∞食材有無限可能∞
生產過剩、追求口腹之慾的現代,產生了很多被丟棄的“邊角料”,不是不能吃也不是不好吃,而是擁有的選擇太多,所以有了浪費的資本。就如颱風前搶收的大量香蕉,有很多的廚師重視這個問題,想盡辦法融入料理中幫助蕉農減少損耗,但更多的是銷不出去只好全數丟棄。

The biggest challenge we are dealing with in the 21st century is that businesses, especially in the F&B industry, are over producing yet have no idea what to do with the overabundance of food.
Taiwan’s latest crisis was the overproduction of bananas— great weather led to bountiful harvest of bananas. Many restaurant chefs did their best to purchase as many bananas as they could; they even tried to incorporate bananas in their dishes, however, their efforts weren’t of much help to the banana wholesalers and many bananas were thrown out.

我們調酒師能做什麼?我知道很多調酒師已經在利用剩餘的食材,經過加工再製調味之後將其融入調酒中,但我這邊想說的是,那些跟本還沒被利用,沒有經過層層剝削、浪費、包裝來到消費者面前的那些直接被丟棄的資源,很少有人關心過這件事。
這是一杯以永續無限∞為概念的調酒,陳年8年蘭姆酒、最能代表台灣的地瓜、熬煮濃縮的柳橙汁、 自然沒有過度加工的蜂蜜,蛋黃帶來的綿密滑順,純樸的味道卻又帶給你微醺濃郁的味蕾體驗,低溫烘乾製成蝴蝶造型的地瓜薄片,含在口中慢慢散發地瓜香氣。
永遠不要為食材的變化劃下句點,它可以保持簡樸的原味,也可以變化得讓人驚艷,但首先,要能夠“看見”那些我們習以為常的一切。
致敬那些與食材一起奮鬥,以及為永續付出心力的人們。
So what can we do as bartenders?
It’s a known fact that many bartenders are starting to gain awareness of waste reduction by incorporating food scraps into their cocktails. However, the food which never came to the consumers after being wasted and being fleeced right and left is the core issue I want to mention. Few people know the fact.
The cocktail inherited the idea of “infinity”, symbolizing generational inheritance. In the cocktail, I carefully chose Bacardi’s 8 year old rum, Taiwan’s golden sweet potato, fresh orange juice reduction, organic honey, and egg yolk to bring out the smooth, simple, and rich flavors.
On top of the cocktail, I cut the sweet potatoes into thin slices which are the resemblance of butterflies. When you munch on the slices, the crispiness and the fragrance should slowly spread throughout your palettes.
Never place ingredients in boxes because they can be simple yet surprise you with their complexity. It’s my hope that everyone can begin to see what ingredients we’ve stereotyped in the past.
Cheers to the people who have fought the good food fight, with much respect to the people who have put their hearts and sweats into sustainable development.

*Definitely, I'm a vegetarian myself.
Her Thoughts about the Jangsem Monday cause:
*Its a great initiative ! It doesn't completely annihilate animal slaughter but its a step atleast, a great start indeed.
Her Thoughts about the importance of going meatless:
*I believe we don't have the right to own one's life. It's really simple actually, just try to put/imagine ourselves in those millions of helpless animal's shoes who suffer daily without ventilation, are mutilated, suffocated, made to reproduce countless times without their will or the power to stop it and ask ourselves, did they choose that life? No, "we" did.
Vegetarian or vegan:
*I am a vegetarian. I turned two years ago. An online video had caught my attention and it was 49 mins long. I watched it entirely and to my horror, it really broke my heart watching how all these animals were being treated. Mother cows having their calves snatched away from them. Tears were literally pouring out. Piglets squealing and beaten to death. I couldn't stand the thought of consuming meat again after that.
the Benefits of going meatless:
*I've never felt better ! I've learnt to cook vegetables so many ways that I sometimes have 5 meals a day. Potatoes ! God I love potatoes. I have them at least six times a week.
*Firstly I believe there are lower risks of getting diseases such as heart diseases, arthritis, diabetes, acne and so on. There are endless health benefits to be honest. Having a control on our cholesterol levels, maintaining our diet in a healthy manner, even with our weight control and there's just so much more...
I even read it helps with keeping our skin young. Don't know how far that's true but sounds delightful to me. Hell even Miley Cyrus is a vegetarian and I love her skin ! Although I must agree at a certain level, I used to suffer a lot from acne but now it has definitely toned down and I don't even use any special products to control it. (I follow a lot of vegetarian pages online and their articles are just wonderful)
Her Favorite veggies, veggie dish and fruits:
*Any vegetables with cheese is heaven for me. I just throw in some veggies in the pan, fry them and add some cheese later on and that's more than enough to make me gobble them with two bowls of rice.
I loveeeee grapes, papaya, pineapple, peach, guavas and mangoes.
Her Favorite animals: Domestic or wild.
*Dogs, cats, donkeys, owls, dolphins and chimpanzees.
Her beliefs or your motto in life:
*Hmm.. I believe in all the good things, of course there'll always be things that are bad as well, but that is the way of life. We couldn't survive with just good in the world. How we face it is the real challenge. And I believe in change, although I am, a little bit conservative but yes I do believe in change for the good.
My motto in life is to live each day to the fullest, well not everyday everyday, sometimes I tend to oversleep but you know what I mean:p
Some days can get really hard at times but not giving up and pushing myself to the limit have been the best decisions I've made up until now.
As for my work, my objective is to make people laugh in some sort of way, or smile at the very least through the content I make. And when it does, it makes me happy, its just that feeling I can't describe. It's overwhelming and pushes me to do more.
And my dream includes living in a home where I can raise a cow, two hens, one dog, a cat or two and two pigs :D Something I intend to do in the future.
Her message to everyone on going meatless:
*Well, I wouldn't praise you that's for sure. Just because we're vegetarian we shouldn't be proud about it cause' there really is nothing to be proud about. All these animals deserve to live as much as we do. We have no right whatsoever to have them on our plates despite what we pay. We are as much responsible for the slaughter of these helpless animals as the people who slaughter them.
We demand, thus they slaughter, the only difference is we don't want to get blood on our hands.
The only regret I have is not having to realize this sooner and turned meatless. Over the past two years I'd say I have avoided consuming atleast 300 hens, 15 cows, 4 pigs (rough calculation) given that I used to have two mcspicy chicken every time I visited McDonalds/KFC before this:p
Again I don't intend to impose my thoughts and beliefs on you. Whether you go meatless or not, it's solely up to you, it's YOUR CHOICE. You have to make that on your own rather than people telling you what to do. I hate that as well. But please, please don't say/write "you love animals" and then have another one on your plate.

