皮蛋鯪魚球粥
材料:
鯪魚肉半斤
白米大半膠嘜
皮蛋2隻
薑1小舊
蔥1棵
蝦米2湯匙
處理:
1. 白米,清水清洗乾淨。
2. 大火在煲內煲滾1.8升水。
3. 加入白米。
4. 滾起後,放一雙筷子在煲上,再冚煲蓋,轉慢火,繼續煲。
5. 蝦米,清水浸5分鐘。
6. 皮蛋,去殼,1開4。
7. 薑,切絲。
蔥,切細粒。
8. 蝦米已浸好,加入鯪魚肉內,再加入蔥粒。
9. 鯪魚肉調味:
a. 鹽少許
b. 生粉1湯匙
c. 鮑魚汁1茶匙
順一個方向攪至起膠。
烹調:
1. 粥已煲了一會,轉大火,順住一個方向攪拌,就會綿滑,它大滾起時,轉中火。
2. 如果見到粥稠厚,可加入適量滾水,繼續攪拌。
3. 轉慢火,加入鯪魚球及皮蛋。
4. 冚蓋,熄火,確保鯪魚肉內外都熟透。
5. 冚蓋,焗了1分鐘,再開大火,加入薑絲,繼續攪拌至大滾起,熄火。
6. 完成,可享用。
Dace balls porridge with century eggs
Ingredients:
Minced dace fish 0.5 catty
Plain rice 0.5 measure cup
Century eggs 2 Nos.
Ginger (small) 1 No.
Green onion 1 No.
Dried sea shrimps 2 tbsp
Preparation:
1. Plain rice, rinse with tap water.
2. Heat up water 1.8L at high flame in pot.
3. Put plain rice.
4. Put a pair of chopsticks on pot after porridge has been boiled up. Cover up the pot again. Turn to low flame. Continue cooking.
5. Dried sea shrimps, soak in tap water for 5 minutes.
6. Century eggs, remove shells. Divide each egg into 4 shares.
7. Ginger, get it shredded.
Green onion, dice in small cubes.
8. Dried sea shrimps, green onion cubes, mix with dace fish meat.
9. Season the dace fish:
a. Salt little
b. Tapioca starch 1 tbsp
c. Abalone sauce 1 tsp
Stir it in one direction until it is sticky.
Steps:
1. Porridge has been cooked for a while. Turn to high flame. Stir it in one direction, porridge will be silky and soft. Turn to medium flame after it boils up.
2. If you see the porridge is too thick, just add boiled~up water to adjust its thickness. Continue stirring.
3. Turn to low flame, put dace balls and century eggs.
4. Cover up the pot. Turn off fire. Make sure the dace balls have been totally cooked well.
5. Cover the pot, leave it for a minute. Turn to high flame, put shredded ginger. Continue stirring until the porridge has been totally boiled~up. Turn off fire.
6. Complete. Serve.

琉璃芡材料 Gravy ingredients:
一茶匙生粉加一湯匙清水 1tsp potato starch in 1tbsp water
兩茶匙生抽 2tsp soy sauce
一湯匙蠔油 1tbsp oyster sauce
一茶匙砂糖 1tsp sugar
四分一茶匙胡椒粉 1/4tsp ground pepper

鯪魚肉半斤
豆腐(大)1磚
冬菇仔10隻
粉絲6札

蔥1棵
乾蔥頭3粒
處理:
1. 冬菇仔,清水洗淨,加入清水在飯碗中,微波加熱2分鐘。
2. 魚嘴,沖洗乾淨,擎乾水。
3. 蔥,切段。
4. 薑,去皮,切片。
5. 粉絲,清水浸軟。
6. 鯪魚肉調味:
a. 生粉2茶匙
b. 鮑魚汁1/2茶匙
c. 油1/2茶匙
順一個方向攪勻至起膠。
7. 粉絲,已浸軟,沖洗乾淨,擎乾水。
烹調:
1. 大火在鑊中燒熱300毫升油。
2. 豆腐切塊,放鑊中。
3. 炸了2分鐘,反一反豆腐。
4. 豆腐兩面,炸至金黃色,夾上碟。
5. 鯪魚,做成一口魚球,放鑊中炸,2分鐘後,反一反。
6. 鯪魚球,炸至金黃色,夾上碟。
7. 魚嘴,用2湯匙生粉,撈勻。
8. 魚嘴,中慢火,慢炸,反一反。
9. 冬菇,已浸軟,切去椗。
10. 魚頭已炸好,夾起,放上碟。
11. 冬菇,走一走油,炸一炸,2分鐘,夾起。
12. 預備一個砂鍋或瓦煲。
13. 在鍋中加入1湯匙油。
14. 爆香薑片、蔥及乾蔥頭。
15. 加入冬菇一齊爆香。
16. 加入400毫升水。
17. 加入1茶匙鮑魚汁及1茶匙糖。
18. 滾起後,放魚頭吸收味道。
19. 加入1湯匙生抽。
20. 滾起後,加入粉絲。
21. 放魚頭、冬菇及豆腐在粉絲上,煮1分鐘。
22. 完成,加上蔥絲,可享用。
Claypot with fish heads:
Ingredients:
Carp head 2 Nos.
Minced dace fish 1/2 catty
Tofu (large) 1 cube
Mushrooms (small) 10 Nos.
Rice vermicelli 6 Nos.
Ginger 1 No.
Green onion 1 No.
Shallots 3 Nos.
Preparation:
1. Mushrooms, rinse with tap water in a rice bowl. Heat up with little water in microwave for 2 minutes.
2. Fish head, rinse thoroughly and hang dry.
3. Green onion, cut in equal lengths.
4. Ginger, peel and slice.
5. Rice vermicelli, soften in tap water.
6. Season the minced dace fish:
a. Tapioca starch 2 tsp
b. Abalone sauce 1/2 tsp
c. Oil 1/2 tsp
Mix well with one direction until it becomes sticky.
7. Rice vermicelli has been softly soaked. Rinse thoroughly and hang dry.
Steps:
1. Heat up 300ml oil at high flame in wok.
2. Cut tofu in small pieces. Put into wok.
3. Have already deep~fried for 2 minutes. Flip over tofu.
4. Once the two sides of tofu have been deep~fried to golden yellow, put on a plate.
5. Dace fish, make it in bite~sized balls. Deepfry them in wok. Flip them over after 2 minutes.
6. Dace fish balls, have already deep~fried into golden yellow. Put them on a plate.
7. Fish head, mix well with 2 tbsp tapioca starch.
8. Fish heads, deep~fry at medium~low flame. Flip them over if necessary.
9. Mushrooms have been soaked well. Cut off the anchors.
10. Fish heads have been deep-fried well. Put on plate.
11. Mushrooms, deep~fry for 2 minutes. Pick them up afterwards.
12. Get ready for a claypot.
13. Put 1 tbsp oil in claypot.
14. Fry ginger, green onion and shallots well.
15. Fry mushrooms well together.
16. Add 400ml water.
17. Add 1 tsp abalone sauce and 1 tsp of sugar.
18. Put fish heads after boils~up to absorb the sauce.
19. Add 1 tbsp light soya sauce.
20. Put rice vermicelli after boils~up.
21. Put fish heads, mushrooms and tofu on rice vermicelli. Cook for 1 minute.
22. Complete. Put shredded green onion on top. Serve.
