▋Introduction
#曼食慢语 不知道小伙伴们是怎么感受四时的，其实在我们厨娘眼里，四季的流转就是各种食材上市下市上市下市的轮回。最近刚好正是羊肚菌上市的季节，相信云南那边的小伙伴们已经开始以各种姿势吃吃吃了。虽然不在云南，但是好食材是可以空运的呀~所以我做了一道很香很香的羊肚菌焖饭，酱汁包裹着米饭，还有羊肚菌特有的浓郁香味，光是闻一下口水就止不住地涌出来。
▋Ingredients
[Steam rice with Morel mushrooms]
3 cup rice
3 sausages
80g bacon
6 morel mushrooms
some baby pak choi
1 egg
1 clove of garlic
salt
[Steam rice with poussin]
3 cup rice
300g poussin
small piece of ginger
pinch of white pepper
6 morel mushrooms

1 clove of garlic
2 tbsp shaoxing wine
2 tbsp potato starch
salt
[Sauce]
1 tbsp dark soy sauce
2 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp sugar
50ml water
羊肚菌焖饭:
米3杯
腊肠3根
腊肉一块约80g
羊肚菌6个
菜心一把
鸡蛋一个
蒜头一瓣
盐适量
滑鸡焖饭：
米3杯
仔鸡半只约300g
姜一小块
白胡椒粉一小撮
羊肚菌6个
菜心一把
蒜一瓣
料酒2大勺
土豆淀粉2大勺
盐适量
煲仔饭酱油：
老抽一大勺
生抽2大勺
蚝油一大勺
糖一小勺
清水50ml

今次整個非常簡單嘅燒春雞，用檸檬同香草焗，又香又開胃，出面成日都有得食，非常common! 注意，由於上次海南雞有人話我斬雞斬得差，我今次專登掉轉打開隻雞，做個錯誤示範再比位佢入，記得咪掂個胸，如果唔喺隻雞唔會放過你 LOL.
A very simple roast bird recipe, we are using poussins this time with lemon and herbs. Appetising and tasty as well. As I’ve got a comment complaining that I couldn’t chop the chicken properly, to take on the piss, I will do the spatchcocking the other way round. Remember not to touch the chicken breast, work on the spine.
材料：
春雞 2隻
橄欖油 2湯匙
蒜頭 4粒
洋蔥 1個
百里香 4條
檸檬 半個
紅蘿蔔 半條
車里茄 （可選） 適量
鹽
黑胡椒粉
甜椒粉 3茶匙
牛至 2茶匙

lemon 1/2 pc
carrot 1/2 pc
cherry tomatoes (optional)
