Lai Yee's Kitchen - Mel's Nasi Kerabu Ikan :
I love Nasi Kerabu for the refreshing green and all those salted flavours together. It is basically a rice salad. It is quite a messy dish but super appetizing. It comes from Kelantan. Basically, what you're eating is a very healthy herb and rice meal with the addition of grilled chicken or fish. Nasi Kerabu is made up of a few components, each prepared separately and assembled on a plate right before serving. There is the blue rice, a fried fish sambal, a herb salad and assorted accompaniments such as salted egg, fish crackers and winged bean. The fish sambal is made up of deep fried cencaru fish that has been deboned and flaked, crispy Geragau shrimp and toasty grated coconut, all bound together by a spicy sambal mix.
Ingredients for 10 pax:
* Kerabu Rice:
. 4 cups rice
. 18g dried blue pea flower
. 2.5 litres hot water
. 3 stalk lemongrass
. 5 kaffir leaves
. 50g crushed ginger
*Cencaru Fish Sambal :
. 2 cencaru fish
. Oil for deep fry
*Rempah:
. 3 tbsp oil
. 1 big onion
. 1 whole garlic
. 1 tbsp toasted belacan
. 1 lemongrass
. 100g toasted grated coconut (roughly pounded)
. 8 tbsp dried fried crispy Geragau shrimp (roughly pounded)
. 1tbsp sugar
. 1 tsp salt
* Sambal:
. 10 presoaked dried chilies
. 1 whole garlic
. 1 whole Onion
. 2 tbsp Belacan
. 3-5 tbsp sugar
. oil
. 1cup Tamarind juice
* Accompaniments:
. 5 cups fresh bean sprouts
. 6 stalks thinly sliced laksa leaves
. 2 stalks thinly sliced torch ginger flower
. 5 stalks thinly sliced lemongrass
. 2 finely sliced turmeric leaves
. 10 pcs four angle beans (thinly sliced)
. 1 shredded cucumber
. 5 Salted Duck Egg (I made my own, for recipe, check my ICTV video)
. Some Fish crackers
. 2 tbsp Sambal belacan
. sugar and salt to taste
You can basically take any herbs from your own garden to add on to create your own version. Once you are ready to get started on your plate of Nasi Kerabu, mix everything together so you can taste the layers of flavours and contrasting textures in each bite. Sedap!!

We have a new cat at home! 🐱
This time, it’s a purebread cat made using @kenwoodsingapore @favesofficial 🤣🍞
Usually when it comes to kneading bread, if you’re hand mixing, it’s actually very tedious or even messy in the kitchen 🙈
But thankfully for the powerful Kenwood Stand Mixer, the whole process has become extremely hassle free 😍 we literally just pour all the ingredients into the mixer, and used the dough hook to mix 😆
So we got to focus on the fun part of decorating the bread...& eating 😝
The smell of freshly baked bread at home is just heavenly ❤️☺️
We’ll definitely be baking this more often!

For this episode, we went down to Machan’s Kitchen at Little India to devour a $100 Indian Curry Platter! Machan’s Kitchen serves traditional South Indian cuisine - ranging from curries to authentic Indian desserts - allowing you to taste the whole of Southern India conveniently in the cosily decorated restaurant.
We lavishly plated over 20 dishes onto giant banana leaves, forming a tantalising albeit messy array on the table. The food generally had the base flavours of South Indian cuisine, spicy, heavily flavoured with Indian spices and rich and hearty. The dishes that really caught my attention would be the Chicken 65, the Mutton Curry and the paratha.
The Chicken 65 was tender and spicy but with a pleasant acidic zing from the lemon juice added that cut through the heat and elevated the strong spice blend used on the chicken. The mutton curry was similarly spiced and spicy, but with an element of a deep meaty flavour from the long cooking process to cook the mutton. The mutton was melt-in-your-mouth tender. The paratha was fluffy, with each bite packed with the rich buttery flavour from the ghee used in the dough. It went exceptionally well with all the side dishes given.
Unfortunately, I was unable to request for less chilli in the dishes, so each dish was actually overwhelming spicy for my relatively weak chilli palate. For those who enjoy spicy food, eating here would be a treat, but it became rather painful for me towards to end. This would be a great place to share food with friends or family, especially if you are looking for authentic South Indian cuisine with a focus on Indian curries. Do give Machan’s Kitchen a try for a fantastic Indian Curry Feast!

We went down to the Legendary Beach Road Scissors Cut Curry Rice to complete a Curry Rice Challenge! Beach Road Scissors Cut Curry Rice is a famous Hainanese Curry Rice shop located at Jalan Besar. They are a mainstay for late-night patrons looking for an affordable meal, closing only in the wee hours of the morning and a fully-loaded plate would cost between $4-6 dollars depending on your choice of toppings.
Hainanese Curry Rice is a uniquely Singaporean dish inspired by British, Hainanese and Peranakan settlers in Singapore. A standard serving would include a fried egg, pork chops, braised pork belly and braised cabbage piled on white rice before being smothered by a thick, fragrant curry. Different restaurants would have their own take on the curry and toppings provided, with the curry usually being thick but varying in taste.
For my giant plate, I requested 7 portions of rice, a pile of braised cabbage, fried eggs, braised pork belly, chicken chops, pork chops, curried chicken wings, deep-fried tofu and rounded it off with some assorted greens. As per their namesake, each meat item was cut upon serving with a pair of scissors.
This monster plate was then generously topped with curry, the tofu braising liquid and a spicy red gravy, enveloping the entire plate with messy goodness.
The curry was thicker than other places I have tried, barely sweet with a hint of spiciness. It could have been a lot more flavourful. The standout topping would be the pork cutlet, juicy on the inside with a crunchy exterior, with the mild tasting curry allowing the excellent flavour of the cutlet to shine. However, the pork belly was rather disappointing, bland and extremely chewy. Overall, the combination of the 3 sauces with rice and a side is a winning combination, especially considering the cost.
If you are in the area or looking a late-night supper, you could do a lot worse than Beach Road Scissors Cut Curry Rice.
