空気を抜く
6. 170℃に予熱したオーブンで50~55分焼き、粗熱が取れたら冷蔵庫で冷やし、ひっくり返したら完成!
