Happy TGIF! Today we feature one of the most popular fried rice, Yangzhou Fried Rice. You can literally find it at almost any ZiChar place in Singapore!
As the name suggests, it’s a dish which originated from the City of YangZhou in the Jiangsu Province. Over the years, YangZhou Fried Rice has evolved into many variations and you might ask what is the authentic version?
The essence of an authentic plate of YangZhou Fried Rice lies in the ingredients used.
The key ingredients are XuanWei ham, shrimps, eggs, mushrooms, peas as well as meat; either pork or chicken :)
In our video, we were unable to source for XuanWei ham :( Hence, we used the closest substitute, JinHua ham, which can be found in ShengSiong Supermarket!

If you have only been using your rice cooker to make plain white rice, you have not used it to its fullest potential. In fact, you can make a variety of simple one dish meals with it and some rice cookers even can let you bake cakes in them. If you're still using a normal old school rice cooker with only one function i.e. cook rice function, it's time to switch it out for something slightly more advanced or perhaps you can even consider switching to a multi-cooker that comes with pressure cooking function. Don't go just because you still own an old-school rice cooker. The good news is even though we have used a multi-cooker for this Glutinous Rice with Chicken recipe, you can also use your normal rice cooker to prepare this dish too. FYI Glutinous Rice with Chicken is also known as Lor Mai Gai or 糯米鸡 in Chinese. This is a super easy and delicious Chinese recipe. Happy cooking!

Ingredients:
Serves 3 - 4 pax
Marinated chicken & mushrooms
--------------
255g of skinless chicken thigh meat - cut into bite sizes
6 pieces of Chinese dried mushrooms - rehydrated & cut into halves
1/2 tablespoon of fresh ginger juice
2 tablespoons of light soy sauce
1 tablespoon of oyster sauce
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)
1 teaspoon of cornflour
1 teaspoon of sesame oil
A few dashes of white pepper
Other ingredients
--------
308g of glutinous rice (soak for at least 4 hours)
356ml of water
1 teaspoon of salt
A few dashes of white pepper
55g of Chinese sausage (remove casing)

Kanpai (乾杯) means "cheers" in Japanese!
Omurice is a fried rice wrapped with thin omelette. Usually, the rice is chicken rice (seasoned with ketchup) but you can use any kind of flavored rice (leftover is perfect!): Chinese-style fried rice, pilaf, Paella, etc...
In my tutorial, I used Chinese-style fried rice!
It can be a great father's day menu idea or a dish to surprise your honey ;D

Kanpai Omurice
Difficulty: Easy
Time: 20min
Number of servings: 1
Ingredients:
8oz. (225g) flavored rice of your choice
1 egg
2.5 sausage
cooking oil
ketchup
mayonnaise
Directions:
1. Cut one sausage diagonally to look like your thumb. And chop the other two to look like the rest of your fingers.
2. Beat 1 or 2 eggs in a bowl. Heat cooking oil in a pan and make a thin omelette. If you don't have a rectangle omelette pan, you can make a circle thin omelette and cut it later.
3. Remove the omelette and cook sausages.
4. Cut the longer side of the omelette to make a thin strip.
5. Place the flavored rice of your choice on the plate and shape it like a mug.
6. Cover the rice with the thin omelette and make a handle with the thin strip.
7. Place the sausages to look like holding the mug.
8. Draw the fingernails and the beer foam with mayonnaise.
9. Write a message with ketchup!
