It is very interesting that we(Hong Kong people) always named a dish with a foreign country name. The Russian Beef dish indeed has no linkage with Russian at all. It is 100% old Hong Kong Style cuisine from 1950s.
It was made from beef slice, different bell pepper slice, cucumber pickles slices and rich brown sauce made from soy sauce , tomato paste and beef broth . I always love this dish when I was a little girl. This is one of my favourite including the baked pork rice and minced beef rice. I ordered them in turns when I visited the old Hong Kong style Western Cafe during my childhood. Nowadays, now many Hong Kong tea rooms still have this dish in their menu. Therefore, I would like to recreate this recipe to share with all of you. It is worth to preserve such recipes and also our food culture of Hong Kong.
Russian Beef with Rice (old Hong Kong Style)
1 onion
3 clove garlic
1 bell pepper
1/2 green bell pepper
2 pickled cucumber
1 sirloin steak
3-4tbsp flour
Seasoning:
1tbsp soy sauce
1/2tbsp sugar
1/2tbsp potato starch
1tbsp oil
2-3tbsp water
俄國牛柳絲飯 材料:
洋蔥 1個
蒜 3粒
紅甜椒 1個
青甜椒 ½個
酸青瓜 2條
西冷扒 1塊
麵粉 3-4湯匙
調味:
生抽 1湯匙
糖 ½湯匙
生粉 ½湯匙
油 1湯匙
水 2-3湯匙
牛肉湯粒 2粒
水 400毫升

春のおすすめ!新玉ねぎを使ったレシピのご紹介です!
新玉ねぎは、水分が多く玉ねぎ独特の辛みが少なくて甘味が多いことが特徴です。
今回は、新玉ねぎの中身をくり抜いて中にハンバーグの具材を詰めたオニオンバーグのレシピです!
新玉ねぎは火を通すとより甘味が増して、お肉との相性抜群♡
トマトベースで煮込んであっさり仕上げました♪
旬の新玉ねぎを使って、ぜひ作ってみてくださいね!
オニオンバーグ
2人分
材料:
新玉ねぎ 2個
薄力粉 大さじ1/2
豚ひき肉 100g
●パン粉・牛乳 各大さじ1
●ベーコン 1枚
●塩 小さじ1
●コショウ 適量
スライスチーズ 1枚
オリーブオイル 大さじ1
ミニトマト 6個
コンソメキューブ 2個
ローリエ 1枚
水 2カップ
白ワイン 50ml
作り方:
1.新玉ねぎの皮をむき、ヘタと上の部分は切り落とし、くりぬき器やスプーンを使って中をくりぬき、器のようにしたら内側に薄力粉をはたく。
ベーコンもみじん切りにして準備しておき、パン粉も牛乳に浸して準備する。
2.1でくり抜いた玉ねぎはみじん切りにしてボウルに入れ、●の材料も全て入れて粘りが出るまでしっかり手でこねる。
3.2を(1)の玉ねぎの中にきっちりと詰めて、真ん中あたりにスライスチーズを丸めて仕込み、上からまた(2)を詰めて蓋をする。
4.フライパンにオリーブオイルを熱し、玉ねぎの肉の面を焼き色が着くまで焼き、白ワインを入れてアルコールを飛ばす。
※(3)の肉ダネが玉ねぎに入り切らなければ肉団子にして一緒に表面を焼き一緒に煮込む。
5.鍋に(4)の玉ねぎと白ワインも残らず入れ、プチトマトを加えて水とコンソメキューブ、ローリエを入れて中火で20分程煮込み(途中で灰汁をとる)、塩こしょうで味を整える。玉ねぎが柔らかくなれば完成!
Stuffed Onion Stew
Servings: 2
INGREDIENTS
2 Sweet onions
1/2 tbsp Cake flour
100g Minced pork
1 tablespoon Bread crumbs,
1 tablespoon Milk
1 slice Bacon
1 teaspoon Salt
Pepper
1 slice Melting cheese
1 tablespoon Olive oil
6 Mini tomatoes
2 Consomme cubes
1 Bay leaf
2 cups Water
50ml White wine
PREPARATION
1. Peel the onion, cut off the top and root head, hollow out the inside with a melon baller or spoon, sprinkle the inside with flour to coat the interior. Soak the breadcrumbs in milk.
2. Finely chop the inside of the onions that were removed on step 1, and mix them in a bowl along with the minced meat, milk soaked bread crumbs, bacon, salt and pepper, knead them well with your hand until the mixture is sticky.
3. Into the hollow onions pack the meat mixture about halfway, roll a slice of cheese and place it inside the onion and cover it with more meat, make sure it is tightly packed..
4. Heat olive oil in a frying pan, palace the onions in the pan with the meat side down. when browned add the white wine and cook until the alcohol smell is gone.
5. Transfer the onions and wine into a pot, add the mini tomatoes, water, consomme cubes, and bay leaf. Simmer on medium heat for about 20 min without cover, season with salt and pepper and you are done!
6. Enjoy!

ซุปเต้าหู้อ่อนสไตล์เกาหลีที่ประยุกต์มาจากเมนูโด่งดังตามกระแสความนิยมของละครเกาหลี สูตรนี้ใช้เบคอนแทนหมูสามชั้นสไลด์ และพาพริกาแทนพริกป่นเกาหลี
เบคอน 200 กรัม
กระเทียม (สับ) 2 กลีบ
งาขาว 1 ช้อนโต๊ะ
โคชูจัง 1 ช้อนโต๊ะ
พาพริกา ½ ช้อนโต๊ะ
กิมจิ 150 กรัม
น้ำสะอาด 600 มิลลิลิตร
เต้าหู้อ่อน (หั่นบาง) 1 ก้อน
เห็ดเข็มทอง 70 กรัม
ต้นกระเทียม (ซอย) 50 กรัม + ตกแต่ง
ไข่ไก่ 1 ฟอง
น้ำมันงา 2 ช้อนโต๊ะ
พริกชี้ฟ้าแดง (หั่นแฉลบ) ตกแต่ง
1. รวนเบคอนจนน้ำมันออกมา กรองน้ำมันส่วนเกินออกใส่กระเทียมสับ และงาขาวลงไป
2. พอกระเทียมสุกและหอม ใส่โคชูจัง และพาพริกาลงไปผัด ตามด้วยกิมจิ
3. เติมน้ำสะอาด พอเดือด ใส่เต้าหู้อ่อน เห็ดเข็มทอง และต้นกระเทียม
4. พอส่วนผสมเดือดอีกครั้ง ใส่ไข่ไก่ และน้ำมันงา โรยพริกชี้ฟ้าและต้นกระเทียมซอย พร้อมเสิร์ฟ
Boss’s Silken Tofu Soup
It might not be the exact recipe that boss Park Saeroyi made in Itaewon Class. Still, we guarantee that it is delicious and fulfilling!
Bacon 200 g
Garlic (minced) 2 cloves
Sesame Seed 1 tbsp
Gochujang 1 tbsp
Paprika ½ tbsp
Kimchi 150 g
Water 600 ml
Silken Tofu (sliced) 1 block
Enoki Mushroom 70 g
Leek (sliced) 50 g + garnish
Egg 1
Sesame Oil 2 tbsp
Red Chilli (diagonal sliced) garnish
1. Cook bacon in the pan and strain excess oil out, add garlic and sesame, cook until fragrant.
2. Add gochujang, paprika and kimchi. Stir to combine.
3. Add water and bring it to the boil before adding silken tofu, enoki and leek.
4. When stew come to the boil, add egg and sesame oil. Remove from the heat, garnish with red chillies and leek before serve.