My secret of six-packs shortcuts = There are no shortcuts to get visible six-packs!
Visible abs are not only made from thousands of sit-ups but thousands & thousands of additional calories expenditure!
You have to do resistance and cardio training to melt those fats and build lean muscle tissue to get those packs pop'ed!
The most important of getting visible abs is to watch what you put into your body, spending most of your time in kitchen cooking your own meal because how often can you eat healthy outside? (especially here in Malaysia)
Eating your own prepared foods may sounds crazy to many. But if it's easy, it's no longer valuable!
So are you still interested of getting six-packs? Read on if yes.
A general diet for getting lean are combinations of Protein, Carbs, and Fats, diet ratio of P40: C40: F20 is a good start of getting rip!
You need Protein from lean poultry and meat to build lean muscle tissue.
Good clean energy to train hard and recover well from complex carbohydrates.
A little consumption of healthy Fats for better fat burning and cardiovascular health.
Plenty of fibers for better food fat burning effect, and drink plenty of water to flush out byproducts of fat burning.
My Food List (even if f you're eating out, try to eat these)
Protein: Chicken Breast, Egg Whites, Fish & Lean Beef
Complex Carbs: Sweet Potatoes, Brown rice, Wholewheat Pasta, Oatmeal
Fats: Olive, Raw Nuts, Avocado
Fibers: Broccoli, Cauliflowers, Lettuce, and etc
Beverage: Plain Green Tea and Plain Water
Training
I do 3-5 times of weight training preferably compound exercises on high intensity (8-12 rep range with 90secs rest in between).
3-5 times a week of Cardio training, it can be high intensity but shorter duration of training or the opposite.
Tips: Cardio training can be boring, we want consistency of work for over time results so I strongly suggest you to do something that you like such as cycling, sprints, body pump/combat, steppers and etc.
Being consistent with all above, I guarantee you will build lean muscles and burn thousands & thousands of calories over the time.

香港的彌敦道全長是3.6公里,這裏1丁目至7丁目的長度是2.6公里, The total length of Nathan Road in HK is 3.6 km, here the length from section 1 to7 is 2.6 km
相等於三分之二的彌敦道那麼長啦, 來這裏吃、買、玩交通相當方便 which is 2/3 long of Nathan Rd, is quite convenient to come eat, buy, and play for transportation
因為由天神1至7町目,橫跨了三個地鐵站 Because there are 3 subway stations are crossed from Tenjin sections 1 to 7
分別是「南森町駅」、「扇町駅 」和「天神橋筋六町目駅」,
有多達800間店鋪,當中包括餐廳、藥妝、衣服、 U to 800 shops including restaurants, cosmeceuticals n clothes,

Most of the diet plan out there focuses on weight loss, but there are quite a number of you who has been requesting for a WEIGHT GAIN meal plan. The truth is, gaining weight can be more challenging compared to lose weight.
The 1st rule is you need to eat A LOT more than what you're currently consuming. But that doesn't mean you should be eating junk food because your body needs proper nutrient to grow your muscles in a healthy way.
An average female needs between 1600 - 2000Cals a day to maintain her weight. To gain weight, you need between 2000 - 3000Cals a day depending on your body composition & activity level. I've put together this meal plan which is above 2000Cals.

