有些女生為了減肥,視油脂為大敵,自煮時不添加油份,外出進食亦「走油」,以為這種飲食方法很健康,但久久未能成孕,最後發現原來因為飲食中缺少了油脂!膽固醇是合成多種荷爾蒙的重要原料,如果油脂攝取不足容易影響荷爾蒙分泌,造成不孕,所以不應盲目「走油」,宜認識哪些為健康油脂適量攝取,哪些壞油應該避免食用,市面上見到的油脂各有優缺點,最好是在家中常備2至3種油脂,每星期輪流使用或按烹調方式選擇。
飽和脂肪酸:室溫時呈白色固體狀態,常見於豬油、牛油、動物性脂肪、芝士、忌廉、椰子油、棕櫚油等。
優點:化學性質穩定,不易氧化變質。
缺點:過量進食較容易患上血管硬化、中風、心臟病等疾病風險。
適合用法:高溫且長時間烹煮的菜式
單元不飽和脂肪:室溫時呈液體狀態,常見於橄欖油、苦茶油、花生油、堅果、牛油果。
優點:含有Omega-9,有助提高好膽固醇及降低壞膽固醇。
缺點:化學性質不穩定,容易受高溫影響產生氧化。
適合用法:涼拌、低溫快炒
多元不飽和脂肪:室溫時呈液體狀態,常見於粟米油、芝麻油、葵花油、亞麻籽油、菜籽油、大豆油、核桃油、三文魚、沙甸魚等。
優點:含有人體無法自製的Omega-3及Omega-6,同時提高好膽固醇及降低壞膽固醇。
缺點:化學性質不穩定,容易受高溫影響產生氧化。
適合用法:一般煎炒菜式
反式脂肪:植物油經過氫化程序會轉化成反式脂肪,常見於人造牛油、起酥油(Shortening)。
優點:沒有
缺點:令血液中的壞膽固醇上升,同時降低好膽固醇,過量進食有增加患上血管硬化、中風、心臟病等疾病風險。

Get to know healthy high-fat foods
Some women view fats as their archnemesis when they wish to shed some pounds. They would either avoid using oil in their cooking or request restaurants to remove additional fats when ordering take-outs. They thought this is a healthy dietary practice, but the lack of fats in the body is one of the main reasons they cannot get pregnant!
In fact, cholesterol is the precursor of many hormones. The lack of fats in the body would affect the secretion of hormones, leading to infertility. We should learn more about healthy fats, consume them in an appropriate quantity, and avoid fats that are bad for us. There are many types of fats and oils in the market, and each of them has their own pros and cons. It is best to prepare 2 to 3 different types of oils and use them interchangeably in cooking from time to time.
Saturated fatty acids: in white solid state at room temperature; can be found in lard, butter, animal fats, cheese, cream, coconut oil, and palm oil
Pros: chemically stable, not easily oxidized
Cons: excessive consumption can cause the hardening of the arteries (vascular sclerosis), stroke, and heart diseases
Proper way of use: dishes to be cooked at high temperature and for a long period
Monounsaturated fatty acids: liquid at room temperature; often seen in olive oil, camellia seed oil, peanut oil, nuts, and avocado
Pros: contains Omega-9; can help increase the good cholesterols and reduce the bad cholesterol
Cons: chemically unstable, oxidized easily when exposed to high temperature
Proper way of use: cold dishes, and can be used for frying at low temperature
Polyunsaturated fatty acids: liquid at room temperature, commonly found in corn oil, sesame oil, sunflower oil, linseed oil, rapeseed oil, soybean oil, walnut oil, salmon, and sardine
Pros: contains Omega-3 and Omega-6, which humans could not produce; can help increase the good cholesterols and reduce the bad cholesterol
Cons: chemically unstable, oxidized easily when exposed to high temperature
Proper way of use: normal pan-fried dishes
Trans-fatty acids: vegetable oils that have gone through hydrogenation; often seen in margarine and shortening
Pros: none
Cons: increase the bad cholesterol and reduce the good cholesterol in the blood; excessive consumption can cause the hardening of the arteries (vascular sclerosis), stroke, and heart diseases
Common foods that contain trans-fatty acids: Egg tart, cookies, puff pastries, cakes, biscuits, coconut cream bun, fried chicken, pineapple bun, Chinese fried dough and creamer

[揚げ餅]
●餅適量
●米油(普通のサラダ油でもOK)
[八宝菜(海鮮餡かけソース)]
●にんじん:1本
●椎茸:4個
●うずらの卵適量
●キクラゲ適量
●白菜:1/4個
●冷凍えび適量
●冷凍いか適量
お酒、片栗粉(海鮮の下処理用)
●豚バラ肉:約300g
塩コショウ、片栗粉、お酒(豚の下処理用)
●海鮮味覇:大さじ1(味覇、創味シャンタンでもOK)
●オイスターソース:大さじ1
●醤油:25ml
●お酒:50ml
●水:約400ml
●水溶き片栗粉適量
●黒コショウ
●ごま油
お好みで最後にごま油少々入れると香りが引き立ちます。
味変でお酢を入れてもさっぱりしてとても美味しいです。
※海鮮味覇を使わない場合は最後に味見をして砂糖少々、醤油をお好みで足してあげて下さい。

