It has been only 5 months since it’s opening, & Alain Ducasse at Morpheus was recently awarded 2 Michelin stars 🌟 🌟already. ROUX:
Là hỗn hợp bột mỳ và chất béo, được sử dụng làm chất tạo độ đặc cho sốt, súp và món hầm, rất phổ biến trong ẩm thực phương Tây. Loại chất béo thường được sử dụng nhất là bơ, tuy nhiên, cũng có thể dùng mỡ của thịt ba chỉ xông khói, mỡ gia cầm, hay thậm chí là bơ thực vật hoặc dầu ăn. Hỗn hợp được nấu trên lửa nhỏ cho tới khi quyện rồi nấu lửa to trong một giai đoạn ngắn để loại bỏ vị dặm dặm của bột.
Thời gian nấu càng lâu, màu càng sẫm lại. Có 3 loại roux: trắng (white roux), vàng (blond roux) và nâu (brown roux), và các công thức khác nhau sẽ đòi hỏi bạn phải chọn giữa chúng. Mình đang viết một bài về các loại sốt gốc trong ẩm thực Pháp (French mother sauces), cùng bài chờ lên sóng nhé :D