BREAKFAST - Overnight Oats (serves 3)
1) 1½ cups Rolled Oat
2) 1½ cup Whole Fat Milk
3) 2 tbsp. Peanut Butter
4) ¼ cup Goji Berries
5) 1½ tbsps. Chia Seeds
6) 3 medium Bananas
Per Serving: 490Cals, 74.7g Carbs, 17.2g Protein, 15.4g Fat
Steps:
1) In a bowl, mix oats, milk, peanut butter, goji berries and chia seeds together.
2) Transfer the oat mixture equally into 3 separate jars.
3) Place the jars in the fridge overnight.
4) The next morning, top it up with banana.

LUNCH - Salmon Spinach Frittata (serves 3)
1) 9oz (255g) Raw Salmon
2) 225g Frozen Baby Spinach
3) 6 large Eggs
4) ½ cup Cherry Tomatoes
5) 1 Bell Pepper
6) 1 medium Onion
7) ½ tbsp. Olive Oil
8) 60g Grated Parmesan Cheese
9) 200g Sweet Potatoes
10) 1.5 Avocado
11) Salt and Pepper to taste
Per Serving: 694Cals, 33.2g Carbs, 45.5g Protein, 44.8g Fat
Steps:
1) Pre-heat the oven to 180 Celsius / 350 Fahrenheit.
2) Cubed the salmon fillet and chop up all the vegetables.
3) Add oil into a pan and cook the onion until fragrant and lightly brown.
4) Add in the salmon fillet and cook until slightly pink.
5) Then add in the frozen spinach and allow it to cook for 3 - 4 minutes.
6) In the meantime, in a separate pan, boil the sweet potatoes until soft.
7) Once the spinach has thawed, add in the cherry tomatoes and bell peppers and allow all the ingredients to cook for another 2 - 3 minutes.
8) Transfer into a square baking dish.
9) In a bowl, whisk all the eggs.
10) The pour the eggs onto the mixed ingredients until its fully covered.
11) Sprinkle some grated cheese all over the dish.
12) Bake it for 30 minutes until the egg is firm and fully cooked through.
13) Serve it with the boiled sweet potato as well as half an avocado.

DINNER - Black Bean, Coconut & Rice (serves 3)
1) 1 can (240g) Black Beans, washed & drained
2) 200ml Coconut Milk
3) 2 Potatoes, cubed
4) 2 large Carrots, cubed
5) 2 large tomatoes, roughly chopped
6) 1 Onion, chopped
7) 1 Bell Pepper, chopped
8) 1 Garlic Cloves, minced
9) 1 tsp. Mixed Herbs
10) 1 tsp. Ground Cumin
11) ¼ tsp. Ground Cinnamon
12) ½ tsp. Salt
13) 2 - 3 cups hot water
Steps:
1) Chop up all the vegetables.
2) In a large pot, cook the garlic until fragrant and golden brown.
3) Then add in all the vegetables and herbs & spices.
4) Pour the coconut milk and water and mix through.
5) Close the lid and let it cook for 20-25 minutes until all the ingredients are tender and cooked through.
6) Serve it with 1 cup of rice.
Per Serving – 588Cals, 94.8g Carbs, 15g Protein, 18.4g Fat

SNACKS (twice daily)

This video will show you how to make a tofu using soy milk and gelatin. Adding creamed corn makes the tofu really aromatic and appetizing. It is something similar to drinking Korean corn tea ;)
This is NOT a dessert!
Maybe you can make this on April Fools' Day, though. hehe
Last weekend, my darling and I were invited to a cooking school at a restaurant in Tokyo.

We learned 3 dishes (blueberry cocktail, salt simmered pork and potatoes, and sudachi (citrus) soba. We tasted all the dishes at the end of the class. Then the chef also served us corn tofu, which was just my kind of food!!! I asked the chef what he used and he said he grated the corn in the mixer with soymilk and used gelatin to firm up. I was totally inspired by that recipe and used canned creamed corn instead and it worked out amazingly XD
So here is the recipe!!!
BTW, do you go to cooking school? Me? I never paid to learn how to cook. But I was invited to many free classes in the past and they all inspired me to cook something new!!! So, I think it is nice to attend a cooking class once in a while for a change but I just can't pay for such an experience because I already have too many ideas!!!

Corn Tofu
Difficulty: Very Easy
Time: 10min + 1-2hrs refrigeration time
Number of servings: 4-5
Ingredients:
200ml unflavored soymilk
60ml canned sweet corn cream style
5g (0.18oz.) unflavored gelatin
2 tbsp. water
Kamada Dashi Shoyu or regular soy sauce
Directions:
1. In a saucepan, mix soymilk and creamed corn. Put on low heat and warm them up to body temperature (do not boil). Then remove from the heat.
2. Put unflavored gelatin in 2 tbsp. water and mix well (allow the gelatin to absorb the water). Microwave at 500w for 20-30sec and mix well. *Please follow the instructions on the package of your gelatin.
3. Add 2. in 1. and mix well.
4. Pour the mixture into pudding cups or containers of your choice and let them firm up in the fridge for 1-2hrs.
5. Serve with a dash of Kamada Dashi Shoyu or regular soy sauce.