こうちゃんの新年一発目の料理『香ばし揚げ餅の海鮮餡かけ』作りました。
揚げたお餅から海鮮おこげのような芳ばしい香りがしてきて
それだけでとても食欲そそります。
そこに旨みたっぷりの海鮮餡かけをかけるともう言葉にならない美味しさに…。
揚げたお餅に海鮮餡かけソースが良くからんでめちゃくちゃ旨いです。
色んな食感もあってお口の中も最後までずっと楽しいですよ♪
お餅が余ってなくても絶対食べたくなる逸品だと思います。
作り方もとても簡単なので是非作ってみて下さい。
【Ingredients】(serves 4~6 people)
[Deep Fried Mochi]
● Mochi: as much as you like
● Rice oil (you can use normal vegetable oil instead)
[Happosai (Seafood in starchy sauce)]
● Carrot: 1 whole
● Shiitake: 4 mushrooms
● Quail eggs: as many as you like
● Wood ear mushroom: as much as you like
● Chinese cabbage: 1/4 of one head
● Frozen shrimps: as much as you like
● Frozen squid: as much as you like
Sake, potato starch (to pretreat the seafood)
● Pork belly: about 300g
Salt and pepper, potato starch, sake (to pretreat the pork)
● Seafood weipa:1 tbsp (you can use weipa or soaji shantung instead)
● Oyster sauce: 1 tbsp
● Soy sauce: 25ml
● Sake: 50ml
● Water: about 400ml
● Potato starch: as much as you like
● Black pepper
● Sesame oil
If you add a little bit of sesame oil at the end as seasoning, you can
accentuate the aroma of the dish.
You can also flavor with vinegar. It is delicious and gives the dish a
refreshing taste.
※If you do not use seafood weipa, please add a little sugar and soy
sauce to taste.

Kailan (also known as Gai Lan / Kai Lan / Chinese Broccolli / Chinese Kale) is one of my favourite types of vegetables. The kailan we used in this recipe is baby kailan, which is slightly different from the usual ones. I personally prefer baby kailan more than the classic ones because I like the texture better. Instead of the usual stir fry, (which by the way, you can use it to fry any types of vegetables), Roland added some air-fried crispy pork belly to give this recipe more variety.

Ingredients:
Serves 4 pax
Pork belly
------
1L of water
1 cinnamon stick
2 star anise
3 bay leaves
2 tablespoon of salt
2 tablespoon of dark soy sauce
1 stalk of spring onion
300g of pork belly (cut in 1cm thick)
Air fry pork belly at 150C for 5 mins then turn the temperature up to 200C and air fry for 7 or 10 mins - depending on the thickness of your pork. Flip the pork to the other side on the half-way mark of the 7 or 10 mins.
Other ingredients
(use this part of the recipe to fry any vegetables in Chinese style)
--------
5 thinly sliced young ginger
5 cloves of chopped garlic
2 tablespoon of oyster sauce
1 tablespoon of fish sauce
1/2 teaspoon of sugar
300g of baby kailan or your favourite vegetables
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)

材料 (直径5㎝ × 約6個分)
≪米粉ドーナツ生地≫
米粉 20g
アーモンドパウダー 35g
ベーキングパウダー 2g
きび砂糖 35g
卵(Мサイズ) 1個
バター 25g
菜種油 20g
はちみつ 5g
≪コーティングチョコレート≫
チョコレート 60g
※お好きなチョコレートでも可
サラダ油 5g
【米粉ドーナツを作る】
①オーブンを180度に予熱しておく。
型にサラダ油(分量外)を塗っておく。
②バターを電子レンジ600w20秒程度加熱して溶かす。
③菜種油を加えてよく混ぜる。
④卵をブレンダーで混ぜ、きび砂糖を数回に分けて加えながら
白っぽくふんわりするまでよく混ぜる。
⑤はちみつを加える。
⑥米粉、アーモンドパウダー、ベーキングパウダーを合わせてふるい入れて混ぜる。
⑦③のバター菜種油を加えて混ぜる。
⑧絞り出し袋に生地を詰めて、型に絞り出す。
⑨180度オーブンで約12分焼成する。
★オーブンによって若干の差があるので様子を見ながら。
⑩焼きあがったら型から取り出し、あら熱をとる。
【コーティングチョコレートを作る。】
①チョコレートを刻んで湯煎で溶かす。
②サラダ油を加えてよく混ぜ合わせる。
【仕上げ】
①ドーナツにコーティングチョコレートをつける。
★手でもいいですし、動画のようにフォークでやるとやりやすいです。
②お好みのトッピングをする。

Today we will make a kind of sweets called “Glutenfree! Rice Donut”.
It is made by rice and almond powder,
and is a kind of donut which have very soft taste.
This kind of donuts are made by glutenfreediet and need NO frying,
so you can take a lot of them without boggle.
Also we decorate the sweet by seasonal strawberry.

Recipe (diameter 5㎝ × about 6)
≪Rice donut rough≫
rice 20g
almond powder 35g
baking powder 2g
cane sugar 35g
egg(М size) 1
butter 25g
Vegetable seed Oil 20g
honey 5g
≪Coating chocolate≫
chocolate 60g
※you can use any kind which you like
Salad Oil 5g
【Rice donut recipe】
①Pre-heat the oven to 180°C.
Spread the salad oil on the cake pan as you like.
②Heat the butter by microwave for 20sec 600w.
③Add the vegetable seed oil and mix them.
④Mix the egg by blender, than add cane sugar in several times,
until it turns to be whitish and soft.
⑤Add the honey.
⑥Shake and mix the rice, almond powder, baking powder, then add in.
⑦Add③ butter vegetable seed oil.
⑧Put the rough into the pastry bag, then decorate into the cake pan.
⑨Bake in the oven for about 12 minutes on 180°C.
★Different oven should have a different baking time,
please pay lots of attentions on the first time.
⑩Take it out from the cake pan and cool down.
【Coating chocolate recipe】
①Break up the chocolate and steam for melting.
②Add salad oil and mix.
【Finish】
①Decorate the coating chocolate on the donut.
★you can do it by your hand or a fork.
②Decorate the donut with any food you like.
